2 ½ pounds ground beef
2 eggs
½ cup Italian seasoned bread crumbs
1 teaspoon salt
1 teaspoon fresh cracked black pepper
1 green bell pepper, chopped
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 Spanish sweet onion, chopped
1 (16 ounce) package shredded Cheddar cheese, divided
1 (8 ounce) can tomato sauce, divided

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix ground beef, eggs, bread crumbs, salt, and black pepper together in a large bowl. Add green bell pepper, red bell pepper, yellow bell pepper, and onion; mix. Spread the beef mixture into a 13x9-inch glass baking dish.
  • Make a trough in the middle of the meat mixture. Put 3/4 of the Cheddar cheese and half the tomato sauce into the trough. Fold the beef mixture around the cheese and sauce filling to form a loaf, pinching to seal. Loosely cover the meat loaf with aluminum foil.
  • Bake in preheated oven until the beef is cooked through and the cheese in the middle is melted, about 45 minutes. Remove and discard aluminum foil. Top meat loaf with remaining Cheddar cheese and tomato sauce. Continue baking until the cheese melts, about 15 minutes. Rest meat loaf 10 to 15 minutes before slicing to serve.

This is a very easy and no fail recipe for meatloaf. It won't take long to make at all, and it's quite good!

1 ½ pounds ground beef
1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs
salt and pepper to taste
2 tablespoons brown sugar
2 tablespoons prepared mustard
⅓ cup ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
  • In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
  • Bake at 350 degrees F (175 degrees C) for 1 hour.

I've been tweaking recipe after recipe trying to find a good gluten-free meatloaf recipe that would hold together and not crumble. This one's a winner!

3 slices gluten-free bread
3 ½ pounds ground beef
3 large eggs
3 teaspoons salt
ground black pepper to taste
1 cup evaporated milk
⅔ cup steak sauce (such as A1®), or to taste
1 medium onion, chopped
1 cup diced green bell pepper
4 slices bacon, or more as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Cover a rack with foil and set inside a roasting pan.
  • Tear bread into pieces and pulse in a blender or food processor until uniform crumbs form.
  • Transfer bread crumbs to a bowl and mix with ground beef, eggs, salt, and pepper. Add milk, 2/3 cup steak sauce, onion, and bell pepper; mix to combine.
  • Shape mixture into a loaf and place on the prepared rack. Cover with bacon slices and brush the top with additional steak sauce.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Allow to stand 5 minutes before slicing.

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix the ground sirloin, salsa, bread crumbs, cheese, egg, and garlic. Season with parsley, salt, and pepper. Transfer to a 5x9 inch loaf pan.

This is a vegan "meatloaf" that tastes like and has the consistency of regular meatloaf. I used my mom's age-old recipe and veganized it. A little of the tomato sauce can be saved to glaze the top or you can use ketchup. I like making meatloaf sandwiches out of this!

1 (15.5 ounce) can dark red kidney beans, drained
1 (16 ounce) package firm tofu, drained
1 (15 ounce) can tomato sauce
1 cup rolled oats
1 medium green bell pepper, diced
1 tablespoon dry vegan egg replacer
1 teaspoon onion powder
1 teaspoon garlic powder
1 pinch oregano, or to taste
salt to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a baking dish with cooking spray.
  • Combine garbanzo beans and kidney in a food processor; pulse until smooth. Crumble tofu into the food processor; pulse until well combined and mixture resembles ground meat.
  • Transfer mixture to a large bowl. Add tomato sauce, oats, bell pepper, onion, egg replacer, onion powder, garlic powder, oregano, and salt; mix by hand until combined.
  • Form mixture into a loaf shape and place in the prepared baking dish.
  • Bake in the preheated oven until cooked through, about 1 hour 30 minutes.

Ground bison is a super alternative to ground beef. This meatloaf uses ground walnuts and diced mushrooms to act as the binder, instead of bread crumbs. Though the bison is not as traditional as beef, we liked it with traditional sides: mashed potatoes, green beans, and a salad.

2 large eggs
2 tablespoons minced fresh rosemary
1 tablespoon minced garlic
1 tablespoon Dijon mustard
½ teaspoon salt, or to taste
½ teaspoon freshly ground black pepper, or to taste
¼ teaspoon crushed red pepper flakes, or to taste
1 cup diced white onion
1 cup diced button mushrooms
¾ cup finely chopped red bell pepper
⅔ cup finely chopped walnuts
2 pounds ground bison
3 slices reduced-sodium bacon

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine eggs, rosemary, garlic, Dijon mustard, salt, black pepper, and red pepper flakes in a large bowl. Briskly stir until all ingredients are mixed together and the eggs are well blended.
  • Add onion, mushrooms, bell pepper, and walnuts; stir to combine. Add ground bison and mix until everything is well combined.
  • Turn out mixture onto a 9x13-inch metal baking pan and shape into a loaf, about 9 inches long and 5 inches wide.
  • Place bacon strips along the length of the meatloaf and secure the ends with wooden toothpicks.

EASY OLD FASHIONED MEATLOAF

No fancy ingredients here... Not like we need another meatloaf recipe, but I figured I'd should post my Grandma's for people like me who like a quick easy meatloaf without a lot of fuss. Most of the meatloaves I saw here had things I'd never even consider putting in a meatloaf! :) At times I will substitute the onion with approx. 1/4 cup dried onion flakes. I also have substituted the garlic with garlic powder. I've never tried making it with horseradish. (I was a notoriously picky eater as a kid so I don't think Grandma put it in when I came to visit either.) I usually don't bother beating the egg... (Boy do I sound lazy! Don't tell Mom! LOL!) I've only recently started putting ketchup on the top before baking, so I don't think it's necessary to keep the meatloaf moist. Mom used to use her own dried bread crumbs, but I use the plain storebought kind. I haven't been adventurous enough to try any flavored bread crumbs... Make sure lean ground beef is used otherwise the meatloaf can get too greasy and/or bubble over the pan while baking. I also recommend checking the center to make sure it's done. On occasion it has taken over an hour to bake.

  • Add the ingredients into a blender in the order they are listed, starting with the wet ingredients. Blend on low speed until combined then set aside for a few minutes for the bubbles to go down.
  • Melt a dot of butter in a 10-inch non-stick skillet over medium heat (2 skillets make the process go faster). Pour about 1/4 cup batter into the skillet, or enough to coat the bottom of the pan.
