FRENCH BAGUETTES

Great eaten fresh from oven. Used to make sub sandwiches, etc.

Number Of Ingredients 7

1 cup water
2 ½ cups bread flour
1 tablespoon white sugar
1 teaspoon salt
1 ½ teaspoons bread machine yeast
1 egg yolk
1 tablespoon water

Steps:

  • Place 1 cup water, bread flour, sugar, salt and yeast into bread machine pan in the order recommended by manufacturer. Select Dough cycle, and press Start.
  • When the cycle has completed, place dough in a greased bowl, turning to coat all sides. Cover, and let rise in a warm place for about 30 minutes, or until doubled in bulk. Dough is ready if indentation remains when touched.
  • Punch down dough. On a lightly floured surface, roll into a 16x12 inch rectangle. Cut dough in half, creating two 8x12 inch rectangles. Roll up each half of dough tightly, beginning at 12 inch side, pounding out any air bubbles as you go. Roll gently back and forth to taper end. Place 3 inches apart on a greased cookie sheet. Make deep diagonal slashes across loaves every 2 inches, or make one lengthwise slash on each loaf. Cover, and let rise in a warm place for 30 to 40 minutes, or until doubled in bulk.
  • Preheat oven to 375 degrees F (190 degrees C). Mix egg yolk with 1 tablespoon water; brush over tops of loaves.
  • Bake for 20 to 25 minutes in the preheated oven, or until golden brown.

It has taken me a while to find a good baguette recipe. Many are very complicated and take a long time to make and others aren't a true baguette at all (too soft, more like a white bread). I was very pleased with this recipe that I found on kingarthurflour.com and I love how easy it is! Make sure to start this the evening before you want the bread. Prep time includes rise times.

3 cups lukewarm water
1 tablespoon instant yeast
1 tablespoon salt
8 cups flour

Steps:

  • Place all ingredients in bowl of a stand mixer.
  • Mix well, then knead using the dough hook for about 2 minutes.The dough will be very sticky.
  • Place in a very large (it will almost triple in size) greased bowl.
  • Let sit at room temperature for 2 hours, then refrigerate overnight.
  • You can use the dough at any point in the next 7 days. When you are ready, take out about a pound of dough and roll it into an oval.
  • Fold the dough in half the long way and seal edges with the heel of your hand.
  • Flatten dough into an oval and fold again.
  • Gently roll dough with hands to form into a classic baguette shape, about 15 inches long.
  • Let rise on a baking sheet sprinkled with cornmeal (or greased) for 90 minutes.
  • Make 3-4 large diagonal slashes on the top, using a serrated knife at a 45 degree angle.
  • Spritz with warm water to help give the bread a crispy exterior.
  • Bake at 450 degrees for 25-30 minutes.

1 1/4 cups water
1 teaspoon sugar
1 1/2 teaspoons yeast
1 lb all-purpose flour
1 1/2 teaspoons salt

Steps:

  • Heat water to 105-110 degrees Fahrenheit. Then add sugar and yeast. Proof.
  • In the bowl of a standing mixer place the flour and salt.
  • Then add the proofed yeast to the flour mixture.
  • Mix on medium speed for 5-7 minutes. Form into ball and let rise for an hour.
  • After the dough has risen, cut and roll into 3 baguettes. Place on a baking sheet or baguette tray. Let rise for about 45 minutes to an hour.
  • Meanwhile preheat your oven to 450 degrees Fahrenheit.
  • Once the baguettes have risen, cut slits on top of the dough and baste with a beaten egg.
  • Place in the oven for 15-20 minutes. ENJOY!

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5-inch loaf pan.
  • Combine bananas, sugar, egg, and butter together in a bowl. Mix flour and baking soda together in a separate bowl; stir into banana mixture until batter is just mixed. Stir salt into batter. Pour batter into the prepared loaf pan.

I don't bake with bread flour or rapid yeast, and I don't have a bread machine. This is a pretty good loaf using things I already have. One might call it 'French on a budget' bread. This recipe can make 1 big loaf or 6 sandwich rolls. I find they're best served warm with homemade butter.

1 teaspoon white sugar
1 ½ cups hot water
2 teaspoons active dry yeast
3 ¾ cups all-purpose flour, or more as needed
1 ½ teaspoons salt
2 tablespoons vegetable oil

Steps:

  • Dissolve sugar into the hot water in a 2-cup measure; add yeast and stir gently. Let dissolve until top is foamy, about 5 minutes.
  • Whisk flour and salt together in a large bowl. Make a well in the center and pour in the yeast mixture. Stir gently, starting from the middle, until mixture is sticky. Knead by hand, adding more flour if needed, until dough is elastic and no longer sticky, about 10 minutes.
  • Oil a large, clean bowl and place dough inside, turning to coat. Cover with a towel and let rise in a warm place until doubled in volume, about 1 hour.
  • Preheat the oven to 425 degrees F (220 degrees C). Fill a roasting pan with water and set on the lower rack of the oven. Line a baking sheet with a silicone mat.
  • Punch down dough and turn onto a lightly floured surface. Shape dough into 1 large loaf or 6 sandwich loaves, tapering the ends. Place loaves on the prepared baking sheet. Cut 3 or 4 diagonal slashes, about 1/4 to 1/2-inch, across the tops. Cover with a dry towel and let rise until doubled in volume, about 40 minutes.
  • Uncover and bake in the center of the preheated oven until top is light golden brown, 15 to 20 minutes depending on the size of the loaves.
