- The night before, dissolve the yeast into the water for the Poolish, then mix in the all-purpose flour. Cover and let it ferment at room temperature for 12-16 hours, or overnight. Once the Poolish has bubbles breaking on top and has started to wrinkle, it's ready.
- Transfer the Poolish into the bowl of a stand mixer attached with a dough hook. Add water, salt, yeast and all-purpose flour and knead the dough on slow speed for 2-3 minutes. Cover and let it rise for two hours, giving it a stretch-and-fold at the one hour mark.
- Divide the dough into three equal pieces. Cover and let rest for about 20 minutes. Shape into baguettes about 12 inches logs and cover, letting them rise for about 60 to 90 minutes.
- Score and bake on a preheated oven at 450°F (232°C). Place a tray of water below the baguette while baking to create steam in the oven. Bake for about 25 minutes. Remove from oven, let cool and serve.

Steps:
- Position rack in top third of oven and preheat to 425°F. Heat oil over low in a medium skillet. Cook onion, stirring occasionally, until soft and translucent, about 10 minutes. Set aside.
- Place bread, cut side up, on a rimmed baking sheet and bake 5 minutes. Remove from oven and rub cut sides with garlic.
- Toss chicken with 1/4 cup barbecue sauce in a medium bowl. Spread remaining 6 Tbsp. sauce on cut sides of bread. Layer reserved onions on sauce, then top with chicken mixture and mozzarella.
- Bake until cheese is melted and golden brown, about 10 minutes. Top with cilantro.

- In a 10" nonstick skillet, melt butter & crushed red pepper flakes(if using) over medium high heat and cook onions; uncovered stirring occasionally, 15 minutes or until onions are golden. (if desired add a bit of brn sugar & it will help the onions caramelize).
- Remove onions from skillet and keep warm.
- Sprinkle with garlic powder.
- In same skillet melt 1 tablespoon butter over medium-high heat and cook chicken 4 minutes or until chicken is throughly cooked, turning once.
- In same skillet, melt remaining butter over medium heat and brown mushrooms for about 6 minutes, till all water is absorbed.
- To serve, arrange chicken on 1/2 bread, then top with hot onions, mushrooms, cheese and bacon.
- Bake at 375ºF for 5 minutes or until cheese is melted.
- Top with remaining bread.
- To serve, cut in half.
- Sprinkle with thyme and, if desired, salt and ground black pepper, to taste.

- Preheat the over to 350°F (180°C)
- Cut the baguette in half and place bread cut-side up on a prepared baking sheet.
- Take your barbecue sauce and spread a layer of sauce over each piece of the baguette.
- Once complete, you can sprinkle mozzarella cheese over each piece.
- Then add shredded chicken, and sliced red onion.
- BAKE for 10 minutes
- Slice and serve!

- To prepare this easy recipe, mix yeast, water, bread flour, sugar and salt and knead a soft dough. You can also use a dough mixing machine, if you have one. Grease a bowl or a flat dish with oil or butter on all sides. Make sure that the dish has a holding capacity of more than the total dough available. Put the dough in, cover the dish and let it rise for 30 minutes. The dough should get doubled after yeast is activated.
