EASY CHEESY POTATOES
These potatoes are loaded with creamy goodness like sour cream and cheddar cheese and make a perfect side dish!

Steps:
- Preheat oven to 375˚F and grease a 9x13 inch baking dish.
- If using fresh potatoes, place in a saucepan with cold water. Simmer 12-14 minutes or until fork tender. Drain and allow to cool slightly.
- Melt butter, add sour cream, soup, onion and 1 ½ cups cheese.
- Toss in the potatoes (or frozen hash brown potatoes) and combine. Spread into a prepared baking dish.
- Top with remaining cheese and bake for 28-30 minutes or until browned and bubbly.

EASY CHEESY POTATOES
This is a great side dish to any barbecue. Potatoes are grilled with peppers and onions in a foil package. It cooks on the grill along with your favorite barbecued main dish.

- Preheat grill for medium-high heat.
- Coat one side of a piece of aluminum foil large enough to hold all the potatoes and vegetables with cooking spray. Place the potatoes, onion, and green bell pepper in the center of the foil, and season with salt and pepper to taste. Then place small pats of the butter or margarine over the vegetables.
- Carefully seal all the edges of the foil around the vegetables to form a packet. (Note: Double wrapping will help to prevent burning.)
- Place packet on the preheated grill, and grill for 20 minutes. Turn packet, and grill for 10 more minutes.
- Carefully open packet, check for tenderness with a fork. If tender, sprinkle the cheese over the vegetables and allow it to melt. Transfer to a platter, and serve with your main entree.

GRILLED CHEESY LOADED POTATOES

- Prepare a grill for direct and indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes, turn off one of the side burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
- Heat a 10-inch cast-iron skillet on direct heat and add the bacon; cook, stirring often, until crispy, about 5 minutes. Remove the bacon with a slotted spoon to a paper-towel lined plate; set aside.
- Add the potatoes and sprinkle with salt and pepper. Stir to coat with the bacon fat, then move to indirect heat and cover the grill. Cook, uncovering the grill and stirring every 5 minutes, until the potatoes are tender, about 20 minutes.
- Sprinkle with the Cheddar and move back to direct heat. Cook, uncovered, until the potato bottoms are golden and the cheese is melted, about 10 minutes, depending on the heat of your grill. Let cool for 10 minutes, then dot with the sour cream and sprinkle with the scallions and reserved bacon.
GRILLED CHEESY POTATOES

- Preheat grill to medium-high, or oven to 425°F.
- Place the potatoes in the center of a large piece of aluminum foil or in a bowl.
- Pour the melted butter evenly over the potatoes, season with salt and pepper and toss to coat.
- Sprinkle on half of the cheddar cheese.
- Wrap the potatoes tightly in the aluminum foil and place on the preheated grill, or in the oven.
- Cook for 15 minutes, then flip the packet and cook for an addition 15 minutes, or until the potatoes are fork tender.
- Open the top of the foil packet and sprinkle on the remaining cheddar cheese.
- Leave the packet open and place it back on the grill, or in the oven. Cook for an additional 3-4 minutes, or until the cheese is melted.
- Top with the minced herbs, if desired.

EASY CHEESY POTATOES
These potatoes are great for a potluck dinner, or as a side for any night! It can easily be scaled up or down to serve many or a few!

Steps:
- Melt butter, and set aside 2 Tbs for topping.
- Combine melted butter with soup and sour cream ingredients and stir until well mixed.
- Stir in potatoes (slightly thawed works best) and cheese.
- Place mixture into a 13 x 9 inch casserole dish and bake uncovered for 1 - 2 hrs at 350. The longer you bake this, the softer the potatoes get. I usually go at least 2 hours.
- Meanwhile stir together reserved melted butter and rice Krispies. Spread over top and bake for another 15 minutes or until nicely browned.
- This should serve around 6 people as a side dish. This recipe is easily scaled up to feed a crowd.
