This is a simple, no frills biscotti. My friend at work gave this recipe to me. It's quick, easy and one of my favorite Italian cookie recipes.

½ cup vegetable oil
1 cup white sugar
3 ¼ cups all-purpose flour
3 eggs
1 tablespoon baking powder
1 tablespoon anise extract, or 3 drops anise oil

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets or line with parchment paper.
  • In a medium bowl, beat together the oil, eggs, sugar and anise flavoring until well blended. Combine the flour and baking powder, stir into the egg mixture to form a heavy dough. Divide dough into two pieces. Form each piece into a roll as long as your cookie sheet. Place roll onto the prepared cookie sheet, and press down to 1/2 inch thickness.
  • Bake for 25 to 30 minutes in the preheated oven, until golden brown. Remove from the baking sheet to cool on a wire rack. When The cookies are cool enough to handle, slice each one crosswise into 1/2 inch slices. Place the slices cut side up back onto the baking sheet. Bake for an additional 6 to 10 minutes on each side. Slices should be lightly toasted.

  • Divide the dough in half. Shape each half into a ball and then use your hands to shape each ball into a log that is about 8 inches long.
  • Place the logs on the prepared baking sheet. Use your hands to flatten the dough logs until they are about 3/4-inch thick. Gently press the sides and ends of the logs to even them out and flatten them.
  • If desired, sprinkle the logs with turbinado sugar.

This easy, Italian Lemon Biscotti recipe is delicately sweet, has a light outer crunch and soft center. Biscotti are so easy to make at home! This cookie is made with real lemons giving it a bright sweetness that cannot be replicated with extracts.

4 tablespoons butter (softened at room temp; salted or unsalted can be used)
¾ cup granulated sugar
3 eggs
Zest of 2 lemons
2 cups all purpose flour (plus more for shaping the dough)
⅛ tsp salt (if you're sensitive to salt, you may want to omit this if using salted butter)
1 teaspoon baking powder
1 cup powdered sugar
Juice of 1 lemon

Steps:

  • Preheat the oven to 350°F. Prep one cookie tray with parchment.
  • In a medium bowl, combine the butter and sugar. Mix until light and fluffy using a hand mixer. Add the lemon zest and mix until fully incorporated.
  • Add the eggs and mix for about 1 minute. Scrape down the sides and bottom of the bowl.
  • Add the flour, salt and baking powder. Gently mix the dry ingredients on low speed until incorporated. Stop mixing once all of the flour is absorbed. Scrape down the sides and bottom of the bowl.
  • Once the mixture comes together, sprinkle a dusting of flour onto the cookie tray that is lined with parchment. Carefully dump out the bowl onto the tray and gently form the dough into a log. The dough will be sticky and soft, so add more flour to your surface and your hands as needed to form the shape.
  • Once your log is ready (it should be about the length of the tray), press down so that the dough log is about 1/2 inch thick.
  • Bake for about 30 minutes until puffed up, light golden brown and firm.
  • Once the cookie log is done baking, remove from the oven and set aside. Drop the oven temp to 300°F.
  • Allow to cool for 10 minutes on the tray. Once the cookie log is done resting, use a serrated knife to slice the log into about 1 inch cookies, on a diagonal.
  • Place the cookies on their flat sides and place back into the oven for 10 minutes* (or more time if desired, SEE NOTES).
  • After the cookies are done baking on the one side, flip them over again and bake the other sides for 10 minutes (or more time if desired, SEE NOTES).
  • After the last bake, remove the cookies from the oven and allow to cool on the tray.
  • In a small bowl, combine the lemon juice and powdered sugar. Drizzle the glaze over the tops of the biscotti. Allow the glaze to dry.

I found this recipe on the web about 5 years ago and can't remember where I found it. I wish I could so that they received the credit. I am a biscotti nut and this was the first recipe (and only) that I used. The results are fabulous and they are so easy to make even though they are triple-baked. I did change the ingredients just a little. Once you eat these you will never go back to store-bought again. I like them best dipped in a cup of hot tea.

3/4 cup toasted almond (slivered works best)
1/4 lb butter
3/4 cup sugar
2 eggs
2 1/4 cups flour
1 1/2 teaspoons baking powder

1 orange, zest of (make sure it is fresh)

Steps:

  • Preheat oven to 350.
  • Cream butter and sugar.
  • Add Eggs.
  • Mix until smooth.
  • Add orange zest and almond extract.
  • Continue mixing until well blended.
  • Sift in flour, baking powder and salt.
  • Stir in almonds.
  • On floured board, divide dough in half and using your hands roll and form each half into a long roll (approx 1 1/2 diameter by 10 inches long).
  • Place rolls lengthwise on a cookie sheet approx 2 inches apart.
  • Bake rolls at 350 for about 20- 25 minutes.
  • Take rolls out of oven and cool for 5 minutes (leaving them on the cookie sheet).
  • Using a sharp knife slice across each roll diagonally into 1/2 inch thick slices (I usually make the slices about 3 inches long).
  • Lay the slices flat on the cookie sheet, then bake for 8 minutes.
  • Turn slices over and bake for an additional 8-10 minutes until slightly golden.
  • Remove and cool biscottis on a rack.
  • Store in an airtight container once they are cooled.

This recipe is given in grams; it's from a BBC food show. The dough can feel a bit crumbly but it's no problem. These are really good and chocolaty. I like to roast my hazelnuts in the oven. You make them fast and you can eat more of them since there is no butter in them good for lactose intolerants!!

2 eggs
1 pinch salt
130 g sugar
150 g flour
50 g fine cocoa
1 teaspoon baking powder
100 g chopped nuts (hazelnuts or pecans are my favourites)
100 g good quality dark chocolate, chopped

Steps:

  • Cream together the eggs with a pinch of sugar until frothy using an electric mixer.
  • Spoon in the sugar little by little to make a pale yellow batter.
  • Sift together flour, cocoa and baking powder; fold carefully into the egg mixture.
  • Fold in nuts and chocolate.
  • Chill for about 20 minutes.
  • Flour hands and divide the dough into two.
  • Form into logs in the length of an oven tray.
  • Bake for 5 minutes in a 175°C (350°F) oven.
  • Lower the temperature to 150°C (300°F) and bake for 15 minutes.
  • Cut into pieces about ½-inch.
  • Dry them in the oven for 15 minutes.
  • When cool, store in an airtight tin.

  • Preheat oven to 350. Beat eggs and add sugar to blend. Add salt. Sift flour and baking powder and add all at once to eggs. Stir just to blend. Add flavoring or garnish. 2 cups all purpose flour
2 teaspoons baking powder
pinch salt
4 eggs
3/4 cup granulated sugar
1/2 cup vegetable oil
1 teaspoon vanilla extract
1½ teaspoon anise extract (OR 2 teaspoons anise seed OR 2 teaspoons Anisette liqueur)

Steps:

  • Preheat oven to 350° F (180° C). Position rack in the center.
  • Grease and flour (or use non-stick spray) three 8.5 x 4.5 inch loaf pans.
  • In a medium bowl, sift together flour, baking powder and salt. Set aside.
  • In a large mixing bowl, or bowl of electric mixer fitted with whisk attachment beat the eggs on medium speed until light and frothy (about 2-3 minutes).
  • Add the sugar gradually and whisk for another minute or so.
  • Add the oil and extracts. Whisk for another minute.
  • Incorporate the flour mixture. Mix until combined.
  • Pour mixture in the 3 prepared loaf pans.
  • Bake for 20-25 minutes or until firm to the touch
  • Remove from loaf pans and let cool for a few minutes.
  • Transfer to cutting board.
  • Using a serrated knife, slice cookies about 1/4 inch thick (or thicker).
  • Place slices flat down on parchment lined baking sheets, and bake for about another 5-8 minutes or longer, depending on your personnel preference and your oven (the longer they stay in the oven, the crispier they get). Make sure to turn the slices over to ensure even toasting.
  • Can be stored at room temperature for a few weeks...if they last that long.
