EASY!!! EASIEST CHICKEN DINNER EVER

Easy!!! Easiest Chicken Dinner Ever image

Very simple and fast. Kids and adults love it. Got the recipe from a girl I worked with years ago. Not sure where she got it. You really need to use the tenders NOT chicken breasts for it to be the best. Also, if you just use regular canned tomatoes it will be bland. You need to use Rotel which is tomatoes and green chilis. You could also add some onion but I omit because the less prep the better. This is just dump and cook! This could also probably be microwaved but I have never tried it. Prep time is less than 5 minutes and only 1 pan to clean.

Provided by mrsmwp

Categories     One Dish Meal

Time 25m

Yield 4 serving(s)

Number Of Ingredients 7

1 lb chicken tenders, raw
1 (16 ounce) can chicken broth
1 (10 ounce) can rotel
1 cup white rice, uncooked
1 cup shredded cheddar cheese
garlic powder
salt & pepper

Steps:

  • Using a large, deep skillet with a cover pour can of chicken broth and can of rotel into skillet.
  • Stir in cup of rice.
  • Lay chicken tenders on top of rice and sprinkle with garlic, salt and pepper. Go easy on the pepper if you don't like it too hot because the Rotel has a little kick to it.
  • Cover and cook over medium high heat for 20 minutes or until chicken is opaque.
  • Remove from heat and sprinkle with the cheese. Stir lightly until cheese melts slightly.
  • Serve with a nice salad.

EASIEST LASAGNA EVER

Easiest Lasagna Ever image

Nothing beats classic lasagna. And this is the easiest recipe you will ever make. It can be made ahead and it's freezer-friendly too!

Provided by Chungah Rhee

Yield 12 servings

Number Of Ingredients 12

9 lasagna noodles
1 tablespoon olive oil
1 pound ground beef*
1 onion, diced
Kosher salt and freshly ground black pepper, to taste
1 (28-ounce) can crushed tomatoes
1 tablespoon Italian seasoning
1 (15-ounce) package whole milk ricotta
3 1/2 cups shredded mozzarella, divided
1 large egg, beaten
1/4 cup freshly grated Parmesan
2 tablespoons chopped fresh parsley leaves

Steps:

  • Preheat oven to 350 degrees F. Lightly oil a 9×13 baking dish or coat with nonstick spray. In a large pot of boiling salted water, cook lasagna noodles according to package instructions. Heat olive oil in a large skillet over medium high heat. Add ground beef and onion and cook until beef has browned, about 3-5 minutes, making sure to crumble the beef as it cooks; season with salt and pepper, to taste. Drain excess fat. Stir in tomatoes and Italian seasoning until well combined. In a medium bowl, combine ricotta, 1/2 cup mozzarella and egg; set aside. Spread 1 cup tomato mixture onto the bottom of a 9×13 baking dish; top with 3 lasagna noodles, 1/2 of the ricotta cheese mixture and 1 cup mozzarella cheese. Repeat with a second layer. Top with remaining noodles, tomato mixture, 1 cup mozzarella cheese and Parmesan.* Place into oven and bake for 35-45 minutes, or until bubbling. Then broil for 2-3 minutes, or until top is browned in spots. Let cool 15 minutes. Serve, garnished with parsley, if desired.

EASY LASAGNA RECIPE

Easy Lasagna Recipe image

Truly the easiest lasagna recipe you'll ever make! No pre-cooking lasagna noodles, no grating cheeses, no homemade sauces. Yet it's so perfectly delicious!!

Provided by Jaclyn

Categories     Main Course

Time 1h18m

Number Of Ingredients 8

1 lb. 91% lean ground beef*
1 (25 oz) jar marinara sauce, (preferably Rao's tomato basil**)
1/2 cup vegetable broth
6 uncooked lasagna noodles ((not no boil, preferably use Barilla))
1 (15 oz) container ricotta cheese ((whole or part skim))
1 (8 oz) pkg. shredded mozzarella cheese***
1/2 cup grated or finely shredded parmesan cheese
2 Tbsp Chopped fresh basil or parsley ((optional))

Steps:

  • Preheat oven to 375 degrees. Spray a 12 by 8-inch baking dish with non-stick cooking spray.
  • Heat a 12-inch non-stick skillet over medium-high heat. Crumble in beef and cook and break up beef until cooked through.
  • Remove from heat and stir in marinara sauce and vegetable broth (I like to swish the vegetable broth around in the empty jar of marinara sauce to remove any excess, totally optional).
  • To assemble lasagna, spread 1/3 of the marinara sauce (about 1 1/2 cups) into bottom of baking dish. Top with 3 uncooked lasagna noodles.
  • Spread 1/2 of the ricotta over the noodles using the back of a spoon. Top evenly with 1/2 of the mozzarella (1 cup) and 1/2 of the parmesan (1/4 cup). Top with another 1/3 of the sauce.
  • Add 3 more uncooked lasagna noodles then spread evenly with with remaining 1/2 of the ricotta. Pour and spread over last 1/3 of the sauce. Top with remaining 1/2 of the mozzarella and parmesan.
  • Cover tightly with foil (you can grease first if the top of the lasagna will be touching the foil so cheese doesn't stick), bake 40 - 45 minutes until pasta is fairly tender.
  • Remove foil then continue to bake uncovered 10 minutes, or until lasagna is just tender (not soggy. There will seem to be a little liquid on the sides still). Let rest 5 minutes before slicing. Garnish with fresh basil or parsley if desired.

10 MOST POPULAR RECIPES OF ALL TIME - BEST FOOD52 RECIPES

From food52.com
Author Ella Quittner
  • Crock-Pot Brown Sugar & Balsamic–Glazed Pork Tenderloin by Melissa Bossler. "Since day one at Food52 I’ve been fascinated by the lore of this slow-cooker pork tenderloin," says Senior Editor Eric Kim.
  • 'World's Best Cake' With Banana & Coconut by Sarah Jampel. When former Food52 Staff Writer Sarah Jampel first came across "The World's Best Cake"—which, she noted, was supposedly named Norway's national cake in 2002—on Sweet Paul Magazine's website, she had to try it for herself.
  • Tomato Sauce With Onion & Butter by Marcella Hazan. This is an iconic recipe that revolutionized how we make tomato sauce. Marcella Hazan renders tomatoes (fresh or canned), an onion, butter, and salt the jammiest, most drinkable concoction we've ever deigned to use atop noodles, pizza dough, or merely a wooden spoon.
  • Milk Bread by Kindred. This pillowy loaf is bestowed upon diners at Kindred Restaurant in Davidson, North Carolina. Its recipe was benevolently sourced by community member Catherine Margaret O'Donnell in 2015.
  • The Best Pan-Roasted Potatoes by Gretchen @ Backyardnotes. What makes pan-roasted potatoes "the best"? A minimalist ingredient list (aka potatoes, olive oil, and kosher salt), the need for just one dirtied skillet, and a foolproof method that's somewhere between baking, frying, and steaming.
  • One-Pan Pasta by Martha Stewart. There's not a whole lot of mystery around why Martha Stewart's one-pan pasta is such a community favorite. Bringing spice from red pepper flakes, depth from garlic and onion, and general sauciness from juicy cherry tomatoes, this linguine recipe takes about nine minutes to make—without having to boil a giant pot of water separately.
  • Soy Sauce Eggs by Momofuku. In this wildly popular recipe, jammy eggs get steeped in a perfectly balanced soy-sherry bath. "What I like best is that these eggs can be used in a thousand different ways: They are perfect on their own as a snack, or on an English muffin (eggs Benny setup), in pasta, or cut up and mixed into a salad," wrote Christina Tosi, whose cookbook Milk Bar Life brought us this method.
  • One-Pot Kale & Quinoa Pilaf by deensiebat. "Amanda and I made the kale and quinoa pilaf several times for demos in the early days of Food52, because it was a total sensation among our readers," says Merrill.
  • Absurdly Addictive Asparagus by kaykay. "Absurdly addictive" might be a bold claim—but this asparagus dish has been here to back it since 2010. Just ask its 300-plus reviewers, who report things like, "This is one of my all-time favorite vegetable dishes ever!"
  • Magical, Marvelous, Memorable Cookies by drbabs. As this recipe's creator and longtime community member drbabs writes, "Shakespeare proclaimed music the food of love, but in our family, it’s cookies."

  • Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess., Stir together all of the ingredients (except the cornmeal) in a large bowl, starting with 4 1/2 cups of the flour. Use a sturdy spoon, or your stand mixer equipped with the beater paddle. Mix until everything comes together in a rough, shaggy mass of dough.
  • If you’re kneading the dough by hand, turn it out onto a lightly floured surface, using some of the additional 1/2 cup of flour called for. Fold the far edge of the dough back over on itself towards you, then press it away from you with the heels of your hands. Rotate the dough 90°. Repeat this fold-press-rotate process with a rhythmic, rocking motion for about 6 minutes. When fully kneaded, the dough will be bouncy and smooth.
  • If you’re using your stand mixer, switch to the dough hook and knead the dough at medium speed for about 7 minutes, until it’s smooth, elastic, and feels a bit bouncy. If the dough doesn’t form a ball that clears the sides of the bowl, sprinkle in just enough of the additional flour to make this happen., Place the dough in a bowl that’s been lightly greased with vegetable oil or cooking spray; the bowl you started with is fine. Cover the bowl with plastic wrap or another airtight cover, and let the dough rise at room temperature until it's doubled in size, about 1 to 2 hours. If your kitchen is particularly cold (below 65°F), place the bowl of dough in your turned-off oven with the oven light on.
