Super easy mashed potatoes! Potatoes are diced into chunks and added to a slow cooker along with garlic and water then cooked. Then you'll mash, and mix in milk and sour cream. Perfect for a lazy weeknight side dish yet delicious enough for a holiday meal.

4 lbs red potatoes, (cleaned and rinsed (peeled or unpeeled), cut into 1 1/2-inch pieces)
1/2 cup water
1 tsp salt, (or to taste)
1/2 tsp pepper, (or to taste)
1 1/2 Tbsp minced garlic ((4 cloves))
1/4 cup butter, (melted)
2/3 cup sour cream
1/2 cup cream, (warmed in the microwave)
1/2 cup milk, (warmed in the microwave, or as desired)
Minced chives and butter, (for serving (optional))

Steps:

  • Spray a 6 - 7 quart slow cooker with non-stick spray. Place potatoes in slow cooker then pour water evenly over top**.
  • Toss with salt and pepper then add garlic and pour butter evenly over potatoes and garlic. Cover and cook on high heat 4 - 4 1/2 hours until potatoes are tender when pierced with a fork (don't drain!).
  • Mash potatoes with a potato masher then add sour cream, heavy cream.
  • Whip with an electric hand mixer until desired texture is reached, while adding in milk to reach desired consistency.
  • Serve warm with more butter if desired and minced chives.

3 pounds Yukon gold potatoes, peeled and diced into 1/2-inch chunks
1 head garlic, halved
2 cups low-sodium chicken broth
1/2 stick (1/4 cup) unsalted butter
3/4 cup half-and-half
4 ounces cream cheese, softened
Kosher salt and cracked black pepper
Chopped fresh chives, for garnish

Steps:

  • Combine the potatoes and garlic in the slow cooker. Pour the chicken broth over the potatoes, cover and cook on high 3 to 4 hours, or on low 6 to 8 hours.
  • Remove the potatoes and drain, reserving the cooking liquid and removing the garlic. Return the potatoes to the slow cooker.
  • Melt the butter in a small saucepan with the half-and-half over low heat. Remove from the heat and add to the potatoes along with the cream cheese and liberally season with salt and pepper. Use a potato masher to mash, adding the reserved cooking liquid to the potatoes if necessary for the desired consistency.
  • Keep warm before transferring to a serving platter. Garnish with chopped chives.

The easiest way to make roasted garlic mashed potatoes, without turning on the oven! Perfectly fluffy and creamy!

1 head of garlic
1 teaspoon olive oil
salt and pepper
5 pounds Russet potatoes, peeled and chopped
1 cup chicken broth
1 cup whole milk
2 ounces softened cream cheese
1/4 cup butter
additional milk as needed
1 teaspoon salt
dried parsley (optional)

Steps:

  • Set your crockpot on high heat.
  • Slice off the top (the pointy end) of the head of garlic. Place it on a piece of foil and drizzle with olive oil. Sprinkle salt and pepper on top. Do not peel the garlic or separate the cloves. Wrap the garlic up into a little foil packet, and place it in the crockpot. Cook for 1 hour.
  • Remove the garlic foil packet from the crockpot. Spray your crockpot with nonstick spray for easy cleanup. Add the chopped and peeled potatoes, chicken broth and milk. Place the foil packet of garlic on top of the potatoes. Cover and cook on high for another 3-4 hours.
  • When potatoes are fork tender remove the foil packet from the crockpot. Add cream cheese, butter, and salt to the crockpot. Open the foil packet and allow the garlic to cool so you can handle it. Squeeze the garlic head so that the cloves pop out and add them to the potatoes. Use a hand mixer to whip them until they are smooth, adding more milk as needed. Taste and add seasoning as needed. Turn heat to low and cover until ready to serve.

With just five minutes of hands-on time, these garlicky mashed potatoes may just be the easiest you've ever made.

1/8 pound garlic (about 10 cloves, separated from the bulb and peeled)
2 pounds red potatoes (scrubbed clean and cut into 2-inch pieces)
2 tablespoons butter + more for serving as desired
1/2 teaspoon salt + additional salt and freshly ground black pepper to taste
1/4 cup water or vegetable broth
1/4 cup half-and-half plus more as desired
Equipment
Two-quart or larger Crock Pot

Steps:

  • Place garlic in the Crock Pot, then add potatoes. Top with butter, sprinkle on the salt, and add the water or vegetable broth.
  • Cook on high 3 - 4 hours or low 8 hours. Potatoes and garlic should be very tender.
  • Using a potato masher, mash potatoes a bit and then pour in 1/4 cup half-and-half. Continue mashing, adding additional half-and-half until potatoes are desired consistency. Taste and add additional salt and pepper if desired.
  • Serve topped with additional butter if desired.

1 cup milk

Steps:

  • Toss potatoes, water, butter, salt, pepper, and garlic and put them into the crock pot.
  • Cook the potatoes (covered, of course) for 4 hours on high or 7 hours on low in the crock pot.
  • Add milk and mash the potatoes.
