BRANDI'S WONTONS

Brandi's Wontons image

These Chinese dumplings are so delicious and filling, I actually serve these as a meal. They also freeze well to make appetizers at a later date.

Provided by BRANDI T

Categories     Main Dish Recipes     Dumpling Recipes

Time 55m

Yield 6

Number Of Ingredients 12

2 cups shredded napa cabbage
½ pound ground pork
2 tablespoons soy sauce
1 tablespoon dry sherry
2 teaspoons cornstarch
1 ½ teaspoons minced fresh ginger root
1 green onion, minced
36 wonton wrappers
1 egg white, beaten
¼ cup soy sauce
¼ cup seasoned rice vinegar
2 tablespoons finely shredded fresh ginger

Steps:

  • Bring a large pot of lightly salted water to a boil. Add napa cabbage and cook uncovered until tender, about 1 minute. Drain in a colander, then immediately immerse in ice water for several minutes until cold to stop the cooking process. Once the napa cabbage is cold, drain well, squeezing out any excess water, and place in a large bowl. Stir in ground pork, 2 tablespoons of soy sauce, sherry, cornstarch, 1 1/2 teaspoon of minced ginger, and green onion.
  • Arrange half of the wonton wrappers on a large sheet of waxed paper. Brush each wrapper lightly with the egg white. Place a heaping teaspoon of the pork mixture in the center of each wrapper. Gather all 4 corners of the wonton wrapper and pinch the edges together to seal in the filling. Repeat with remaining wonton wrappers.
  • Bring large pot of water to a boil and drop the wontons into the boiling water. When the wontons rise to the surface, continue to cook them one minute longer. Remove with a slotted spoon as they finish cooking and place on a platter.
  • Dipping sauce: Mix 1/4 cup soy sauce, seasoned rice vinegar, and 2 tablespoons of shredded fresh ginger in a bowl.

  • Basic Fried Rice. One of the first dishes anyone interested in Chinese cuisine should learn is fried rice. It is the foundation for many recipes and will give you experience with the wok or, if you don't have one, quick cooking in your frying pan.
  • Oyster Sauce Chicken. As you explore Chinese recipes, you will notice that oyster sauce is a common ingredient. It brings the flavor of umami (earthy and rich) to a dish while adding a bit of sweet and salty.
  • Pepper Steak Stir-Fry. Chicken appears in a number of Chinese dishes, but steak also has its place on a Chinese menu (and can easily be substituted for chicken in many recipes).

CHINESE WONTON SOUP RECIPE - CULINARY IMMIGRATION

From culinaryimmigration.com
  • Place all the ingredients into a large bowl. Using chop sticks or a wooden spoon, mix the ingredients together, stirring in them in one direction. Stirring this way ensures that the mixture will be cohesive. Cover and refrigerate for 3 hours or longer. The longer the filling refrigerates the firmer the filling will be, making it easier to work with.
  • Dust a baking sheet with the cornstarch. Have a small bowl filled with water for your hands. Place the wonton sheets on the work surface, covered with a damp towel.
  • Hold a wrapper in one hand and place 1 tablespoon of the filling in its center. Dip a blunt butter knife into the water and dampen the edges of the wrapper. Fold the wrapper in half, creating a triangle shape. Crip the edges of the wrapper together with a forefinger and thumb. Dampen on corner of the fold bottom edge of the wrapper, and gently pull the side ends together, overlapping the wet corner slightly with its opposite dry one. Press them together to adhere creating a bowline shape. The folded wontons will somewhat resemble an Italian tortellini. Repeat until all the wrappers are filled. As you are filling place them on the prepared dusted baking sheet.
