CHOCOLATE BANANA COCONUT FUDGE BARS



Chocolate Banana Coconut Fudge Bars image

Number Of Ingredients 6

1 cup almond flour (or 1/2 almond flour + 1/2 coconut flour)
½ cup shredded coconut + extra for topping
½ cup almond butter
2 ripe bananas
1/2 cup unsweetened cocoa powder
1/2 of dark chocolate or unsweetened chocolate bar

Steps:

  • Place all ingredients in a food processor and blend until evenly combined. Put mixture on a piece of parchment paper and form into a rectangle about 1/2 inch thick. Sprinkle more shredded coconut on top and press it into the fudge. Place in the fridge or at least an hour. Slice in half and then into 8-10 slices and then serve.
  • Best if stored in the freezer or refrigerator.

Steps:

  • Line a 12 count muffin tray with muffin liners and set aside.
  • In a large mixing bowl, add your mashed bananas and set aside.
  • In a microwave safe bowl or stovetop, melt your coconut oil with your nut butter. Pour into the mixing bowl and stir through the mashed banana until fully incorporated.
  • Divide mixture amongst muffin tins and refrigerate or freeze until firm.v

1 (14 ounce) can sweetened condensed milk
1 cup coconut cream
1 tablespoon butter
1 ½ teaspoons coconut extract
½ teaspoon ginger
¼ teaspoon vanilla extract
2 dashes Angostura bitters

Steps:

  • Line a baking dish with aluminum foil.
  • Mix sugar, sweetened condensed milk, coconut cream, and butter together in a pot; bring to a simmer until temperature of milk mixture reaches 225 degrees F (110 degrees C), about 30 minutes.
  • Stir coconut extract, ginger, vanilla extract, and bitters into milk mixture; continue simmering until temperature reaches 236 degrees F (113 degrees C), about 10 minutes. Remove pot from heat and let fudge stand for 2 minutes.
  • Pour fudge into the prepared baking dish; refrigerate until set, about 2 hours.

So easy, so good! Only 3 ingredients. This recipe was a happy mistake. I misread a recipe and discovered this fantastic treat! It has a different texture than a regular cake. Sort of a cross between cake and brownies, it has a lovely chewiness. Lovely hot out of the oven alone or with ice cream, or when cool topped with whipped cream.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan with cooking spray.
