  1. Strain your turkey cooking liquids using a fine mesh strainer into a heat-safe container (such as a Pyrex measuring cup or bowl). Let sit for a few minutes so the fat rises to the top. Skim off the fat and discard.
  2. Melt the butter in a small pot over medium low heat. Once melted, add the flour and whisk to combine. Let the mixture cook over medium low for 1-2 minutes, whisking on occasion, to cook out the raw flour taste.
  3. Slowly pour the strained turkey drippings into the sauce pan, whisking well to incorporate and starting with 1 1/2 cups. The gravy will seize up at first, which is normal. Keep adding the liquid slowly and whisking constantly until you get a smooth, uniform gravy. Add additional turkey drippings, up to the full 2 cups, to get your desired consistency for the gravy. (If you run out, you can also use turkey or chicken broth or a bit of water.)
  4. Continue to cook the gravy for 2-3 minutes, until the gravy reaches your desired consistency and is nice and hot. (Keep in mind that the gravy will continue to thicken as it sits.) Season to taste with black pepper. (It should not need any salt.)

  1. Reheat the drippings or broth so they are warm. Skim off 1/4 cup of fat from the top of the drippings and set aside. Discard the remaining fat, reserving the drippings and adding enough broth or water to make 2 1/2 cups of liquid.
  2. Heat the fat (or melt an equal amount of butter) in a large pan over medium heat. Sprinkle with the flour, whisking it in and cooking for 1-2 minutes until lightly browned to create a roux.
  3. Gradually add the warm drippings or broth to the roux, whisking constantly to avoid lumps. It will thicken almost immediately at first, then thin out as more and more liquid is added. Once all of the drippings or broth have been added, continue to cook and stir frequently for 5 to 10 minutes until thickened to your liking. If the gravy gets too thick, thin out with a little addition broth or water. If it is too thin, make a slurry with 1 teaspoon of cornstarch and 1 tablespoon of water and whisk that into the gravy, letting it cook for another minute or two to thicken up.

  1. When the turkey comes out of the oven, let it rest. Once the resting time is over, transfer your turkey to a cutting board or serving platter.
  2. Carefully add the liquid or “drippings” that remain in the bottom of the pan to a large bowl, or pour into a fat separator (that’s the one I have and love).
  3. If you don’t have a fat separator: Let the drippings sit for a minute, allowing the fat to naturally separate from the rest of the drippings. You will notice that the fat will rise to the top, leaving the drippings and liquid on the bottom. Use a large spoon or ladle to skim and remove most of the fat from the top of the the drippings.
