ZUCCHINI GOAT CHEESE BUNDLES



Zucchini Goat Cheese Bundles image

10 slices zucchini, cut lengthwise
Salt and freshly ground black pepper
2 tablespoons olive oil
8 ounces goat cheese
Chives, blanched
Baby lettuce
Vinaigrette of your choice

Steps:

  • Season zucchini slices with salt and pepper. Rub zucchini slices with olive oil and grill on both sides. Separate the goat cheese into 10 equal balls. Take 2 zucchini slices and lay 1 on top of the other to form a plus sign. Place goat cheese ball in center of the zucchini slices and fold the ends over the top of the ball. Tie the bundle with a chive. Repeat steps with the remaining zucchini and goat cheese. Toss the baby lettuce with your vinaigrette. Serve the zucchini on the bed of baby lettuce.

Easy Chicken Bundles image

This is a simple -- yet tasty -- recipe that can be tweaked to individual taste, just by changing the flavor of cheese spread used!

1/4 cup butter or 1/4 cup margarine
8 boneless skinless chicken breasts (about 4 oz each)
1/4 teaspoon pepper
2 (8 ounce) cans refrigerated crescent dinner rolls
1 (4 ounce) package garlic & herb spreadable cheese
1 egg, beaten (optional)

Steps:

  • In large skillet, melt butter, Sprinkle chicken breasts with pepper and add to skillet.
  • Cook 8 to 10 minutes or until well browned on all sides. Set aside to cool slightly.
  • Unroll both cans of the dough and separate into 8 rectangles.
  • Press each into 6x4-inch rectangle, firmly pressing perforations to seal
  • Spread cheese evenly in center of each dough rectangle and place chicken over cheese.
  • Bring corners of dough together over chicken and press to seal; place on cookie sheet that has been sprayed with cooking spray.
  • Bake at 375 degrees for 18 to 22 minutes or until deep golden brown. If you would like, brush lightly with egg during last 5 minutes of baking time.
  • Variations: Try different cheese spreads such as swiss, cheddar, etc. to get different flavors. Also, try adding a thin slice of ham and using swiss spread for a different take on Cordon Bleu.

8 flounder fillets (3 ounces each)
1/4 teaspoon lemon-pepper seasoning
1 medium lemon, thinly sliced
1 medium zucchini, cut into 1/4-inch slices
12 cherry tomatoes, halved
1/4 teaspoon dill weed
1/4 teaspoon dried basil

Steps:

  • For each bundle, place 2 fillets on a double thickness of heavy-duty foil (18 in. x 15 in.); sprinkle with lemon-pepper. Top with lemon slices, zucchini and tomatoes. Sprinkle with dill and basil. , Fold foil around fish and seal tightly. Place on a baking sheet. Bake at 425° for 15-20 minutes or until fish flakes easily with a fork.

This Baked Chicken Parmesan and Zucchini Noodles, makes eating healthy, easy. If you have never tried zucchini noodles, this is the recipe to try them with.

5-6 boneless, skinless chicken breasts
½ cup whole wheat breadcrumbs
½ cup panko breadcrumbs
½ cup grated parmesan cheese
2 teaspoons Italian seasoning
½ teaspoon garlic powder
salt and pepper (to taste)
2 eggs (beaten)
1 (26oz) jar pasta sauce
2 cups shredded Mozzarella cheese
3 zucchini (shredded or made into zucchini noodles)

Steps:

  • Preheat oven to 375 degrees. Spray a 9x13" baking pan with non-stick cooking spray and set aside.
  • Trim the chicken breasts into even pieces, pounding them if necessary to make them an equal thickness.
  • In a medium bowl, mix together the breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, and salt and pepper.
  • In another small bowl, add the beaten eggs. Dip each piece of chicken in the eggs, then dredge in the breadcrumb mixture. Place covered chicken piece in the prepared pan and repeat with remaining pieces.
  • Cook in preheated oven for 30-40 minutes (or until internal temperature of chicken reaches 165 degrees). Add a little bit of sauce and a piece of mozzarella on each chicken piece, then return to the oven for 4-5 minutes or until cheese is melted.
  • Serve over shredded zucchini with remaining sauce.
