Steps:
- Heat olive oil in a large saucepan over medium heat; cook and stir chicken, onion, and garlic into the hot oil until chicken is no longer pink in the center and the juices run clear, 10 to 15 minutes.
- Mix Great Northern beans, chicken broth, green chiles, salt, cumin, oregano, black pepper, and cayenne pepper into chicken mixture; bring to a boil. Reduce heat and simmer until flavors have blended, about 30 minutes.
- Remove chili from heat; stir in sour cream and whipping cream until incorporated.

INSTANT POT WHITE CHICKEN CHILI
This Instant Pot White Chicken Chili is a hearty, one pot meal that pleases everyone. Full of healthy beans, tomatoes and tender chicken, this chili can hold its own against any blue ribbon chili cookoff! Our instant pot recipe takes less than an hour... but no one would ever guess that.

- Set your instant pot to the sauté setting. Sauté the onion in olive oil until translucent. Add garlic and sauté for 30 more seconds.
- Add the can of Ro-Tel Diced Tomatoes (do not drain) and diced green chiles. Add the pinto beans and cannellini beans (We like to drain and rinse our canned beans, but that's a personal preference.)
- Add in the chili powder, oregano, cumin, paprika and salt, pepper and chicken broth. Stir to combine.
- Place the chicken on top and gently press down to cover with the broth/bean mixture. You don't want the chicken on the bottom of the instant pot or it can end up giving you the dreaded burn notice.
- Seal the pressure cooker with the lid. Select Manual (or Pressure Cook button depending on your instant pot model) and cook on high pressure for 25 minutes. (The pot will take about 10 minutes to come up to pressure before the cooking program begins.)
- When the cook time finishes, let the pot sit undisturbed for a 15 minute natural release (meaning do not touch the instant pot for 15 minutes after it says it's done cooking).
- Then turn the steam release knob to Venting to release any remaining pressure and open the lid. Using two forks to shred the chicken then add the cream cheese and sour cream and stir until all combined.
- Serve with toppings of choice or corn bread or beer bread on the side!

This is a recipe given to me by a good friend and co-worker. It has a wonderful flavor that I think anyone can appreciate, especially for a quick fix on a cold winter day! Serve with jasmine rice as side with chili or fresh French or Italian bread.

- Heat olive oil in a Dutch oven over medium heat. Cook chicken, onion, and garlic in hot oil until the chicken is browned completely, 3 to 5 minutes per side.
- Remove the chicken to a cutting board, cut into 1-inch pieces, and return to the Dutch oven; add chicken broth, cannellini, green chilies, oregano, cumin, and cayenne pepper. Bring the mixture to a simmer and cook until the chicken is cooked through, 30 to 45 minutes.
- Divide cilantro among 4 bowls. Ladle chili over cilantro and top with cheese. Season with salt to serve.

Add flour, and cook, stirring often, 1 minute. Add chicken stock and salsa verde, stirring and scraping to loosen any browned bits from bottom and sides of Dutch oven. Stir in reserved browned chicken and any accumulated juices on plate, beans, and cream cheese cubes. Reduce heat to medium, and cook, stirring often, until cream cheese is melted and chicken is cooked through, about 10 minutes. Serve with desired toppings.
