FRUIT AND CREAM WAFFLES
Steps:
- Mix up a batch of the waffle batter per the package directions. Add cinnamon or nutmeg. Fold in the egg whites, gently.
- In the meantime, place peaches or blueberries into a sauce pan with about 1/4 cup of water.
- Heat them up and then add 1-1/2 tablespoons of sugar and 1 teaspoon of vanilla and bring to boil, simmer until the liquid reduces and thickens. If it does not thicken, add a second tablespoon of sugar. Set aside.
- Place cold, heavy cream in a mixing bowl. Add 1 teaspoon of vanilla and 1/2 tablespoon of sugar. Vigorously whip with a whisk or hand-held mixer until the consistency of whipped cream. Set aside.
- Coat the waffle iron with non-stick spray and set to high heat. Once hot, add the waffle batter with a ladle. Cook approximately 3 minutes, or until waffles are golden and easily pull away from the iron.
- Serve waffles warm with peaches or blueberries on top, then a dollop of the whip cream and a sprinkle of cinnamon or nutmeg.

- Preheat waffle iron according to manufacturer's instructions. In a large bowl, whisk flour, sugar, baking powder, and salt; set aside.
- In a small bowl, whisk milk and eggs; pour over flour mixture, and whisk gently to combine (don't overmix). Gently whisk in butter.
- Following manufacturer's instructions, cook waffles until deep brown and crisp. (For a standard waffle iron, pour a generous 1/2 cup of batter into center, spreading to within 1/2 inch of edges, and close; waffle will cook in 2 to 3 minutes.) Serve warm, with maple syrup and butter, as desired.
WAFFLES I
You can keep the batter covered in the fridge for up to a week. Just be sure to whisk well before using again. You may also use whole wheat flour for this recipe.

- In a bowl, combine the flour, sugar, baking powder and salt. Combine the egg yolks, milk and oil; stir into dry ingredients just until moistened. In a small bowl, beat egg whites until stiff peaks form; fold into batter. Bake in a preheated waffle iron according to manufacturer's directions., Meanwhile, for syrup, combine sugar, corn syrup and water in a saucepan. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in the milk, vanilla and cinnamon. Serve with waffles. If desired, serve with fresh berries.Freeze option: Cool waffles on wire racks. Freeze between layers of waxed paper in a resealable plastic freezer bag. Reheat waffles in a toaster on medium setting. Or, microwave each waffle on high for 30-60 seconds or until heated through.

EASY AND FAST FRUIT 'N CREAM WAFFLES
This isn't so much of a recipe as it is a method. I had these at my friends house and they were awesome. I personally love peaches on mine, but you can substitute any flavour cream cheese and any type of fruit(canned or fresh)you like! Fresh strawberries and strawberry cream cheese is delicious!
