CINNAMON CHICKEN
Chicken breasts baked with cinnamon and other seasonings. This is a recipe that I created while working at a flight kitchen. We had cinnamon in the spice collection that nobody used for anything, so I decided to try it on chicken and the flight crews and my family loved it!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place chicken in a lightly greased 9x13 inch baking dish. Sprinkle evenly with ground cinnamon, seasoning, garlic powder, salt and pepper. (Note: You can be liberal with the seasoning, garlic powder, salt and pepper; however, the cinnamon should only be a dusting and not clumped.)
- Bake at 350 degrees F (175 degrees C) for about 30 minutes or until chicken is cooked through and juices run clear.

Steps:
- Sprinkle pepper on both sides of chicken breasts. Press pepper onto chicken with back of spoon.
- Sprinkle 1/2 tsp of cinnamon on both sides of each piece of chicken, press with spoon.
- Sprinkle onion powder on top side only, press with spoon.
- Place chicken in 8x8 pan.
- Combine prepared boullion, water (or wine), and remaining cinnamon.
- Pour into botton of pan, NOT over chicken.
- Loosely cover with foil and bake 1 hour at 350 degrees.
- check liquid level halfway through cooking, may require more water (wine)-> additional 1/4 cup.
CHICKEN AND SHRIMP PAELLA
This chicken and shrimp paella is the perfect comfort food! Rich in flavor this paella is so delicious that you won't be able to stop yourself from coming back for seconds!

Steps:
- Season chicken thighs with salt, pepper, and smoked paprika. Add the olive oil to a large 10-12 inch skillet pan. Heat oil over medium-high heat. Fry the chicken on both sides and cook until golden for about 10 minutes. Remove chicken from pan and set aside.
- In the same pan, add the chopped onion and red pepper, and sauté until translucent for about 4 minutes. Add an additional tablespoon of olive oil if needed. Add garlic and cook for 1 minute.
- Add mushrooms, diced tomatoes, salt, smoked paprika, and sauté for an additional 2 minutes.
- Stir in the hot chicken broth, saffron threads, and soy sauce, and heat to bring to a boil.
- Add the rice, and place the browned chicken on top of the rice. Do not move the chicken or stir the rice. It all cooks in one place. Return to a boil for 15 minutes.
- Add shrimp and peas on top of the rice, and heat for an additional 5 minutes.
- Cover skillet with a lid and let rest for 5 minutes.
- Serve and garnish with lemon wedges, green onion, and chopped parsley.

CINNAMON-RUBBED CHICKEN
I got this idea from a long-ago TV show (Little House on the Prairie) and used what I had in my kitchen to make the rub. My husband likes it a lot.

- Preheat oven to 350 degrees F (175 degrees C). Line a 13x9-inch baking dish with aluminum foil.
- Stir olive oil, cinnamon, salt, lemon pepper, garlic powder, and thyme together in a small bowl; rub onto chicken to coat. Arrange coated chicken pieces into a baking dish with the skin side down.
- Bake in preheated oven for 35 minutes, turn, and continue cooking until the chicken is no longer pink at the bone and the juices run clear, 20 to 25 minutes more. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Remove from oven, cover loosely with aluminum foil, and rest chicken for about 15 minutes before serving.

CINNAMON CHICKEN RECIPE - (4/5)

- In a small bowl, combine the salt, pepper, garlic and cinnamon. Rub the chicken pieces with this mixture and allow it to sit for about 30 minutes at room temperature. Heat oven to 400°F. Place the chicken pieces in a large roasting pan. Sprinkle the meat all over with the paprika and add the onion slices around the chicken. Cook for 35 minutes and then reduce the heat to 350°F . Stir in a cup of water or chicken stock to the roasting pan and continue cooking for another 50 minutes. Serve and use the juices from the pan as a sauce.
CINNAMON CHICKEN NUGGETS
An updated version of an early American recipe that has been in my family since the 1800's. The original version of this dish is mentioned on at least one episode of 'Little House on the Prairie.'

- Heat oil in skillet or fryer to 350 degrees F (175 degrees C). Arrange paper towels on a baking sheet.
- In a medium bowl, beat together eggs, milk , and honey; set aside. Combine flour, sugar, and cinnamon in a large resealable plastic bag; shake until blended. Dip chicken in egg mixture, and then add to flour mixture. Seal the bag, and shake to coat chicken with flour mixture.
- Place 10 to 12 coated chicken nuggets into hot oil. Cook till done, about 7 to 10 minutes (nuggets will be a dark bronze color). Remove nuggets from oil, and drain well on paper towels. Repeat till all nuggets are cooked.

When my friend Dee gave me this recipe I was very skeptical. Who ever heard of cheesecake made with crescent dough? I made it one day when I had 3 back-up desserts and it was one of the first to go. So easy to make and a popular demand by my family, I make it all the time. Hey!! Even my no-impress mother-in-law asked for the recipe!!! Enjoy!

- Preheat the oven to 350 degrees F (175 degrees C).
- Flatten one tube of crescent roll dough, and press into the bottom of a 9x13 inch pan. In a medium bowl, mix together the cream cheese with 1 cup sugar and vanilla until smooth. Spread the cream cheese mixture over the dough in the pan. Unroll the remaining crescent roll dough, and place over the top of the cream cheese layer. Spread melted butter over the top, and sprinkle the top with a mixture of 1/2 cup sugar and cinnamon.
- Bake for 30 minutes in the preheated oven, or until top is lightly toasted. Cool, and refrigerate before serving.
