FRUITY COOKIE PRESS COOKIES
Steps:
- Preheat oven to 400 degrees F (205 degrees C).
- Sift flour with baking powder. Cream margarine; gradually add sugar and gelatin and cream well. Add egg and vanilla; beat well. Gradually add flour mixture; mix until smooth.
- Force dough through cookie press onto ungreased cookie sheet. Sprinkle with gelatin. Bake for about 12-13 minutes or until golden brown at the edges.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium mixing bowl, cream together butter, confectioners' sugar, and vanilla until smooth with electric mixer. Stir in flour and cornstarch. Pop dough into your cookie press, and away you go! Press cookies out onto ungreased cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven, or until the peaks are golden.

Rich, buttery, and made with lots of vanilla, these cookies are simple to make. Use a cookie press-a hollow tube fitted with a decorative nozzle at one end and a plunger at the other-to press the cookies directly onto the baking sheet.

- Cream together the butter and sugar until light and fluffy. Mix in the egg yolks, 2 tablespoons water, flour, salt and vanilla. Chill the dough.

- Fill the cookie press and shape the cookies on an ungreased baking sheet. Brush the top of each cookie with the egg whites mixed with 2 tablespoons of the water. Decorate as desired.

RIDICULOUSLY EASY PEANUT BUTTER COOKIES
Make a batch of these flourless peanut butter cookies in less than 15 minutes! They are soft and absolutely delicious plain, with a dollop of jam or a drizzle of chocolate on top. We prefer these with a blend of granulated and brown sugar, but you can use just one type of sugar. (We use 1/2 cup brown sugar and 1/4 cup white) **If making the jam-filled cookies, it is best to add the jam the day of serving. If left overnight, the cookies will soften too much from the extra moisture. Store plain cookies and chocolate drizzled cookies in an airtight container up to 2 days or freeze wrapped individually up to 3 months.

- Heat the oven to 350 degrees Fahrenheit. Line two baking sheets with parchment paper or use silicone baking mats.
- In a medium bowl, mix the peanut butter, egg, sugar, baking soda, a pinch of salt, vanilla, molasses (optional), and the cinnamon (optional) together until blended and scoopable.
- Scoop or roll into 1-inch balls and place two inches apart on the prepared baking sheets. Press the mounds down with the back of a spoon or the tines of a fork to flatten the cookie out a bit.

- Preheat oven to 400°. Beat first 4 ingredients at medium speed with an electric mixer 1 minute. Add egg, and beat 30 seconds.
- Sift together flour and salt. Add flour mixture to butter mixture, and beat at low speed 30 seconds. Scrape sides of bowl, and beat 15 more seconds. Divide dough into 3 equal portions.
- Following manufacturer's instructions, use a cookie press fitted with desired disk to shape dough into cookies, spacing cookies 1 1/2 inches apart on 2 ungreased baking sheets.
- Bake at 400° for 7 minutes, placing 1 baking sheet on middle oven rack and 1 sheet on lower oven rack. Rotate baking sheets front to back and top rack to bottom rack. Bake 1 to 2 more minutes or until golden brown around edges. Transfer cookies to a wire rack, and cool completely (about 10 minutes). Repeat with remaining dough.
