CONGO BARS
Steps:
- Preheat oven to 350F/180C.
- Spray a 9 x 13-inch pan with non-stick spray.
- In a medium bowl, whisk together the flour, baking powder and salt; set aside.
- Using a stand mixer with the paddle attachment,beat the butter and sugar together. Add the eggs one at a time and beat well after each.
- Add the vanilla then slowly add the dry ingredients until mixed in but don't overmix.
- Fold in the chocolate chips by hand then spread the batter in the prepared pan evenly.
- Bake for 25 minutes. Cool for at least 15 minutes before cutting bars into the size of your choice

Steps:
- Preheat the oven to 350°F. Line a 9×13 pan with parchment paper and coat with nonstick spray. Set aside.
- In the bowl of your stand mixer fitted with the paddle attachment mix the butter and the light and dark brown sugars together for 2 minutes on medium speed. Add in the eggs, vanilla, salt and baking powder and mix for an additional minute on medium, scraping the sides of the bowl as necessary.
- Turn the mixer to low and add in the flour, mixing until just combined.
- Finally add in both kinds of chocolate and stir to incorporate.
- Spread the dough into the prepared pan and bake for 30 minutes or until the edges are set and lightly golden and the center appears slightly under-baked.
- Remove the pan from the oven and allow the bars to cool completely before cutting.
- Alternately you can chill the bars before cutting.

- In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in the eggs, bananas and vanilla. Combine the flour, baking soda and salt; stir into creamed mixture just until blended., Transfer to a greased 15x10x1-in. baking pan. - Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a large bowl, cream together the shortening and sugar until smooth. Stir in the milk and 1 teaspoon vanilla. Combine the flour, baking soda and 1/2 teaspoon salt; stir into the sugar mixture. Mix in 1 banana, 1 teaspoon lemon juice and walnuts. Spread evenly into the prepared pan.
- Bake for 25 to 30 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Let bars cool in the pan on a wire rack.
- To make the frosting: In a medium bowl, mix together the melted butter, 1 teaspoon vanilla, confectioners' sugar, 1/2 banana, 1/2 teaspoon of salt and 1/4 teaspoon lemon juice using an electric mixer. Beat until smooth. Spread over cooled bars and then cut into squares.

- Preheat oven to 350 degrees.
- Sift flour, baking powder and salt in a large bowl and set aside.
- In another bowl combine butter and brown sugar using a mixer until blended.
- Add eggs, one at a time to sugar mixture, mixing on low in between each addition.
- Add vanilla and mix well.
- Add in the flour mixture and mix until combined, then fold in chips and pecans.
- Lightly spray a 9 x 13 inch pan with non-stick cooking spray and spread batter evenly into dish.
- Bake for 30 minutes or until top is golden brown.
- Do not over bake.
EASY MOIST BANANA BARS
I found another version of this recipe online and changed it to match the ingredients I had on hand and what sounded good to me. This made a moist, tasty cookie bar that's a nice alternative to chocolate brownies. It is also another good use of those badly overripe bananas. I liked this because it had a mild banana flavor which didn't overwhelm the bars. These bars need no frosting...they are the perfect sweetness without it.
