BROCCOLI CASSEROLE WITH RITZ CRACKERS

Steps:
- Preheat the oven to 350°F and prepare a 9x13 casserole dish by greasing it with nonstick cooking spray.
- Prepare and drain the broccoli florets. Spread the cooked broccoli in an even layer in the dish.
- In a large saucepan, heat the milk, heavy cream, Velveeta, garlic powder, onion powder, black pepper, and ½ teaspoon Italian seasoning over medium heat. Cook until the cheese is fully melted, stirring constantly.
- Remove the pan from heat and stir in the sharp cheddar cheese until melted.
- Pour the cheese sauce over the top of the broccoli in the pan. Bake in the preheated oven for 20 minutes.
- While the casserole is cooking, combine the crushed Ritz crackers, butter, and remaining Italian seasoning. Stir until well mixed.
- Remove the casserole from the oven and top with cracker mixture. Return to oven and bake for an additional 10 minutes, until crackers are browned.

Steps:
- Par boil the broccoli for approx 5-10 minutes, (Still"crispy", you dont want it mushy).
- Cut broccoli into bite size pieces and put in 9x13 baking dish.
- Mix mushroom soup, mayonaise, onion, eggs, cheese and seasonings together.
- Pour over broccoli.
- Top with crushed Ritz Crackers.
- Dot with butter.
- Bake at 350 degrees for 40 minutes uncovered.

- Cook and drain the broccoli.
- Place broccoli in a buttered, 2 quart casserole baking dish.
- Over low - medium heat, melt 1/4 cup of margarine or butter and Velveeta, until smooth and pour on top of the broccoli.
- Crush 1 tube of Ritz crackers and mix all ingredients together, in the casserole dish.
- Melt rest of margarine or butter and pour over the top and bake in a pre-heated 350 degree oven for 10-15 minutes .

FIRST PLACE BROCCOLI CASSEROLE WITH RITZ CRACKERS
This recipe won first place in 1978 at the county fair. I make it over the holidays and everyone raves about it. There are some similar recipes on Recipe Zaar, but this recipe is different enough in my opinion to make it slightly better. You can use fresh or frozen broccoli, although the recipe calls for 2 packages, frozen chopped broccoli.

- Put into 2-quart casserole.

- Saute onion in 1 stick of butter.
- Cook frozen broccoli. Drain and place in large mixing bowl.
- Add cream cheese, stirring untill all lumps have dissolved.
- Add the cream of mushroom soup.
- Drain onions from the butter, but reserve the excess butter.
- Put onions in broccoli mixture. Add salt and pepper to taste.
- Crush sleeve of Ritz crackers and add reserved butter to moisten.
- Put broccoli in a 1 1/2 quart casserole and cover with crackers.
- Bake at 350 degrees for 30 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish.
- Put broccoli in a large microwave-safe bowl with a small amount of water in the bottom; cook in microwave until tender, about 5 minutes. Drain liquid from bowl. Stir mushroom soup, Cheddar cheese, and mayonnaise with the broccoli until evenly mixed; pour into prepared casserole dish.

BAKED STUFFED SHRIMP WITH RITZ CRACKERS®
My late mother created this recipe over thirty years ago. My grandparents, my father, and myself have enjoyed these baked stuffed shrimp every other Friday for many years. It's a tradition - we eat baked stuffed shrimp for dinner and then play cards! (We've been leaving out the scallops lately due to the high price, and we don't even miss them.) We serve the shrimp with a nice garden salad and rice pilaf or baked potato.

- Preheat the oven to 375 degrees F (190 degrees C). Coat a baking dish with cooking spray.
- Mix crushed round crackers, parsley, saltines, celery salt, and garlic together in a large bowl. Add scallops, crabmeat, melted butter, and cooking wine; mix stuffing well.
- Place a shrimp on a flat work surface. Slice horizontally through the middle, being careful not to cut all the way through to the other side. Open the 2 sides and spread them out like an open book. Repeat with remaining shrimp.
- Stuff each shrimp with a heaping tablespoon of stuffing and place back-side up in the baking dish. Repeat with remaining shrimp and stuffing. Add 1 or 2 tablespoons water to the bottom of the baking dish to keep shrimp moist during baking.
- Bake in the preheated oven until shrimp are opaque and stuffing is beginning to brown, 15 to 18 minutes.
