2 cups lowfat cottage cheese
2 cups shredded cooked chicken
1/4 cup grated Parmesan cheese
1 (9-ounce) package frozen cut spinach, thawed, well-drained
8 ounces (2 cups) shredded mozzarella cheese
1 (24-ounce) jar pasta sauce
1 large Land O Lakes® Egg

Steps:

  • Cover; bake 35-40 minutes or until heated through, uncovering during last 5 minutes.
  • Heat oven to 350°F. Spray 13x9-inch glass baking dish with no-stick cooking spray.
  • Cook manicotti shells according to package directions. Drain.
  • Combine all remaining ingredients except 1 cup mozzarella cheese and pasta sauce in bowl; mix well.
  • Fill each manicotti shell with 1/3 cup chicken mixture; place into baking dish. Spread remaining filling over shells. Pour pasta sauce over filled shells; top with remaining mozzarella cheese.

6 ounces frozen diced cooked chicken breast, thawed
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup chicken broth
1/2 cup whole milk
3 cans (8 ounces each) tomato sauce
1 teaspoon dried basil
1 teaspoon dried oregano
3/4 teaspoon garlic powder
3/4 teaspoon brown sugar
6 uncooked manicotti shells
1 cup shredded Monterey Jack cheese

Steps:

  • Divide spinach in half; refrigerate one portion for another use. In a sieve or colander, drain remaining spinach, squeezing to remove excess liquid. Pat dry; place in a small bowl. Add chicken; set aside. , In a large saucepan, melt butter. Stir in flour until smooth; gradually add broth and milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the tomato sauce, basil, oregano, garlic powder and brown sugar; cook over medium heat for 3-4 minutes or until heated through. , Meanwhile, stuff 1/4 cup chicken mixture into each uncooked manicotti shell. I LOVE Italian/pasta foods; however, I am NOT a fan of ricotta and cottage cheese! So, unfortunately there are times when I see something I really want to try but don't not knowing, OR knowing, what cheeses were used. So, after seeing this item at an Italian restaurant (which I didn't order because it contained ricotta cheese) I decided to create my own version by "borrowing" bits and pieces of recipes to create this dish...a DEFINITE family favorite! ENJOY =)

6 ounces Baby Spinach (finely chopped)
8 ounces KRAFT Shredded Three Cheese with a Touch of PHILADELPHIA
10 ounces Philadelphia Original Cooking Creme or 10 ounces Philadelphia Savory Garlic Cooking Creme
1/4 cup shredded parmesan cheese
2 -3 stalks green onions (finely chopped)
1 teaspoon oregano
1 teaspoon basil
1 teaspoon red pepper flakes
3 garlic cloves (omit if using the Low-Fat Garlic cooking creme)
1/4 teaspoon salt
1/4 teaspoon pepper
8 ounces manicotti (14 noodles)
15 ounces classico low-fat alfredo sauce (also good with regular sauce)

Steps:

  • Preheat oven to 400°F.
  • Combine all ingredients (top 12 items) in large mixing bowl. Cook manicotti "per package directions" (I actually cook the manicotti for about a minute to a minute and a half LESS than what is directed for a firmer noodle - easier to stuff!). Drain and rinse pasta with cool water.
  • Spray 2 - 13 x 9 casseroles w/cooking spray and place well-stuffed manicotti in casseroles.
  • Coat manicotti with Alfredo sauce.
  • Garnish with additional Parmesan and red pepper flakes if desired.

3 cloves garlic, minced
1 large leek (about 10 ounces), white and light green parts, thinly sliced

Steps:

  • Preheat the oven to 350 degrees F.
  • For the Alfredo sauce: Cook the bacon in a large skillet over medium-high heat until crisp and brown, 7 to 8 minutes. Transfer to a paper towel-lined plate and reserve.
  • Add the garlic and leeks to the skillet with the remaining bacon fat and cook until translucent, about 2 minutes. Add the half-and-half, Parmesan, crushed red pepper and lemon juice and bring to a simmer. Add the cream cheese and cook until the sauce is thickened and the cheese is melted and fully incorporated, about 5 minutes. Remove from the heat, stir in the parsley and season with salt and black pepper.
  • For the filling: Add the spinach, ricotta, chicken, Italian blend cheese, crushed red pepper, lemon juice, 1 teaspoon salt and a few grinds of black pepper to a large bowl and mix until fully combined. Transfer the mixture to a large disposable piping bag (or resealable plastic bag) and snip a large hole at the end of the bag.
  • For the pasta: Spoon 1 cup of the sauce on the bottom of a flameproof (not glass) 9-by-13-inch baking dish. Pipe the filling into both ends of the uncooked manicotti shells until filled and arrange them in the baking dish. Top with the remaining sauce, reserved bacon and Italian blend cheese. Cover with foil and bake until the sauce is bubbly and the pasta is cooked, 30 to 40 minutes.
  • Remove the baking dish from the oven and remove the foil. Turn the oven to broil. Broil until the top is golden brown, 3 to 4 minutes. Sprinkle with more chopped parsley.

2 -3 chicken breasts, cooked and shredded
15 ounces ricotta cheese
1/2 cup freshly grated parmesan cheese
1 tablespoon oregano
1 tablespoon fresh parsley, chopped
1 teaspoon basil

8 manicotti, cooked
1 (16 ounce) jar of favorite spaghetti sauce
8 slices mozzarella cheese

Steps:

  • In a bowl combine parmesan and ricotta cheese, chicken and spices.
  • Fill each manicotti shell with mixture.
  • In the bottom of a rectangular casserole dish, spread a about 1/2 cup of spaghetti sauce around.
  • Now place filled manicotti shells in dish.

1 bag frozen cut spinach
4 oz cream cheese, softened to room temperature
½ cup grated parmesan cheese, (reserve ¼ cup for serving)
½ teaspoon himalayan sea salt
¼ teaspoon pepper
1 tablespoon dry parsley flakes
¾ tablespoon dry oregano
½ tablespoon dry basil
½ teaspoon garlic powder
½ teaspoon onion powder
1 ½ jars marinara sauce, (can serve with extra) 24 oz (680 G)
¼ teaspoon fresh thyme

Steps:

  • Preheat the oven to 375°F.
  • Cook manicotti al dente. Then, rinse pasta with cool water and drain well.
  • Stir together all the spinach blend ingredients in a separate bowl and set aside.
  • In the bottom of an ungreased 13x9 (3 qt) glass baking dish, spread 1 ½ cups (390 G) pasta sauce along the bottom.
  • Spoon spinach mixture into a piping or a gallon-size Ziploc bag. Snip 1 inch (2.5 cm) off the corner - you want it big enough to fill the manicotti and be able to let all the ingredients pass through without clogging the piping hole.
  • Hold a manicotti shell in your hand and squeeze the filling inside the shell. Let it overflow just a bit on both sides.
  • Place the filled shells into the bottom of the pan: if you run out of room in your pan, use a separate smaller pan to accommodate the extra.
  • Cover the pan tightly with foil and bake for about 30 minutes or until the sauce is bubbling.
  • Uncover dish and top with more sauce. Then, sprinkle remaining ½ cup Italian cheese blend on top of the sauce.
