BASIC BISCUITS
This is a basic biscuit recipe with baking powder used as the leavening. They're easy to make and go with almost any meal.

Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- In a large mixing bowl sift together flour, baking powder and salt. Cut in shortening with fork or pastry blender until mixture resembles coarse crumbs.
- Pour milk into flour mixture while stirring with a fork. Mix in milk until dough is soft, moist and pulls away from the side of the bowl.
- Turn dough out onto a lightly floured surface and toss with flour until no longer sticky. Roll dough out into a 1/2 inch thick sheet and cut with a floured biscuit or cookie cutter. Press together unused dough and repeat rolling and cutting procedure.
- Place biscuits on ungreased baking sheets and bake in preheated oven until golden brown, about 10 minutes.

PERFECT BISCUITS FROM SCRATCH
Steps:
- Preheat oven to 450°F.
- Combine flour, sugar (optional), baking powder, and salt in a large bowl. Mix with a fork or whisk until combined.
- Cut the butter into the flour mixture using a pastry cutter or two forks. The mixture should resemble coarse crumbs.
- Add milk to the flour mixture and stir to form a shaggy dough. Make sure not to overmix.
- Turn the dough out onto a lightly floured surface. Knead dough 3-4 times or until it comes together. Avoid overworking.
- Lightly flour your rolling pin (if the dough is sticky) and roll out the dough to about ¾ inch thickness.
- Cut biscuits out of dough using a 2 inch round cookie cutter, then place on an ungreased baking sheet. Make sure to cut your circles as close together as possible.
- Lightly brush each biscuit top with milk.
- Bake for 8-10 minutes or until the biscuit tops are lightly golden.

- In a mixing bowl whisk together flour, salt, baking powder, baking soda, garlic powder and thyme. Cut butter in small pieces and mix with flour until resembles small peas. Add the green onion, shredded zucchini and buttermilk and mix well with a spoon. Fold in the shredded cheese and mix.
- Spray a baking sheet with cooking spray. Drop mixture by spoonfuls onto baking sheet or you can flour your hands and roll into balls about the size of a walnut. Bake in preheated 450 degree oven 12 to 15 minutes until brown on tops.

GRANDMA'S BAKING POWDER BISCUITS
This is my grandmother's biscuit recipe. It is my all-time favorite and has a really good flavor to it. Be sure not to roll out too thin, you want high biscuits! I usually just pat out the dough to the desired thickness, usually 1/2 inch.
