Best-ever banoffee pie image

With its fantastic combination of banana and toffee, banoffee pie is hard to beat. This one has a chocolate biscuit base and is made on the hob rather than boiling the condensed milk in the can for hours.

75g/2½oz butter
300g/10½oz chocolate oaty biscuits
115g/4oz butter
115g/4oz soft dark brown sugar
397g/14oz can sweetened condensed milk
450ml/16fl oz double cream
5 ripe but firm bananas
1 tsp fresh lemon juice
25g/1oz coarsely grated plain chocolate or chocolate curls

Steps:

  • To make the base, melt the butter in a small saucepan. Break the biscuits into chunky pieces and put in a food processor. Blend into crumbs, then add the melted butter and, with the motor running, blend well. Alternatively, put the biscuits in a strong polythene food bag and bash with a rolling pin. Tip into a bowl and stir in the melted butter.
  • Tip the crumbs into the centre of a deep, 23cm/9in fluted loose-based tart tin or quiche dish and press firmly into the base and sides. Make sure it is evenly distributed, especially where the base meets the sides. Cover and chill in the fridge for 30 minutes, or until set.
  • To make the filling, melt the butter in a medium saucepan, then stir in the sugar. Cook over a low heat, stirring constantly, until the butter and sugar look smooth and no oil floats to the surface. Add the condensed milk and bring to a gentle simmer, stirring constantly. Cook for 3 minutes, stirring, until the mixture turns a deep, creamy caramel brown.
  • Pour the toffee gently onto the biscuit base and quickly smooth the surface. Leave to chill for 1 hour (or up to 8 hours).
  • Just before serving, lightly whip the cream in a bowl. It should stand in soft peaks, any thicker and it will look over-whipped when mixed with the bananas. Peel and diagonally slice four bananas and scatter half of them over the toffee. Fold the rest lightly into the cream and spoon gently on top.
  • Peel and slice the remaining banana and put it in a bowl. Pour the lemon juice over and gently toss (this will stop the banana turning brown). Decorate the top with the lemony banana, poking into the cream randomly, and sprinkle the pie with grated chocolate or decorate with chocolate curls. Serve in fairly thin slices as it is very rich.

4 bananas , sliced
394g caramel or dulce de leche
300ml double cream
dark chocolate (optional)
100g butter , chilled (plus extra for greasing)
200g plain flour
1 medium egg , separated
1 tbsp golden caster sugar

Steps:

  • Start by making the pastry case. Put the butter and flour in a food processor and pulse until it resembles fresh breadcrumbs. Add the yolk of the egg and the sugar and pulse again until mixed through then, add a tbsp at a time of very cold water pulsing the processor after each addition. Stop adding water as soon as the dough starts to come together as one piece.
  • Remove the dough from the processor and continue to bring together by kneading gently with your hands. Once you have a smooth ball of dough wrap it tightly in cling film and chill in the fridge for 30mins.
  • Heat oven to 190C/170C/gas 4 and grease a 23cm loose bottomed fluted tart tin. Roll out the chilled pastry on a lightly floured surface and use it to line the tin. Leave about half a cm of pastry proud of the edge of the tin - snipping it to length with kitchen scissors.
  • Line the base with a piece of baking parchment and weigh it down with baking beans or uncooked rice. Bake for 15 mins then remove the paper and beans and brush the pastry surface with beaten egg white. Return to the oven for a further 15-20 mins or until crisp, golden and cooked through. Leave to cool completely (can be done a day ahead).
  • Spread half of the caramel on the case of the pastry case and layer the sliced bananas on top. Cover with the rest of the caramel and place in the fridge.
  • Whip the cream until billowy thick and spoon it over the top of the tart. To serve finely grate over a 1-2 pieces of dark chocolate to garnish.

How to make banoffee pie image

A true British invention, the banoffee pie. Bananas, caramel, biscuit, cream - there's nothing to go wrong here. Easy banoffee pie is a great dessert for parties.

75g/3oz unsalted butter
200g/7oz digestive biscuits
150g/5½oz light muscovado or soft brown sugar
150g/5½oz unsalted butter
1 x 397g can condensed milk
pinch sea salt flakes
2 ripe bananas
150ml/¼ pt double or whipping cream
100g/3½oz bar milk chocolate, grated

Steps:

  • Make the biscuit base first. Melt the butter in a medium-sized pan. Put the biscuits into a food bag and crush with a rolling pin, or pulse them until fine in a food processor.
  • Tip the biscuit crumbs into the melted butter until evenly coated. Pour the mixture into the centre of a 23cm/9inch loose-bottomed tart tin. Then press the mixture firmly over the base of the tin and up the sides. Transfer the base to the fridge to chill for about 30 minutes, until firm.
  • While the base cools, make the caramel. Heat the brown sugar and butter together in a pan over a medium heat until the butter melts and the sugar has dissolved. At first the sugar and butter won't mix, but keep stirring. As the sugar melts, it will come together.
  • Stir in the condensed milk and the sea salt flakes. Bring up to the boil, then take off the heat.
  • Take the set biscuit base out of the fridge and pour the caramel onto the biscuit base. Transfer to the fridge and leave to cool completely.
  • When ready to serve, slice the bananas and layer them over the set caramel. Pour the cream into a large bowl, and whip with electric hand beaters till thickened but not stiff. Spoon the cream over the bananas.
  • Grate the chocolate over the top of the pie.
  • Remove the pie from the tart tin, by placing the tin on top of an upturned bowl, then sliding the edge of the tin down. Move the bowl out of the way, then slide the banoffee pie off the tin base and onto a board or plate. It's now ready to serve.

400g/14oz dulce de leche (sometimes sold as caramel)
2 bananas, peeled and sliced
300ml/½ pint whipping cream, whipped until soft peaks form
2 tbsp grated dark chocolate

Steps:

  • Place the biscuits into a food processor and pulse until the mixture resembles fine breadcrumbs. Transfer to a mixing bowl and stir in the melted butter, mixing well to combine.
  • Place the mixture into a lightly greased 20cm/8in loose-bottomed cake tin and press down into the base and up along the sides. Place in the fridge to chill for 30 minutes.
  • Spoon the dulce de leche over the biscuit base, and then cover with a layer of sliced bananas. Spoon the whipped cream on top and decorate with grated chocolate.
  • Slice into wedges and serve.

GROWN-UP BANOFFEE PIE

550g ready-made sweet shortcrust pastry
flour , for dusting
4 large eating-ripe bananas , peeled and halved lengthways, then half cut into 3-4 shorter chunks
1 tbsp butter
1 tbsp golden caster sugar
397g can caramel , reserving 2 tbsp for the chocolate layer
300g dark chocolate
300ml pot double cream
2 tbsp caramel
3 tbsp dark rum
1 tbsp golden caster sugar
200ml pot double cream
2 tbsp icing sugar
a little cocoa , for dusting
crème fraîche (optional)

Steps:

  • Roll out the pastry on a lightly floured surface until big enough to line a deep, round 20-22cm tart tin. Chill for 30 mins.
  • Heat oven to 200C/180C fan/gas 6. Line the pastry with baking parchment, fill with baking beans, and bake for 15 mins until the sides are firm and turning golden. Remove the beans and parchment, and cook for another 15 mins until browned.
  • Meanwhile, fry the bananas, butter and sugar in a wide frying pan until golden and caramelised. In a saucepan, bubble the caramel for 5 mins until slightly thickened.
  • Melt 25g of the chocolate, brush over the base of the tart case and set aside to harden. Once the bananas are cool, and the chocolate has set, arrange the bananas over the base. Top with the caramel, then chill while you make the topping.
  • Put the remaining chocolate, the cream, 2 tbsp caramel, the rum and sugar in a heatproof bowl over a pan of barely simmering water and melt until smooth and combined. Pour the mix over the bananas, then chill for at least 4 hrs.
  • To serve, remove the tart from the tin. Whip 200ml of double cream with the icing sugar until it is just holding its shape. Pipe swirls of cream around the edge of the tart, then dust with cocoa. Slice, and serve with a little crème fraîche, if you like.

225g digestive biscuit
120g butter, melted
1 x 397g tin Nestlé Carnation caramel
1 x 300ml pot double cream
3 ripe bananas, finely sliced
banana chips (optional)

Steps:

  • Crumble the biscuits into a blender and blitz until you have fine crumbs. Add the melted butter and pulse again to combine.
  • Spoon the mixture evenly between 8 individual fluted, loose-bottomed tart tins (9cm). Alternatively, make one big Banoffee pie, using a 20cm fluted, loose-bottomed tart tin. Press the mixture in firmly - you can use a teaspoon for this - and refrigerate for at least half an hour.
  • Spread the caramel over the base of the tarts not quite to the edges. Arrange a layer of bananas on top of the caramel.
  • Whip the cream until is has just reached soft peaks. Dollop onto the tarts to give a pillowy effect.
  • Remove the tarts from the tins (see Tip). Poke one banana chip into the centre of each tart and scatter with chocolate shavings.

262g pack dark chocolate oat biscuits (we used Hobnobs)
65g butter , melted
4 slightly overripe bananas
4 tbsp light brown soft sugar
1 lime , juiced
397g tin Carnation caramel
80g banana chips , crushed
100g smooth peanut butter
100g icing sugar
340ml double cream

Steps:

  • Whizz the biscuits to crumbs in a food processor or put in a strong plastic bag and bash with a rolling pin. Add the butter and whizz again briefly, then tip the buttery crumbs into a 22cm fluted tart tin. Use the back of a spoon to press the crumbs into the tin and up the sides until the whole case is lined. Chill for at least 10 mins.
  • Heat oven to 200C/180C fan/gas 8. Halve the bananas lengthways and tip into a shallow roasting tray or baking dish. Squeeze over the lime juice, scatter with the brown sugar and bake in the oven for 15-20 mins until caramelised. Leave to cool slightly, then thoroughly mash and spread evenly over the tart base.
  • Tip the caramel into a saucepan, bring to a simmer and bubble for a few minutes to thicken. Add a pinch of flaky sea salt. Crush the banana chips using a rolling pin on a chopping board. Take the pan off the heat and stir in most of the banana chips, then spread the mixture over the banana layer and put back in the fridge for at least 4 hrs to set.
  • To make the peanut butter cream, beat the peanut butter with the icing sugar and 140ml of the cream until smooth. Whisk the rest of the cream until it just holds its shape, then fold through the peanut butter cream to ripple. Top the tart with pillows of the whipped cream. Scatter with the rest of the crushed banana chips and serve.

200g shop-bought shortcrust pastry
plain flour, for dusting
25g light muscovado sugar
25g butter
397g can condensed milk
4 tbsp half-fat crème fraîche
100ml whipping cream
¼ tsp instant coffee granules
2 tsp golden caster sugar
200g 2% Greek yogurt
85g half-fat crème fraîche
1 large banana (about 175g unpeeled)
1 tsp lemon juice
a little sifted cocoa powder, for dusting

Steps:

  • Heat oven to 200C/180C fan/gas 6. Roll out the pastry thinly on a lightly floured surface and use to line a 23cm round x 2.5cm deep loose-bottomed fluted tart tin. Lightly prick the pastry base with a fork, then line the pastry with foil and add baking beans. Sit the tin on a baking sheet and blind-bake for 15 mins to set the pastry, then remove the foil and beans. Bake for a further 5-6 mins until the pastry is cooked and pale golden all over. Leave to cool, then remove the tart tin and base, and sit the pastry case on a flat serving plate.
  • For the toffee, put the sugar and butter in a medium heavy-based saucepan. Stir with a wooden spoon over a low-moderate heat for 2-3 mins until the butter has melted and the sugar is starting to dissolve. (The butter will have blended in and the mixture will be thick and fudgy.) Pour in the condensed milk and turn up the heat so that the mixture can start to bubble and come to a boil. Stir constantly as it bubbles away for 6-7 mins, until it thickens and turns a light caramel colour. It is important to stir constantly, gathering the mixture up from the bottom of the pan, or it may burn. Remove from the heat, stir until the bubbles subside, then beat in the crème fraîche. Pour into the pastry case and spread evenly. Chill until the toffee is cold and set, about 1 hr.
  • For the topping, pour the whipping cream into a mixing bowl and sprinkle over the coffee and sugar. Leave for a few mins for the coffee granules to dissolve while you mix the yogurt and crème fraîche together in a small bowl. Whisk the cream quite stiffly without over-beating it, then fold in the yogurt and crème fraîche.
  • Cut two-thirds of the banana into long, thin diagonal slices. Scatter them over the toffee layer. Thinly slice the rest of the banana diagonally and toss the slices in the lemon juice. Spoon the creamy topping over the toffee in big spoonfuls, spreading lightly and creating a few billowy swirls with the spoon. Stick the lemony banana slices into the creamy topping. Chill for 30 mins-1 hr, then serve sprinkled with a light dusting of sifted cocoa powder. Best eaten the same day.
