BASIC CREPES
Here is a simple but delicious crepe batter which can be made in minutes. It's made from ingredients that everyone has on hand.

Steps:
- In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
- Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
- Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

EASY DEVILED CHICKEN

- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter/margarine and mix in a small bowl with mayonnaise and mustard. Pour mixture into a shallow bowl or plate.
- Season chicken with salt and pepper to taste. Roll seasoned chicken breasts in mayonnaise mixture, then dip in mixed herbs and place in a lightly greased 9x13 inch baking dish. Bake in the preheated oven for 1 1/2 hours.

EASY DELICIOUS CREPES
These are more like small thin pancakes than a real crepe. They make a tasty breakfast meal and are wonderful when topped with hot fresh blueberry sauce (fresh blueberries heated on the stove with a little flour). - Beat eggs, soy milk, and olive oil together in a small bowl. Mix all-purpose flour, whole-wheat flour, flax seeds, salt, cinnamon, and nutmeg together in a separate bowl. Stir the egg mixture into flour mixture until well mixed.
- Heat a lightly oiled skillet over medium heat. Pour about 1/4 the batter in the hot skillet and cook until batter turns from wet to moist, and the edges begin to curl away from the sides of the skillet, 2 to 3 minutes. Flip and continue cooking until lightly golden on the other side, 1 to 2 minutes.
- Place cooked crepe onto a plate, and cover with a kitchen towel to keep moist. Repeat with the remaining batter, lightly oiling the skillet as needed to keep the crepes from sticking.

BLENDER CREPES

Steps:
- Add flour, milk, eggs, and salt to a blender. Mix blender contents using a spatula so that the flour is moistened and not sticking to the edges.
- Melt butter over medium heat in a crepe pan or frying pan.
- Blend flour mixture on low and pour in melted butter, returning the frying pan to the stovetop. Increase blender speed to high to beat out any lumps, 2 to 3 seconds.
- Lift the hot pan from the burner and pour in some batter quickly while tilting the pan in a circular motion until the bottom of the pan is covered. Transfer any excess batter back into the blender. Remove any batter from the lip of the pan using a spatula before placing it back onto the stove. Rinse off any partly-cooked lump on the spatula before using it again.
- Cook crepe over medium heat, checking frequently until the bottom is very light brown, 1 to 2 minutes. Flip crepe over carefully and cook until golden, about 1 minute more, being careful not to overcook. Transfer crepe to a serving plate and repeat with remaining batter.

- Place the 4 eggs, 1 cup of milk and 4 tablespoons of melted butter in a blender. Add the 1 cup of flour, a quarter cup of sugar, a pinch of salt and the grated (or ground) nutmeg. Blend everything until just smooth. Do not over blend.
- Place a 9-inch skillet on the stove then rub butter on the skillet. Let it heat up on medium heat for about 2 minutes then add a quarter cup of the batter and swirl around immediately to ensure it coats the bottom of the skillet. Let it cook for about 3 minutes until the flour sets and is no longer liquidy. Use a spatula to flip the crepe to the other side and let it cook for another 1-2 minutes. Repeat the process with the rest of batter, adding about a quarter cup of batter each time.
- Mix together the one teaspoon of cinnamon powder and 1 tablespoon of sugar. Roll crepes then sprinkle the cinnamon sugar over them and serve warm.
