BASIC CREPES



Basic Crepes image

Here is a simple but delicious crepe batter which can be made in minutes. It's made from ingredients that everyone has on hand.

1 cup all-purpose flour
2 eggs
½ cup milk
½ cup water
¼ teaspoon salt
2 tablespoons butter, melted

Steps:

  • In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
  • Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

Can't believe this great recipe with its proportions is not already on here... most of the other recipes have a higher ratio of eggs and added fats. This is great without the extra eggs and fats!

1 1/2 cups milk
1 cup flour
2 eggs
1 tablespoon sugar
1 pinch salt
jam
whipped cream
fresh fruit
maple syrup
nutella
powdered sugar

Steps:

  • Heat a non-stick pan to medium hot.
  • Mix all ingredients in the blender.
  • Brush pan with a little butter or spray with Pam.
  • Pour in enough batter to cover bottom of pan in a thin layer (when you pour it in, quickly hold and turn the pan to even out batter into a circle).
  • Flip when golden.
  • Spread on your topping of choice then roll -- for example: jam; whipped cream and fresh fruit; maple syrup; fresh fruit and a sprinkling of powdered sugar; nutella.

These are more like small thin pancakes than a real crepe. They make a tasty breakfast meal and are wonderful when topped with hot fresh blueberry sauce (fresh blueberries heated on the stove with a little flour). The flax seeds add a subtle nutty flavor and the cinnamon and nutmeg add a hint of spice. Enjoy!

3 eggs
1 cup soy milk
¼ cup olive oil
½ cup all-purpose flour
¼ cup whole wheat flour
2 tablespoons flax seeds
¼ teaspoon salt
¼ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
1 teaspoon vegetable oil, or as needed

Steps:

  • Beat eggs, soy milk, and olive oil together in a small bowl. Mix all-purpose flour, whole-wheat flour, flax seeds, salt, cinnamon, and nutmeg together in a separate bowl. Stir the egg mixture into flour mixture until well mixed.
  • Heat a lightly oiled skillet over medium heat. Pour about 1/4 the batter in the hot skillet and cook until batter turns from wet to moist, and the edges begin to curl away from the sides of the skillet, 2 to 3 minutes. Flip and continue cooking until lightly golden on the other side, 1 to 2 minutes.
  • Place cooked crepe onto a plate, and cover with a kitchen towel to keep moist. Repeat with the remaining batter, lightly oiling the skillet as needed to keep the crepes from sticking.

  • Warm up a nonstick 10-inch pan over medium heat. Melt about 1 teaspoon of butter; when it starts to foam, ladle in 1/4 cup of batter in the center of the pan.
  • Immediately lift the pan from the burner and swirl it so the batter coats the bottom of the pan. Replace the pan on the burner and cook the crepe until the batter is just set and the underside is lightly golden, about 1 minute.

  • Add the ingredients into a blender in the order they are listed, starting with the wet ingredients. Blend on low speed until combined then set aside for a few minutes for the bubbles to go down.
  • Melt a dot of butter in a 10-inch non-stick skillet over medium heat (2 skillets make the process go faster). Pour about 1/4 cup batter into the skillet, or enough to coat the bottom of the pan. As you are pouring the batter into the skillet, swirl the batter to evenly coat the bottom. Fill any gaps with a little more batter.
  • Once the edges are golden, flip the crepe using a thin-edged spatula to easily get under the crepe. Sautee another 30 seconds or until the second side turns golden then turn the crepe out onto a clean cutting board.

  • When you are ready to make the crepes, mix the batter again and if it’s too thick, add a bit more water. It needs to be quite thin, only a little thicker than pouring/heavy cream. You’ll see if you make the first few if the batter is too thick, the crepes need to be very thin and almost lace-like.
  • Heat the pan over medium heat. Brush with oil or melted butter and wipe out with a paper towel. You don't want the crepes to fry, the oil just acts as non-stick.
  • Add ladle-fulls of the batter to the pan and allow to cook before flipping. Keep the crepes warm on a plate set over a pot of simmering water.
