Steps:
- Put the noodles in a large bowl and cover with boiling water; let stand for 10 minutes. Drain and rinse under cold running water. Wipe out the bowl; return the noodles to the bowl.
- Puree the peanut butter, fish sauce, lime juice, ginger and 1/3 cup water in a blender until smooth. Pour the dressing over the noodles; toss to coat.
- Top each serving of noodles with the chicken, cucumber, carrots, pea shoots, jalapeno and herbs. Toss just before serving.

- Cook rice according to package directions. Meanwhile, in a resealable jar, whisk vinegar and sugar until dissolved; add red onion. Seal and refrigerate 30 minutes or up to 2 weeks. In a small bowl, stir together mayonnaise and chili sauce; refrigerate, covered, until serving., In a large skillet or wok, toss chicken, soy sauce, sesame oil and honey. Cook and stir over medium-low heat until chicken is heated through, 5-7 minutes. To serve, divide rice among 4 serving bowls. Top with chicken mixture, avocado, cucumber, sprouts, pickled onions, spicy mayonnaise and, if desired, green onions and sesame seeds.

QUICK & EASY PEANUT CHICKEN

Steps:
- 1. Boil a large pot of water. When boiling, add the farfalle past and boil until al dente.
- 2. While the pasta cooks, mix the sesame oil, peanut butter, honey, soy sauce, rice vinegar, garlic and ginger in a bowl. Whisk until well combined. Set aside.
- 3. Cut the chicken into small pieces. Fry until cooked in a sir fry pan or large fry pan.
- 4. Prepare the snow peas by destringing them. Add them to the chicken and fry for a minute or two.
- 5. Drain the pasta and add it to the chicken and snow pea mixture.
- 6. Add the sauce and stir so that the sauce is well distributed.
- 7. Serve with your choice of garnish.

- In a small bowl, whisk the first six ingredients until blended. Cook spaghetti according to package directions; drain., Meanwhile, in a large skillet, cook chicken, carrots, pepper and garlic over medium heat 5-6 minutes or until chicken is no longer pink, breaking up chicken into crumbles; drain., Stir in peanut butter mixture; bring to a boil. Reduce heat; simmer, uncovered, 3-5 minutes or until sauce is slightly thickened. Serve with spaghetti. Top with peanuts and green onions.
