Easy Chicken Chili with Roast Chicken image

This is our to-go chicken chili recipe during our roast chicken week. We'll roast whole chickens in the oven and save the leftovers for recipes such as this one. It's a great way to use up all the leftover chicken breast or even chicken thigh meat. Enjoy!

1 Onion (, chopped)
2 cloves garlic (, minced or crushed)
15 oz. crushed Tomatoes ((@ 2 cups))
7 oz. canned diced Green Chilies
1 1/2 cups (about) leftover Roast Chicken (, chopped)
15 oz. canned Beans ((Chili, Black, or Pinto, or whichever you prefer))
1 Red Bell Pepper (, chopped)
1/2 teaspoon ground Oregano
2 teaspoons ground Cumin
2 tablespoons chili powder
1/2 teaspoon paprika
1/2 cup water (about) (, or to desired chili thickness)
Salt (, to taste)
fresh cracked Black Pepper (, to taste)
sour cream, grated cheese, diced tomatoes, sliced green onions
bread, corn bread

Steps:

  • Heat a medium saucepan over medium-high heat and add oil. Add onions and garlic and cook until slightly translucent, about 2 minutes.
  • Add tomatoes and green chilies and cook for 2-3 minutes.
  • Add chicken, beans, bell pepper, oregano, ground cumin, chili powder, paprika. Add water to your desired thickness (usually about 1/2 to 1 cup).
  • Bring to a simmer then reduce heat and cook for 20-30 minutes.
  • Season with salt and pepper to taste. For gluten free, do not serve with bread or corn bread.

1 medium onion, chopped (1/2 cup)
1/2 cup chopped red bell pepper
1 can (10 3/4 oz) condensed cream of chicken soup
1 3/4 cups Progresso™ chicken broth (from 32-oz carton)
1 cup water
2 cups diced rotisserie-cooked chicken
2 cans (15.5 oz each) great northern beans, drained, rinsed
1 can (4.5 oz) Old El Paso™ chopped green chiles, undrained
1/2 teaspoon dried oregano leaves
1/2 teaspoon ground cumin
1/2 cup sour cream, if desired
Chopped fresh cilantro, if desired

Steps:

  • In 4-quart saucepan, heat oil over medium-high heat. Add onion and bell pepper. Cook 2 to 3 minutes, stirring frequently, until tender.
  • Stir in soup, broth and water. Cook 1 to 2 minutes, stirring frequently, until smooth and well blended. Stir in chicken, beans, chiles, oregano and cumin. Heat to boiling; reduce heat to medium-low. Cook uncovered 10 to 15 minutes, stirring occasionally, until thoroughly heated.
  • Top each serving with sour cream and cilantro.

It's so comforting to curl up with a bowl of Chicken Chili. This chili is great served with tortilla chips or baked potatoes. The combination of tender shredded chicken simmered in a creamy and hearty base is so inviting. Add your favorite toppings like diced avocado, shredded Monterey Jack cheese, and chopped cilantro.

1 Tbsp olive oil
1 medium onion (finely diced)
2 cups chicken broth (or stock)
30 oz canned white beans (drained and rinsed )
15 oz can corn (drained)
10 oz can Rotel diced tomatoes with green chilis (with juice)
1 tsp chili powder ((use 1/2 for mild chili))
1 tsp cumin powder
1 tsp salt (or to taste)
1.5 oz packet ranch dip mix (*)
2 chicken breasts
8 oz cream cheese (cut into cubes)
1 Tbsp fresh lime juice

Steps:

  • Heat a 6 quart enamel coated dutch oven pot over medium heat and add 1 Tbsp olive oil. Add onion and sauté 5 minutes until softened.
  • Add chicken broth, drained white beans, drained corn, Rotel tomatoes with juice. Season with chili powder, cumin, 1 tsp salt and ranch packet. Stir to combine.
  • Add 2 chicken breasts and submerge in liquid. Bring to a boil then reduce heat and simmer partially covered for 20-25 minutes or until chicken is tender and easy to shred.
  • Remove chicken to a bowl and shred with forks into bite-sized pieces.
  • Add diced cream cheese, lime juice and stir to combine. Continue simmering for 5 minutes or until cream cheese is incorporated. Add more lime juice to taste, and season with another 1/2 tsp salt or add salt to taste. Simmer another 3 minutes or until chili reaches your desired thickness. It will thicken more as it cools.

3 tablespoons ground cumin
2 tablespoons chili powder
2 tablespoons cayenne pepper
1 (8 ounce) container sour cream
1 (8 ounce) package shredded Monterey Jack cheese

Steps:

  • Heat olive oil in a large saucepan over medium heat. Stir in onions, and cook until softened and translucent, about 3 minutes. 1 lb cooked chicken in bite size pieces...use leftovers if you like.
1 can(s) (28 oz) diced tomatoes, juice and all.
1 can(s) (15 oz) black beans, drained and rinsed.
1 can(s) (15 oz) navy beans, drained and rinsed.
1-2 c your favorite sweet bbq sauce
1 medium onion, chopped and microwaved in a bit of butter 'til translucent.
1 can(s) mexicorn, drained
1/2 tsp crushed red pepper flakes
2 tsp sugar
1 tsp chili powder
1 tsp ground cumin
1/4 tsp salt

Steps:

  • 1. MIX all ingredients in large saucepan. BRING to boil on medium-high heat. Reduce heat to low; simmer 10 min. or until heated through, stirring occasionally.

2 tablespoons minced fresh cilantro
