The blend of sweet and savory add delightful flavor to this delicious Crock Pot Hawaiian chicken dinner.

2 pounds of chicken tenderloins
One 16-ounce can of pineapple slices, drained (retain 1/3 cup of liquid)
One 15-ounce can of mandarin oranges, drained (retain 1/3 cup of liquid)
1/4 cup of brown sugar
2 tablespoons of cornstarch
2 tablespoons of lemon juice
1/4 teaspoon of ground ginger
1/2 teaspoon of salt
1/4 teaspoon of pepper

Steps:

  • Spray the inside of the slow cooker with nonstick cooking spray.
  • In a medium-size mixing bowl, combine the brown sugar, lemon juice, liquid from can of pineapple and mandarin oranges, ginger, salt, and pepper. Stir until well mixed.
  • Add the cornstarch to the mixture and whisk until it is mixed.
  • Place the chicken inside the Crock Pot. Top the chicken with the mandarin oranges and pineapple slices.
  • Pour the seasoning mixture over the chicken.
  • Cover the Crock Pot and cook on low for 4 hours or until the chicken is done.
  • Serve over rice.

4 boneless skinless chicken breast halves, cut the halves in half
1 (20 ounce) can pineapple slices, drained, reserve juice
1 (8 ounce) bottle creamy French dressing
1 (1 1/4 ounce) envelope dry onion soup mix
1 tablespoon grated lemon rind
1 small green bell pepper, cut into thin strips

Steps:

  • Place the chicken in crock pot.
  • In a bowl, combine the pineapple juice, salad dressing, onion soup mix and lemon peel.
  • Pour over the chicken.
  • Cover and cook on low for 6-7 hours or on high for 3 to 4 hours.
  • Twenty minutes before serving, arrange pineapple slices and green pepper strips over chicken to heat through.
  • Arrange chicken, pineapple and green pepper on large serving platter.
  • If desired, thicken juices with 1 tablespoon cornstarch dissolved in 1 tablespoon water.
  • Stir slowly into juices until thickened slightly.
  • Pour over chicken.
