Very Easy Chocolate Cake image

This chocolate cake is good for any occasion at any time of year. I have been baking this for two years.

1 cup evaporated milk
¾ cup unsweetened cocoa powder
2 cups all-purpose flour
2 cups white sugar
¾ teaspoon baking powder
¾ teaspoon baking soda
½ teaspoon salt
5 eggs
1 cup butter, melted
¼ cup water
2 teaspoons vanilla extract
1 (14 ounce) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
3 tablespoons unsweetened cocoa powder
½ cup butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch tube pan. In a saucepan over medium heat, combine the 1 cup of evaporated milk and the 3/4 cup of cocoa. Heat until the cocoa is dissolved. Remove from heat and set aside.
  • In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. Add the eggs, melted butter, water, vanilla and the cocoa mixture, mix until well blended. Spread evenly into the prepared pan.
  • Bake for 40 to 45 minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean.
  • To make the chocolate icing, combine the remaining condensed milk, evaporated milk, cocoa and butter in a saucepan. Cook over low heat, stirring constantly, until the mixture is thick and paste-like. Spread over cooled cake.

1 ½ pounds lean ground beef
½ cup ketchup
⅓ cup tomato juice
½ teaspoon salt
½ teaspoon ground black pepper
⅛ teaspoon crushed red pepper
2 eggs, beaten
¾ cup fresh bread crumbs
¼ cup diced onion
2 teaspoons prepared mustard
½ cup ketchup
1 teaspoon prepared mustard
4 teaspoons brown sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a 9x5-inch loaf pan with aluminum foil.
  • In a large bowl, combine ground beef, ketchup, tomato juice, salt, pepper, red pepper, eggs, bread crumbs, onion, and mustard for meatloaf until well mixed. Press meat mixture into the prepared pan.
  • In a separate bowl, combine ketchup, mustard, and brown sugar for topping until smooth. Spread brown sugar mixture over meatloaf.
  • Bake in preheated oven 35 to 45 minutes, until no longer pink. Drain off fat. Let rest 5 minutes before serving.

It's the perfect chocolate mug cake - rich, chocolatey, gooey and ready in five minutes. It's also keto and gluten-free!

2 tablespoons creamy roasted almond butter ((32 grams))
1 large egg
1/2 teaspoon stevia glycerite ((scant; equals about 2 tablespoons sugar))
Dash salt ((omit if your nut butter is salted))
1 tablespoon unsweetened cocoa powder
1/2 teaspoon baking powder (gluten-free if needed)

Steps:

  • In a 12-oz microwave-safe mug, using a small hand whisk or a fork, mix the almond butter and the egg until smooth. This will take some time - about 2 minutes until completely smooth - so try to be patient.
  • Add the sweetener and salt (if using), whisking to incorporate.
  • Whisk in the cocoa powder, then add the baking powder. Mix well, making sure there's no nut butter residue in the bottom of the mug. The batter should be smooth and uniform.
  • At this point, the batter should fill the mug about halfway to the top. The cake will rise dramatically as it cooks, so the mug you use needs to accommodate that.
  • Place the mug in the microwave. Microwave it, uncovered, for 30 seconds. Check to see if the cake is still very liquid on top - if so, microwave it for 10 more seconds. It should still be very gooey and soft on top when you remove it from the microwave (see the video below), but not completely liquid. Resist the temptation to microwave more (unless the batter is still completely liquid) - a chocolate cake is always better gooey than dry.
  • Remove the mug from the microwave and allow the cake a few seconds to settle before digging in.

Saw this recipe on a TV show,it sounded so yummy, forgot to note whose recipe it was and did not jot down exact measurements- so this is just from memory. Hope you like it!

1-1/2 lb good quality ground turkey, both light and dark mix
1 c sun-dried tomatoes packed in olive oil with garlic, divided
1-1/2 c bread crumbs
2 eggs, lightly beaten
1 Tbsp chopped fresh sage, or to taste
1 pinch salt and freshly ground pepper

Steps:

  • 1. Preheat oven to 375 degrees. Place sun-dried tomatoes and juices in food processor to puree. Put half of this into the turkey meat mix. I was able to purchase the sun-dried tomatoes already pureed.
  • 2. Mix in the breadcrumbs and eggs.Add chopped fresh Sage to this mix. Form into a meatloaf shape and place in a vegetable sprayed dish.
  • 3. Bake at 375 degrees for one hour. Remove from the oven and spread the reserved puree on top, then return it to the oven for 10 to 15 minutes.
  • 4. Another way to serve is to slice the meatloaf into one inch slices and add to a skillet to crisp on both sides for an extra layer of texture.

4 large eggs
1/2 cup unsalted butter, (melted and slightly cooled (4 oz))
2 teaspoons stevia glycerite ((equals 2/3 cup sugar))
1 teaspoon vanilla extract
1 cup blanched finely ground almond flour ((4 oz))
1/2 cup unsweetened cocoa powder ((not Dutch processed) (40g))
1/2 teaspoon Diamond Crystal kosher salt ((not fine salt))
1/2 teaspoon baking soda*
1/2 cup unsalted butter (softened (4 oz))
1/4 cup heavy cream
1/4 cup unsweetened cocoa powder ((20g))
1 teaspoon vanilla extract
1 1/2 teaspoon stevia glycerite ((equals 1/2 cup powdered sugar))

Steps:

  • Preheat oven to 325 degrees F. Grease an 8-inch square glass baking dish with butter. Be generous when greasing to ensure the cake releases easily from the pan.
  • In a large mixing bowl, whisk together the eggs, melted butter, stevia, and vanilla extract.
  • Gradually whisk in the almond flour and cocoa powder.
  • Finally, whisk in the kosher salt and the baking soda. The batter will be quite thick.
  • Pour the batter into the prepared baking dish and smooth the top out with a rubber spatula. Bake until the center is set and a toothpick inserted in it comes out clean, 18-20 minutes.
  • Cool the cake, in the pan, completely, about 1 hour, then frost if you wish.
  • To make the frosting, place all the frosting ingredients in a medium bowl and whisk by hand. Or beat with an electric handheld mixer on low speed until smooth and fluffy, 1-2 minutes.

1 lb ground beef or turkey
3/4 c chili sause
1/4 c water
3/4 c rolled oats
1 egg,lightly beaten
1 tsp chili powder
1 Tbsp worcestershire sauce
1 small sweet red bell pepper, finely chopped
1 small onion, finely chopped
1 c fresh or defrosted frozen corn kernels
1 c fresh baby spinach leaves
3 slice provolone cheese

Steps:

  • 1. Preheat the oven to 350 degrees F. In a large bowl, combine 1/2 cup of the chili sauce with the water. Add the oats, egg, chili powder, Worcestershire, and mix well. Add the decased sausage and the ground turkey or beef. Add the bell pepper, onion and corn and mix well. Divide the meat mixture in half. Lay half the meat mixture in a lightly greased 9X5x3" loaf pan.
  • 2. Create a shallow indent in the meat allowing the edges to rise along the edge of the pan. Layer the provolone and the spinach leaves on top of the meat along the center, staying about 1/2 inch away from the edges. Cover completely with the 2nd half of the meat mixture forming a domed top and sealing the edges.
  • 3. Bake uncovered for 50 minutes. Spread the remaining 1/4 cup chili sauce over the top of the loaf and bake until a meat thermometer inserted in the center of the loaf registers 165 degrees F. About 15-20 minutes longer. Allow the loaf to stand for 5-10 minutes before slicing.
