CHEESE SCONES
Found this recipe on the internet. It's a nice twist on the traditional English scone (see recipe #133633).

Steps:
- Sift the flour, sugar, baking powder, baking soda and salt together. Add grated cheese and dried oregano and mix.
- Cut in the margarine or butter till mixture resembles fine breadcrumbs.
- Add the milk and mix to make a smooth dough. (add more milk if necessary to ensure mix is not too dry) Knead very lightly for ten seconds on a lightly floured surface.
- Roll or pat to about 3/4" thick (2 cm) and cut into individual scones.
- Top each scone with a little additional cheese and bake for approximately 12 minutes. Brush the tops with melted butter after removing from the oven.
EASY CHEESE SCONES
A very easy recipe for cheese scones with a little kick from the cayenne. Best served straight from the oven, split and spread with plenty of butter.

- Pre-heat your oven to 180°C.
- Mix together the flour, baking powder, salt, cayenne and cheddar, reserving just a little to sprinkle on the tops of the scones.
- In a separate bowl, beat the egg and add the milk and oil.
- Add the liquid mixture to the flour mixture and combine together with a spoon and then your hands. If the mixture won't hold together, add a splash more milk until it does.
- Use your hands to flatten the dough until it's about half a centimetre thick. Fold in half and flatten again to the same thickness.
- Use a cutter of your choice to press out the scones and arrange them on a baking tray. They don't spread much so you don't have to worry about leaving a large gap between each one. Sprinkle the reserved cheddar over the tops of the scones and place in the oven for 15-20 minutes, until golden.
- Bake until golden.

ENGLISH CHEESE SCONES
This is my go-to recipe whenever I need to rustle up baked goods quickly. Fast and easy to make, these scones are delicious warm or cold and for decadence split and spread with butter or with a dollop of sour cream or creme fraiche. They make a wonderful accompaniment to a bowl of soup, especially a nice tangy tomato soup.

Steps:
- Rub the butter into the flour until it resembles breadcrumbs and no lumps of butter remain.
- Add the two types of grated cheese, the salt and the hot pepper flakes.
- make a well in the centre and add the beaten eggs with the splash of soda or mineral water and mix all ingredients together until a soft dough is formed. Add a little more water if necessary but take care not to make the dough too sticky.
- Place the dough on a clean floured surface and knead it very slightly until it is smooth.
- Roll out with a rolling pin until approximately 3/4 inch thick, then use a round cookie cutter to cut out rounds.
- Place the rounds on a baking sheet.
- Bake at 200 degrees celsius for around 15 to 20 minutes or until the scones are golden brown on top.
- Cool on a cooling rack.

- I never keep buttermilk on hand, so I add 1 tablespoon lemon juice to 2/3 cup 2% milk and let it sit while I prepare the rest of the recipe.
- Mix the dry ingredients in a bowl, Add the milk and stir a few strokes, add the extract to the melted butter and add that to the mix. Add in cranberries. Mix just enough to combine ingredients then let sit a few minutes.
- I put parchment paper on a cookies sheet and dust with flour. Push the dough out of the bowl onto the floured paper. Dust the top of the sticky dough and then pat down/shape into a round "pattie" about 1 inch thick. Grease pizza cutter and cut into triangular (pizza slice) pieces before baking. (You will have to cut them again after baking.).
- The original recipe called for 8 minutes at 400 degrees F. I like my scones a little browned, I always go about 5 minutes longer, but that's my oven.
- *You can vary the flavor of different batches of scones by using blueberries, sliced or toasted almonds or chocolate chips. I always use orange extract. It gives it a fresh, bright complementary flavor to go with the fruit, nuts, chips or whatever you decide to flavor your scones with.

CHEESE SCONES
This is one of a few recipes that I got from doing home economics in school, so is one of the first things I cooked/baked. The mustard and pepper are optional, and along with the salt and cheese, you can experiment and vary the quantities of these ingredients to suit your own tastes. Diabetics may also appreciate this recipe as it has no added sugar.

- Sieve flour, salt, pepper and mustard together into a mixing bowl.
- Cut the margarine into smaller blocks, and then rub in until the mixture resembles fine breadcrumbs.
- Beat the egg and mix with the milk in a small basin.
- Make a well in the centre of flour mixture, add the cheese (save a little to sprinkle over the scones) and pour in a bit of the egg and milk mixture at a time, mixing with a blunt knife, until you get a soft, but not sticky dough. If you find the mixture too dry, you can add some more milk.
- Lightly flour the work surface so the dough doesn't stick, and roll out the dough until it is about half an inch (1cm) thick.
- Use a scone cutter (you can lightly dust it with flour to stop it from sticking) of a size of your choice and cut out the scones from the dough. You can keep gathering up the off-cuts and re-rolling it out until you use it all.
- Place the scones on a greased baking tray, or on baking paper in the tray and brush the tops with milk and sprinkle on some cheese.
- Bake at gas mark 8, 500 Fahrenheit or 250 Celsius for about 10 minutes, or until the tops have turned a golden brown.

This is my favorite, very simple, recipe for savory scones. They are wonderful served hot, spread with a little butter, and eaten alongside a steamy hot soup. It's important not to over handle these scones, as they will be heavy and tough.

- Preheat oven to 425 degrees F (220 degrees C). Lightly grease a baking sheet.
- In a large bowl, sift together flour and salt. Rub in butter lightly with finger tips until mixture resembles coarse breadcrumbs. Stir in cheese and garlic. Make a well in the center of the mixture and pour in the milk, reserving 1 teaspoon for a glazing the scones. Gently mix, just until combined.
- Turn out onto a lightly floured board and knead briefly and lightly. Be careful not to overwork the dough. Press out dough to form a 1 inch thick round. Cut into 8 wedges. Place on prepared tray and brush with reserved milk.
- Bake in preheated oven for 10 to 20 minutes, or until light brown. Serve hot or let cool on a wire rack.
