LASAGNA CAPRESE
The fresh flavors of basil and tomato are baked into a cheese-lovers dream with mozzarella, Parmesan and four-cheese agnolotti.

Steps:
- Preheat the oven to 350 degrees F.
- Cook the agnolotti according to package directions. Drain.
- Meanwhile, bring the heavy cream and shallot to a boil in a large skillet over medium-high heat, stirring occasionally. Reduce the heat to medium-low and simmer to thicken slightly, about 2 minutes. Stir in the Parmesan and season with salt and pepper.
- Layer half the agnolotti in a 9-by-11-inch baking dish. Top the pasta with the sliced tomatoes, basil and three-quarters of the mozzarella. Top with the remaining agnolotti and mozzarella. Pour the cream mixture over the top. Bake until golden and bubbly, 25 minutes. Cool slightly. Sprinkle Parmesan on top. Serve.

- In a small bowl, whisk the dressing ingredients with a small hand whisk until they emulsify into a smooth salad dressing. Set aside.
- Slice the tomatoes thinly. Aim to get a total of 10 slices.
- Using a sharp knife, slice the mozzarella thinly into 9 rounds.
- Arrange the tomato and mozzarella slices on a platter, alternating and overlapping each other. Arrange the basil leaves on top, as shown in the photos.
- Sprinkle the salad with salt and pepper. Drizzle with the salad dressing. Serve immediately.

INSALATA CAPRESE I
This tastes like the salad that is served at a famous Italian restaurant chain in my area. It's perfect with fresh loaf of crusty bread. For the best flavor be sure to use fresh whole-milk mozzarella it puts the packaged varieties to shame. You can find fresh mozzarella in Italian delis, gourmet markets, cheese shops and some grocery stores.

EASY LASAGNA I
A super easy and fast beef lasagna recipe. It is made with a prepared sauce, and requires no boiling of the noodles.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet, cook and stir ground beef until brown. Add mushrooms and onions; saute until onions are transparent. Stir in pasta sauce, and heat through.
- In a medium size bowl, combine cottage cheese, ricotta cheese, grated Parmesan cheese, and eggs.
- Spread a thin layer of the meat sauce in the bottom of a 13x9 inch pan. Layer with uncooked lasagna noodles, cheese mixture, mozzarella cheese, and meat sauce. Continue layering until all ingredients are used, reserving 1/2 cup mozzarella. Cover pan with aluminum foil.
- Bake in preheated oven for 45 minutes. Uncover, and top with remaining half cup of mozzarella cheese. Bake for an additional 15 minutes. Remove from oven, and let stand 10 to 15 minutes before serving.

- With a serrated knife, cut the tomatoes into 1/4″ thick slices. Arrange them on a large serving platter, overlapping their edges and varying the shapes as best you can.
- Cut the burrata or mozzarella into 1/4″ to 1/2″ slices (burrata is tricky since the inside is so creamy; I cut it into 1/2″ slices and gently tugged the slices into smaller sections, see photos).
