- Preheat oven to 375˚F.
- Lay the chicken breasts flat in a large baking dish. Sprinkle the garlic powder, salt and pepper over the chicken breasts to season them, then spread the broccoli florets on top.
- Pour the broccoli cheese soup over the broccoli and chicken so that it is evenly covered and then top with the shredded cheddar cheese.
- Bake for 45-55 minutes or until the chicken is cooked through (165˚F internal temperature.)
- Garnish with parsley and serve over rice, mashed potatoes or your with your favorite side!

- Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch baking dish with nonstick cooking spray or butter.
- Place the chicken in a large pot with water to cover. Add some salt, bring to a boil, then reduce the heat to a low simmer and cook the chicken until tender, about 45 minutes. Drain the chicken, cover, and refrigerate until cool, or up to 24 hours. Shred.
- Meanwhile, bring a medium pot of generously salted water to a boil. Add the broccoli florets, and boil until crisp-tender, 2 to 3 minutes.
- Spread the rice in an even layer in the baking dish. Make a second layer with the broccoli. In a large bowl, mix the chicken soup, the sour cream, mayonnaise, lemon juice, shredded chicken, half the Cheddar and some salt and pepper. Pour the mixture over the broccoli and top with the remaining Cheddar. Bake for 40 minutes; let stand for 5 minutes before serving.

- Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Meanwhile, bring a large pot of lightly salted water to a boil. Add the broccoli florets, and cook uncovered until just tender, about 4 minutes. Drain in a colander, then immediately rinse with cold water for several minutes until cold to stop the cooking process. - 1. First, start pasta: cook pasta in a large pot of boiling water with a little salt and olive oil, until "al dente" - not too mushy. Drain and return to pot, cover and keep warm.
- 2. Stir together chicken, broccoli, soup, evaporated milk, poultry seasoning, salt and pepper. Add to cooked pasta and stir to warm it all up.
- 3. Turn into a greased 2 1/2-qt casserole dish. Bake at 350 degrees about 20-25 minutes, until all is hot and bubbly.

- Pre-heat oven to 400°F.
- Cook pasta in a large pot of generously salted boiling water until al dente. About 2 minutes before the pasta is done, add the broccoli to the pasta water and stir until combined. This will save you a dish. Drain the pasta and broccoli.
- Using a sauté pan melt the butter or oil over medium-high heat. Add the onion and cook for 3 minutes, stirring occasionally. Add the garlic and cook for 3 more minutes, stirring occasionally.
- Sprinkle the flour over the onion and garlic mixture and stir until combined. Cook for an additional 1 minute. Slowly add in the stock, and stir everything together until mostly smooth and clumps are gone. Add in the milk, Dijon mustard, salt and pepper and stir until fully combined. Continue to cook the sauce until it reaches a simmer. Then remove the sauce from heat and stir in 1 cup of the shredded cheese until thoroughly melted and combined.
- Using a 9 x 13-inch baking dish, combine the cooked pasta, broccoli, chicken and cheese sauce. Toss until combined. Even out the ingredients in the casserole dish.
- Bake uncovered for about 15 minutes. Then remove pan from the oven, to sprinkle the remaining cheddar cheese over the top of the casserole, and bake for 10 minutes or until the cheese is nice and melted.
- Serve Warm.
EASY CHICKEN BROCCOLI CASSEROLE
Most of the chicken broccoli casseroles I've seen here all have mayonaisse. Ick! This recipe uses a mixture of three different soups instead for it's creamy texture. The original recipe calls for cooked chicken breasts and cooked broccoli. I don't have time to cook things before I cook them! So I've always used uncooked chicken and frozen uncooked broccoli. Seems fine to me! :) Cooking time doesn't reflect pre-cooking of the chicken or broccoli... I can't stand cheddar cheese so I substitute mozzarella because that's the only cheese I can eat. I don't like mushrooms either, so I never put them in. Feel free to experiment!
