A classic light, spiced Christmas pudding - so simple you don't even need any kitchen scales

1 cup raisins
1 cup sultanas
1 cup self-raising flour
1 cup finely grated butter (about 115g/4oz)
1 cup fresh brown breadcrumbs (from around 4 thick slices of bread)
1 cup light muscovado sugar
1 cup mixed nuts, chopped plus extra to decorate
1 tsp ground cinnamon
1 tsp ground mixed spice
1 cup milk
1 large egg
butter, for greasing
85g butter
100g light muscovado sugar
200ml double cream
1 tsp vanilla extract

Steps:

  • For the pudding, empty the first six cups and the nuts, if using, into a mixing bowl with the spices, then stir in the milk and egg. Once well combined, tip into a buttered 1.5 litre pudding bowl.
  • Cover with a double layer of buttered foil, making a pleat in the centre to allow the pudding to rise. Tie the foil securely with string, then place in a steamer or large pan containing enough gently simmering water to come halfway up the sides of the bowl. Steam, covered with a lid, for 2½ hours. Check the water level during cooking, topping up if necessary. If you are preparing this pudding ahead, remove the foil, let it cool slightly, then wrap in cling film and then fresh foil. If you are serving it immediately, unwrap and invert onto a deep plate.
  • For the sauce, put everything in a pan and bring slowly to the boil, stirring. Allow to bubble away for 2-3 minutes, still stirring, until the sugar has dissolved and the sauce is pale caramel in colour and slightly thickened. Remove from the heat. Pour the sauce over the pudding and decorate with the whole mixed nuts.

1 ounce self-rising flour, sifted
2 ounces white breadcrumbs
1/4 teaspoon ground allspice
1/4 teaspoon ground clove
1/8 teaspoon ground nutmeg
Pinch ground cinnamon
5 ounces currants
2 ounces sultanas
2 ounces raisins
1/2 ounce mixed candied peel
1/2 ounce blanched almonds, chopped
1/2 small apple, peeled, cored, and finely chopped
Grated zest of 1/2 small orange
Grated zest of 1/2 small lemon
1 tablespoon rum
1 1/4 ounce barley wine
1 1/4 ounce stout, more if needed
2 eggs
Your favorite rum sauce, optional
Brandy, for flambeing

Steps:

  • The day before you want to steam the pudding: In a large bowl, thoroughly mix the suet, brown sugar, sifted flour, breadcrumbs, allspice, clove, nutmeg, and cinnamon. Gradually mix in the currants, sultanas, raisins, candied peel, and almonds, followed by the apple and citrus zests. In a small bowl, whisk together the rum, barley wine, and stout, and then beat in the eggs. Pour this mixture over the dried fruit and nut mixture. Mix thoroughly. It should be somewhat loose; if it needs a little more liquid, add some stout. Cover the bowl and refrigerate overnight.
  • The following day: Butter a 1-pint pudding mold and pack the pudding mixture into it. Cover with a double piece of parchment and a sheet of foil and tie securely with a string across the top to make a handle. Place the pudding mold in a covered steamer set over a saucepan of simmering water, and steam for 8 hours. Check the water level, adding boiling water as needed. When the pudding is finished, let it cool and then remove the papers and foil. Replace with fresh paper and make a new string for easier maneuvering. Set in a cool place away from light (under the bed works well).
  • To reheat, set a saucepan with boiling water over medium heat and put a steamer on top. Reduce the heat to a gentle simmer, set the pudding in the steamer, cover, and let steam for 2 1/4 hours. Top up the water a bit if necessary.
  • To serve, remove the pudding from the steamer and take off the wrapping. Slide a palette knife around the pudding, and then turn it out onto a warm plate. Garnish with a sprig of holly. To flambe the pudding, warm a ladleful of brandy over direct heat, and when it is hot, carefully light the brandy. Place the flaming ladle over the pudding, but do not pour until at the table. When you do slowly pour it over the pudding, sides and all, watch it flame! Serve with rum sauce if desired.

Make and cook the pudding 6-8 weeks before Christmas. Also as it does take a fair time to steam, make things easier for yourself by preparing the pudding up to the end of *** stage the day before. Keep the pudding in a cool place overnight, and steam as directed the next day. Cover the cold pudding with fresh greaseproof paper and foil and store in a cool place until Christmas. It is quite useful to use a see-through bowl for the pudding as you can then check the colour as it is cooking, the longer and slower the simmering the darker and richer the pudding will be.

75 g butter, softened, plus extra
butter, for greasing
450 g dried fruit (use a mixture of sultanas, raisins and snipped apricots)
1 small cooking apple, peeled, cored and roughly chopped (about 175g/6oz)
1 orange, juice and rind of, finely grated
50 ml brandy or 50 ml rum, plus extra
brandy or rum, for feeding and flaming
100 g light muscovado sugar
2 eggs
100 g self-raising flour
1 teaspoon ground mixed spice
40 g fresh white breadcrumbs
40 g whole shelled almonds, roughly chopped

Steps:

  • Lightly butter a 1.4-litre (21/2-pint) pudding basin.
  • Cut a small square of foil and press into the base of the basin.
  • Measure the sultanas, raisins, apricots and apple into a bowl with the orange juice.
  • Add the measured brandy or rum and leave to marinate for about one hour.
  • Put the measured butter, sugar and grated orange rind into a large bowl and cream together with a wooden spoon or a hand-held electric whisk until light and fluffy, gradually beat in the eggs, adding a little flour if the mixture starts to curdle.
  • Sift together the flour and mixed spice, then fold into the creamed mixture with the breadcrumbs and the nuts.
  • Add the dried fruits, apple and liquid and stir well.
  • Spoon into the prepared pudding basin, pressing the mixture down, and level the top with the back of a spoon.
  • Cover the pudding with a layer of greaseproof paper and foil, both pleated across the middle to allow for expansion.
  • Tie securely with string and trim off excess paper and foil with scissors***.
  • TO STEAM, put the pudding in the top of a steamer filled with simmering water, cover with a lid and steam for about eight hours, topping up the water as necessary.
  • TO BOIL, put a metal jam-jar lid into the base of a large pan to act as a trivet. Put the pudding on to this and pour in enough boiling water to come one-third of the way up the bowl. Cover with a lid, bring the water back to the boil, then simmer for about seven hours, until the pudding is a glorious deep brown colour, topping up the water as necessary.
  • Remove the pudding from the steamer or pan and cool completely.
  • Make holes in the pudding with a fine skewer and pour in a little more brandy or rum to feed.
  • Discard the paper and foil and replace with fresh. Store in a cool, dry place.
  • On Christmas Day, steam or boil the pudding for about an hour to reheat. Turn the pudding on to a serving plate.
  • To flame, warm 3-4 tablespoons brandy or rum in a small pan, pour it over the hot pudding and set light to it.
  • Serve with Rum Sauce or Brandy Butter.

It has a rich gingerbread flavor and is a very dense dessert. I served it with roast beef and Uncle Bill's Yorkshire pudding and had a lovely Midwestern version of a traditional English Christmas meal.

2 cups plain dried breadcrumbs (canister type ok)
1 cup cherry flavored craisins (dried sweetened cranberries)
1 cup orange flavored craisins
1/2 cup unsulphured molasses
1/2 cup butter, melted
1 teaspoon baking soda
1 tablespoon boiling water
1 1/2 cups apple cider
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon mace
1 teaspoon nutmeg
1 teaspoon ground cloves
1/2 teaspoon kosher salt

Steps:

  • Heavily butter a pudding mold.
  • Dust lightly with flour.
  • In large bowl, mix together breadcrumbs, Craisins, molasses, and melted butter.
  • Dissolve baking soda in boiling water and add to mixture.
  • Add apple cider and mix well.
  • Sift together dry ingredients and add to mixture.
  • Stir to combine.
  • Place pudding mixture into mold.
  • Top mold with heavily buttered aluminum foil and cover tightly.
  • Bear in mind that pudding will expand some as it steams.
  • Place mold on rack in a steamer or large pot.
  • Add boiling water until the mold is 3/4 of the way submerged.
  • Cover and steam for 2 1/2 to 3 1/2 hours.
  • Pudding will be firm when done.
  • Serve warm with a vanilla sauce or hard sauce.

This is a fairly basic British Christmas plum pudding recipe but unlike other recipes it can actually have plums in it. Unfortunately the ingredient list is so long, it isn't easy to make it in less than industrial quantities! You can substitute a mixture of fresh and dried apricots, peaches, etc. for the plums and milk for the ale if you wish. Serve with brandy or rum butter.

2 ½ cups fresh bread crumbs
4 ounces shredded suet
3 eggs, beaten
1 small carrot, grated
1 apple - peeled, cored and shredded
½ cup dark brown sugar

2 ounces preserved stem ginger in syrup, chopped
⅛ cup ground almonds
½ cup chopped walnuts
⅜ cup halved candied cherries
⅓ cup raisins
⅜ cup dried currants
⅜ cup golden raisins
4 ounces candied mixed fruit peel, chopped
4 plums, pitted and chopped
1 lemon, juiced and zested
1 ½ teaspoons mixed spice
¾ teaspoon baking powder
½ cup ale

Steps:

  • In a large bowl, combine flour, bread crumbs, suet, eggs, carrot, apple, brown sugar, chopped blanched almonds, stem ginger, ground almonds, cherries, raisins, currants, golden raisins, mixed peel, plums, lemon juice and zest, mixed spice, baking powder and ale. Let each family member take a turn stirring and make a wish. If you have used more dry fruit than fresh, add a little extra ale to make the mixture less stiff.
  • Grease 2 large or 4 small pudding basins. Fill with pudding mixture about 7/8 full. Cover tightly with greased waxed paper, then foil; secure with string. Stand pudding on a trivet in a large pot of boiling water that reaches halfway up the sides of the pudding basin. Steam puddings over medium-low heat in boiling water 10 hours for large puddings, 5 hours for small puddings, topping off water regularly until quite firm and set.
  • If not serving immediately, let cool completely, then replace covers with fresh waxed paper and foil and store in a cool, dry place, basting from time to time with rum or brandy, for up to 3 months. To serve, reheat by steaming 2 to 3 hours.

4 tablespoons (1/2 stick) butter
100 grams (1 cup, loosely packed) dark brown sugar
150 grams (1 cup) golden raisins
75 grams (1/2 cup) raisins
50 grams (1/3 cup) currants (or use more raisins)
50 grams (1/3 cup) chopped dates
25 grams (3 tablespoons) chopped candied peel: lemon, orange and citron
10 glacé (candied) cherries, quartered
50 grams (scant 1/2 cup) flour
5 grams (1 cup) soft breadcrumbs, from about 2 slices white bread
1/2 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon allspice
2 tablespoons molasses
2 eggs
1/4 cup apple juice, apple cider or applesauce
2 tablespoons orange juice
Zest and juice of 1 lemon
Crème fraîche or heavy cream, for serving

Steps:

  • Put 3 tablespoons of the butter into the bowl of a stand mixer. Add the remaining ingredients, except crème fraîche, and mix very well into a loose, chunky batter. Let it rest for a few hours, or refrigerate overnight.
  • Thickly grease a ceramic bowl with the remaining butter. Line the bottom of the bowl with parchment paper to prevent sticking. Spoon in the batter.
  • Cut 2 circles of parchment to fit the top and rest them on the batter. Cook the pudding in a microwave oven, preferably at medium power, for 8 minutes. Insert a skewer or tester into the center. If batter is still wet, continue cooking, 1 minute at a time, until just done.
  • Turn onto a plate. Serve slices with crème fraîche or heavy cream.
