CHERRY POKE CAKE RECIPE
Cherry poke cake recipe is so moist and delicious with a ton of cherry flavor. Make this easy dessert! The entire family will enjoy this luscious cake.

Steps:
- Cake:
- Preheat oven to 350 degrees and coat a 13x9 baking dish with non-stick cooking spray
- Combine cake mix, eggs, buttermilk, oil and almond extract until smooth
- Spread evenly into baking dish, bake for about 25 minutes or until a toothpick inserted in the center comes out clean
- Remove from oven and let cool for 15 minutes
- Combine gelatin and boiling water and stir about 2 minutes until dissolved, add cold water
- Using a wooden skewer or large fork, poke holes into cake about every 1/2 inch
- Carefully pour gelatin over the cake
- Place in refrigerator at least 3 hours or overnight
- Frosting:
- In a mixing bowl, combine all ingredients, starting with ¼ cup powdered sugar and mix until fluffy. You may need to add more powdered sugar depending on how thick you want the frosting.
- Spread over cake
- Store in refrigerator until ready to serve
- Store leftovers in refrigerator covered with plastic wrap
- Serve with fresh cherries, canned cherries or sliced almonds

Steps:
- 1. Preheat oven to 350 degrees.
- 2. Set cookie dough at room temp for approx 10 min to soften.
- 3. Empty dough into bowl. Add dry pkg of sugar free cherry jello mix well til dough is a bright pink throughou. Add level 1/2 cup of semi sweet choc chip morsels and fold into dough.
- 4. Spoon batter onto cookie sheet spaced 2" apart. I use a serving spoon. Just depends on what size you want your cookies to be.
- 5. Bake at 350 for 10-13 minutes. For a gooey cookie 10 mins.
- 6. ***You may also use a sugar cookie dry mix for the cookie dough. Just follow the directions on the box for the cookies mixing well and then add the sugar free cherry jello and chocolate chip morsels. These make a more cakey cookie. I have made these cookies both ways and both are awesome!

- 1. Mix cake, jello, eggs, oil and water on low for 2 minutes.
- 2. Pour into Greased BUNDT pan.
- 3. Bake 325 degrees for 1 hour
- 4. Mix icing ingredients.
- 5. When cake is finished baking, remove from oven, and poke holes with chop stick.
- 6. Pour icing over hot cake while still in Bundt pan. Let stand for 15 minutes.
- 7. Invert cake onto serving cake dish and cover with glass top. ** For a chocolate covered version, melt milk chocolate and drizzle on top.
