CRANBERRY HONEY MUSTARD

Spread those leftover turkey sandwiches with some homemade cranberry honey mustard for a delicious and savory twist on the standard.

Number Of Ingredients 8

2 Tablespoons Yellow Mustard Seeds
½ Cup Apple Cider Vinegar
1 ½ Cups Cranberries
½ Cup Apple Juice
¼ Cup Honey
3 Tablespoons Dry Mustard
1 teaspoon Ground Coriander
½ teaspoon Ground Allspice

Steps:

  • Bring the apple cider vinegar to a boil. Remove from heat add the mustard seeds and cover. Let sit about 2 hours. The seeds will soften and absorb some the liquid.
  • Put the seeds and vinegar in a blender. Pulse until the seeds are chopped, leave it a bit grainy. Add the cranberries and apple juice. Pulse again until the cranberries are chopped finely.
  • Put the cranberry mixture into a saucepan and bring to a boil over medium heat. Stir frequently. Whisk in the dry mustard, coriander, and allspice. Add the honey and cook until mixture is as thick as desired.
  • Put into jars leaving 1/4 headspace. Process in a boiling water bath canner for 10 minutes (adjusting for elevation).

1 fully cooked bone-in ham (6 to 8 pounds)
Whole cloves
3 cans (14 ounces each) jellied or whole-berry cranberry sauce
1-1/2 cups packed brown sugar
1-1/2 cups dry red wine or chicken broth
3 tablespoons Dijon mustard

Steps:

  • Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. If desired, score the surface of the ham, making diamond shapes 1/2 in. deep. Insert cloves into the surface. Loosely cover ham with foil; bake 1-1/2 hours. , In a large saucepan, combine cranberry sauce, brown sugar and wine. Bring to a boil. Reduce heat; simmer, uncovered, 10 minutes or until slightly thickened. Remove from the heat; whisk in mustard., Pour 2 cups cranberry mixture over ham. Bake 20-30 minutes longer or until a thermometer reads 140°. Let stand 10 minutes before slicing. Serve with remaining sauce.

TANGY CRANBERRY MUSTARD

This is a copycat recipe for Hickory Farms Cranberry Mustard, which is difficult to find outside of the Christmas season. It is great on Summer Sausage, or spread on a carved turkey sandwich, or used as a glaze on a baked ham. Use it as a barbecue sauce for chicken, or a topping for broiled salmon. It even makes a great dip for chicken fingers! You can also can it in small jars to give as a gift. It's simple and delicious! I listed the brand names of the ingredients I used, but you can use your favorites.

1 (14 ounce) can jellied cranberry sauce (Ocean Spray)
6 tablespoons course mustard (Grey Poupon Harvest Stone Ground)
3 tablespoons brown sugar

Steps:

  • Add all three ingredients to a small saucepan. Stir constantly and simmer until sugar is dissolved, about 3-4 minutes. Be careful to keep stirring to avoid the sugar burning or caramelizing.
  • Pour into airtight container (jar or tupperware) and keep refrigerated up to one month. If canning, you may can pints or half pints at the same temp/time as any jelly or jam recipe.

PORK CHOPS WITH CRANBERRY MUSTARD SAUCE

4 (6-ounce) bone-in pork loin chops
4 teaspoons Dijon mustard
1/4 cup Cranberry Mustard Sauce, recipe follows
Nonstick cooking spray
Salt and freshly ground black pepper
1 (12-ounce) package fresh or frozen cranberries, about 4 cups
1 cup water
1 cup sugar
1/2 cup chopped pecans
4 teaspoons Dijon mustard

Steps:

  • Arrange the pork chops in a single layer in a shallow dish. In a small bowl, add the mustard and cranberry sauce and stir to combine. Brush the mustard mixture evenly over both sides of the chops. Cover and refrigerate for 1 to 12 hours, turning occasionally.
  • Coat a large frying pan over medium heat with nonstick cooking spray. When the pan is hot add the chops. Partially cover and cook for 10 minutes. Uncover, turn the chops over and cook uncovered on the second side until the meat is cooked through but still juicy, 5 to 10 minutes longer. Season with salt and pepper, to taste, and transfer to a serving platter.

  • Wash and pick over the cranberries. In a medium saucepan over medium heat, add the water and the sugar. Bring to a boil, stirring until the sugar dissolves. Add the cranberries and return to a boil. Reduce the heat and simmer until the cranberries burst, about 10 minutes. Stir in the pecans and the mustard and transfer to a small bowl. Let cool completely at room temperature, then cover and refrigerate until ready to use. The sauce will thicken as it cools.
