CHOCOLATE DESSERT SALAMI



Chocolate Dessert Salami image

Number Of Ingredients 8

1/2 cup slivered almonds (2 1/2 ounces)
1/2 cup chopped walnuts (2 1/2 ounces)
Two 5 inch long plain biscotti, coarsely crushed
6 tablespoons (3/4 stick) unsalted butter, cut into 1/2-inch pieces, at room temperature
One 12-ounce bag semisweet chocolate chips, such as Ghirardelli
1/4 cup brewed coffee
1 teaspoon grated orange zest (about 1/2 medium orange)
1/2 cup confectioners' sugar

Steps:

  • Position a rack in the center of the oven and preheat the oven to 350 degrees F.
  • Spread the almonds, walnuts and crushed biscotti in a single layer on a baking sheet. Bake until the nuts are lightly toasted, 6 to 8 minutes. Cool completely.
  • Put the butter and chocolate in a heatproof medium bowl and place the bowl over a pan of barely simmering water. Stir until the chocolate has melted and the mixture is smooth, about 6 minutes. Stir in the coffee until smooth. Add the almonds, walnuts, biscotti pieces and orange zest, and stir until combined. Cover the bowl and refrigerate until firm but moldable, 1 1/2 to 2 hours.
  • Divide the chocolate mixture in half. Place half of the mixture in the center of an 18-inch-long piece of plastic wrap. Using a spatula, form the mixture into a log, about 7 inches long and 2 inches in diameter. Roll up the log in the plastic and twist the ends to seal. Roll back and forth on a work surface a few times to make the log evenly round. Repeat with the remaining chocolate mixture. Refrigerate the logs until firm, about 1 hour.
  • Spread the confectioners' sugar on a dinner plate. Remove the plastic wrap from the logs, then roll them in the sugar until coated. Using a pastry brush, brush away the excess sugar. Let the logs sit at room temperature for 15 minutes. Using a sharp serrated knife, cut the logs into 1/2-inch-thick slices and serve.
  • Cook's Note: The dessert can be frozen for up to 1 month. Thaw at room temperature for 25 minutes before slicing.

This recipe is handed down to me by my Italian mother. I grew up with this dessert. It's quick and easy. The chestnut puree may be hard to find. It's actually called 'Torta di Castagne' or Chestnut Cake. It just looks like a salami log. Great for a holiday meal. Great topped with whip cream.

½ cup white sugar
½ cup unsweetened cocoa powder (such as Hershey's®)
½ cup melted butter
1 (1 pound) package sweetened chestnut puree
½ cup chopped almonds
½ cup chopped walnuts

Steps:

  • Stir together the sugar, cocoa powder, butter, and chestnut puree in a bowl. Fold in the almonds and walnuts until evenly blended. Pat the mixture into a log and wrap tightly with wax paper. Refrigerate overnight before slicing to serve.

Coarse salt and ground pepper
3 tablespoons olive oil
3 mixed bell peppers (ribs and seeds removed), thinly sliced lengthwise
1 pound frozen large shrimp (peeled and deveined), thawed
2 ounces thinly sliced Genoa salami, cut into strips (1/2 cup)
1/4 cup pepperocini, stems removed, thinly sliced crosswise
8 ounces capellini pasta (angel-hair)

Steps:

  • Bring a large pot of salted water to a boil. Meanwhile, in a large nonstick skillet, heat 1 tablespoon oil over medium-high. Add bell peppers, and cook, tossing, until crisp-tender, 3 to 5 minutes. Add shrimp, and cook, tossing, until opaque throughout, 2 to 3 minutes. Stir in salami and pepperoncini; season with salt and pepper.
  • Cook pasta until al dente; drain, and return to pot. Add remaining 2 tablespoons oil to pasta in pot; season with salt and pepper, and toss to combine. Serve pasta topped with shrimp mixture and pan juices.

  • In a double boiler set over simmering water, melt the chocolate and cocoa powder along with the butter. Remove from the heat, stir, and transfer the mix to a large heatproof bowl. Add the sugar and vanilla and combine with a spatula in a circular motion. Slowly add the egg yolks, one by one, mixing very well after each addition. Fold in the broken cookie chunks. If adding pecans, fold them all in as well. You will have a moist and chunky, rough looking mix.
  • Cut 2 pieces of waxed or parchment paper of about 15" length. Spoon half of the mixture onto each piece of paper. Shape them into logs with your hands and roll them in the paper to give them a salami shape of about 2" thickness. Having the paper cover makes it easy to give them a quick roll to give them a round shape. To finish, twist the ends of the paper in opposite directions.
  • Wrap each one in a layer of plastic wrap. Place them in the freezer for about 2 or 3 hours or until frozen.
  • If you wish, roll each log in confectioners’ sugar before slicing to make the slices resemble salami. Slice them as thin or thick as you like, while frozen, and serve.

  • Place chocolate chips, butter, and salt in a large bowl set over a double boiler over medium. Cook, stirring constantly, until melted and smooth. Remove from heat, and stir in amaretto until smooth. Fold in toasted nuts, biscotti, and cherries until well combined. Cover and chill 1 hour.
  • Form chocolate mixture into a dense, smooth, 12-inch log on a piece of plastic wrap. Once desired shape is formed, transfer log to a clean sheet of plastic wrap, and wrap tightly. Chill 1 hour or until firm.
  • Unwrap and lightly sprinkle powdered sugar evenly over chocolate log. Let stand at room temperature 30 minutes before serving.
