WOW! Get this...a very low-fat muffin recipe that actually tastes great!! After failing at many attempts to create a really tasty, low-fat muffin, I came across this recipe, and it is really good...great for dieters!

Steps:
- Preheat oven to 350 degrees.
- Lightly coat 12 muffin tin liners with cooking spray and place in muffin tin.
- In large bowl, mash bananas with fork.
- Whisk in egg, milk, granulated sugar, and brown sugar.
- In separate bowl, combine flour, baking soda, and salt.
- Add flour mixture to banana mixture and combine well.
- Fold in chocolate chips and walnuts.
- Spoon equal amounts of batter into 12 muffin cups.
- Bake 20 minutes or until toothpick inserted in center comes out clean.
- Allow to cool slightly in pan, then remove to wire rack.

- Preheat oven to 375°F. Line a muffin pan with paper liners.
- Combine flour, baking soda, and salt in a small bowl. Stir in chocolate chips.
- Combine sugar, bananas, egg, oil, and vanilla in a medium bowl.
- Add dry ingredients and mix just until combined.
- Pour into prepared muffin tin and bake 18-20 minutes or until a toothpick comes out clean. Do not overbake.
- Cool 5 minutes in the pan before removing and cooling on a baking rack.

- Preheat oven to 375F/190C. Grease muffin pan cups or line them with liner papers.
- In a large bowl mix together flour, baking soda, salt, and sugar.
- In a medium bowl, whisk together egg, mashed bananas, and melted butter. Pour the egg mixture into the flour mixture and mix as little as possible, just until combined. Stir in chocolate chips.
- Divide mixture between muffin cups, filling them about ¾ full. Bake for 15-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Transfer to a wire rack and let cool for 10 minutes before removing from pan.
- Muffins will keep fresh and moist for 3 days at room temperature or in the fridge. Serve them at room temperature.
EASY BANANA MUFFINS WITH CHOCOLATE CHIPS
For the best banana muffins, use very ripe bananas. In fact, if you can wait a day for browned, overripe, and speckled bananas, they are even better. Just before baking, we throw in mini chocolate chips. You can leave them out or swap for regular chocolate chips or fruit like blueberries or strawberries.
