BANANA FROSTING
An old recipe of my grandmother's; my mother and grandfather love it on spice cake. Grandma's recipe card says that this frosting is similar to a banana-frosted spice cake A&P used to sell back in the very early 70s.

- Cream room temperature butter with a hand mixer, the paddle attachment of a stand mixer, or a wooden spoon until smooth and fluffy. Gradually beat in confectioners' sugar until fully incorporated. Beat in vanilla extract.
- Pour in milk and beat for an additional 3 to 4 minutes. Add food coloring, if using, and beat for thirty seconds until smooth or until desired color is reached.

- In a small bowl, using an electric mixer on low speed, beat together sugar, butter and salt until creamy. Increase speed to high and beat until light and fully. Add vanilla, beating until frosting is smooth.
- Spread icing on cooled cupcakes or cake with a knife or transfer to a pastry bag and pipe decoratively over cake or cupcakes.
- Makes enough for over 16 cupcakes.

- Add confectioner's sugar to a bowl and stir it with a wire whisk to remove any lumps; use a sifter if you have one. Use 1 pound of sugar, or about 4 cups, to make approximately 3 cups of frosting.
- Cream softened butter, shortening or equal parts of both in a mixing bowl. Beat the butter or shortening with an electric mixer at medium speed until no lumps remain.
- Mix in clear vanilla extract, almond extract or a similar flavoring to taste, using about 1 teaspoon of flavoring per pound of confectioner's sugar.
- Add the confectioner's sugar to the mixing bowl in small batches until all of the sugar is thoroughly incorporated with the butter or shortening.
- Mix in 2 tablespoons of water for each pound of confectioner's sugar. Use the water as a substitute for milk. Or, instead of water, use orange juice, which also dissolves the sugar but adds some orange flavor to the frosting.
