2 ½ cups all-purpose flour
½ cup unsweetened cocoa powder
2 ½ teaspoons baking powder
1 ½ teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
¾ cup butter
2 cups white sugar
3 eggs, beaten
2 teaspoons vanilla extract
½ cup milk
3 cups grated zucchini
1 tablespoon orange zest
1 cup chopped walnuts
1 ¼ cups confectioners' sugar
¼ cup orange juice
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a Bundt pan.
  • In a medium bowl, sift flour, cocoa, baking powder, baking soda, salt and cinnamon. Set aside.
  • In a large bowl, cream butter and sugar until fluffy. Add eggs, 2 teaspoons vanilla and milk to the butter mixture. Stir in dry ingredients and mix until well blended. Fold in zucchini, orange zest, and nuts.
  • Pour into a greased and floured Bundt cake pan. Bake in preheated oven until a toothpick inserted into center of cake comes out clean, 50 to 60 minutes. Allow to cool in pan for 15 minutes before inverting onto a wire rack to cool completely. Before serving, drizzle with glaze.
  • To make the glaze: In a small bowl mix together sugar, orange juice and 1 teaspoon vanilla. Invert cake onto serving dish, then pour glaze over.

3 cups shredded zucchini

Steps:

  • Coat a 10-in. fluted tube pan with cooking spray and sprinkle with flour., In a large bowl, cream butter and sugar until light and fluffy. 3 tbsp oil
9 tbsp baking cocoa

3 cups peeled, shredded zucchini
2 3/4 cup powdered sugar
6 tbsp butter
6 tbsp baking cocoa

Steps:

  • In the bowl of a stand mixer, beat butter and sugar until creamy.
  • Add in eggs, vanilla, and orange zest beating well after each addition.
  • Add in milk, oil, and baking cocoa.

  • Add flour to cocoa mixture gradually, beating well after each addition.

1/2 cup golden raisins
1 cup boiling water
3/4 cup sugar
1/2 cup vegetable oil
2 large eggs
1/2 cup All-Bran cereal
1-1/2 teaspoons grated orange zest
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 cup thinly shredded zucchini
FROSTING:
3 ounces cream cheese, softened
1 tablespoon butter, softened
1 teaspoon grated orange zest

  • Place raisins and water in a bowl; let stand for 5 minutes. Drain; set raisins aside. In a bowl, combine sugar, oil and eggs; mix well. Stir in cereal, orange zest and vanilla. Combine dry ingredients; add to sugar mixture. mix well. stir in zucchini and raisins. Pour into a greased 11x7-in. baking pan. Bake at 325° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool. , In a bowl, beat cream cheese, butter and orange zest until light and fluffy.
