This Crock Pot Bacon Mushroom Swiss Chicken is a wonderfully flavorful combination!

3 slices of bacon (crisply cooked, crumbled and drippings reserved)
6 boneless skinless chicken breasts
4 oz can sliced mushrooms (drained)
10.75 oz can cream of chicken soup
6 slices of swiss cheese

Steps:

  • Pour your reserved bacon grease in a skillet and heat up over medium heat
  • Place your chicken breasts in the warmed grease and cook for 3-5 minutes until slightly golden (turning once)
  • Spray your crock pot with cooking spray
  • Put your chicken in your crock pot
  • Cover with your mushrooms
  • Pour your soup in your skillet, warm through, then pour over your chicken
  • Cover and cook on low for 4-5 hours, check with a meat thermometer to know when the chicken is done
  • Place a slice of Swiss on top of each chicken breast, sprinkle with bacon, turn heat up to high and cover and cook for 10-15 minutes more until the cheese is melted

6 boneless skinless chicken breast halves (frozen)
12 slices raw bacon
1 can condensed cream of chicken soup
6 slices Swiss cheese

Steps:

  • Spray crockpot with cooking spray. Place the stuffing mix on the bottom, add flavor packet. Sprinkle with water. Wrap each frozen breast with 2 slices of bacon. Place on top of the stuffing mix. Pour can of soup over top of chicken. Cook on LOW for 7 to 10 hours or on HIGH for 5 to 7 hours. Place cheese slices on top to melt 15 minutes before serving. 2 bacon strips, cooked and crumbled
Lettuce leaves and tomato slices, optional

Steps:

  • In a small bowl, mix mayonnaise, mustard and honey. Pound chicken with a meat mallet to 1/2-in. thickness. Sprinkle chicken with steak seasoning.   • Slice into the chicken several times, about ½ cm (¼ inch) apart, but only cut about 85% of the way through, leaving the bottom intact.
  • Cook the bacon over a medium heat until it starts to get crispy.
  • Preheat the oven to 350°F (180°C).
  • Stir in the spring onions and cook for another minute or so.
  • Add the cream cheese and cook until melted.
  • Allow filling to cool to the touch, and then fill each segment of the chicken breast with about 1 teaspoon of the mixture.
  • Bake in the centre of the oven for 18-22 minutes until the chicken is cooked through and the juices run clear.

It makes a mean sandwich, delicious wrap,is great served with french fries, or just straight up. You could also place it on a bed of lettuce for a great salad. The recipe helps keep they kitchen tidy and uses less energy by using a slow cooker! My whole family was "humming" when I made this and served it - it's a keeper!
