CUBE STEAK WITH GRAVY
This is my husband's favorite cube steak, passed down from his grandma. Yummy steak with great gravy as long as you're patient while making the gravy. Best served with rice.

Steps:
- Whisk flour, cornstarch, 1 teaspoon black pepper, and 1/2 teaspoon salt together in a shallow bowl. Spread 1 tablespoon of the flour mixture onto a plate; press each cube steak into flour mixture to coat completely.
- Place coated steaks on a work surface and pound each several times with a meat tenderizer on each side to pound flour into steak. Pound each steak a second time to further incorporate flour mixture into the meat.
- Melt butter in a large skillet over medium-high heat until skillet is about 350 degrees F (175 degrees C). Cook steaks in hot butter until browned, 2 to 3 minutes per side. Transfer steaks and any stray pieces of meat to a plate and tent with aluminum foil to keep warm. Let skillet cool briefly.
- Heat the same skillet over low heat. Pour enough milk into the skillet to cover the bottom of the pan. Whisk 1 tablespoon flour mixture into hot milk until gravy has a cream-like consistency, 10 to 15 minutes. Add more flour mixture as necessary to thicken gravy. Transfer any steak scraps back into the skillet and season gravy with salt and black pepper.
- Place hot steaks on plates and top with gravy.

EASY CUBED STEAK AND GRAVY
So easy an 8th grader could do it, but tastes tender, delicious, 8 ingredients, 8 instructions. Definitely good when you need an easy meal. Great when you're tired, and want a good meal.

Steps:
- Preheat crockpot on high (I use a Rival 4 quart crockpot for this, it's gotta be 20 years old, but still does the job; all crockpots are different, the Rival is a much slower cooking one than my slightly smaller and newer Proctor-Silex model), and pour gravy into crockpot. If you have a newer model you defintely can do from it start to finish on the low temperature.
- Add milk to the gravy jar or cream of mushroom soup, and shake to get all of the gravy or soup rinsed out, and put in the crockpot.
- Add sliced onion on top of the gravy. Put crockpot lid on.
- Heat oil in a large frying pan until medium hot.
- In a plastic bag zipper bag mix flour and black pepper, put cubed steak in flour mixture and coat well, and brown on both sides.
- Put browned cube steak in crock pot, and cover with lid.
- Turn crockpot to low temperature, and cook 5 hours, or until done. Or it's so easy to just brown the cubed steaks the night before, put everything in the crockpot, stick in the frig., get up, and turn crockpot to low, and it can cook all day on low, without a problem, as it's mostly done already after you browned it.
- Okay, this is so easy I struggled to find the last/8th step, as I really didn't have one. I'd suggest a nice long bath or shower -- the meal is mostly done.
- Note: This is good with mashed potatoes or a baked potato and your favorite vegetable, just an easy meal. I don't think it would take an hour to prepare, but there's time there in the time stated to do it if you need it.

Steps:
- Set up your grill for cooking with indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
- Set up a breading station for the cube steak. Add 1/2 cup flour to a dish, then season with salt and pepper and set aside. Add the beaten eggs to a separate dish, then season with salt and pepper and set aside. Mix together the rice flour, instant coffee, crushed BBQ chips and 1 cup flour in a third dish and season with salt and pepper; set aside.
- Place a large cast-iron skillet over the direct-heat side of the grill. Add enough olive oil to come 1 inch up the side of the skillet. Preheat the oil to 350 degrees F.
- Dredge each piece of cube steak in the flour, egg and then flour/chips mixture, shaking off any excess in between. Add the steaks to the oil in batches and cook until golden brown and crisp, 2 to 3 minutes per side. Remove to a cooling rack and set aside. Pour out the leftover oil from the skillet and discard it. Be careful to keep all the brown bits on the bottom of the skillet-they have all the flavor! Place the skillet back on the grill over direct heat and add the butter. Cook until melted, then whisk in the remaining 3 tablespoons flour, creating a roux that looks like wet sand. Cook the roux, whisking, until golden brown, about 4 minutes. Whisk in the milk a third at a time, continuing to whisk so no lumps form. Whisk in the buttermilk and season with salt and pepper. Cook, whisking, until luscious and thick, 5 to 7 minutes. Stir in the parsley and chives. Move to the indirect side to keep warm.
- To serve: Place a piece of chicken fried steak on a plate. Spoon the gravy over the top.

Steps:
- Sprinkle both sides of the steak with the salt, cayenne, and black pepper. Rub seasoning into meat. In a large skillet, heat oil over high heat until hot. Add steak and cook on high until browned, turning steak every 3 to 4 minutes. (Lower heat if necessary.) The steak should be well browned on both sides. Remove steak and add onions and bell peppers to pan. Cook until wilted. Place steak on top of onions and bell peppers and add 1/4 cup of water. Lower heat to medium, cover and simmer for 1 1/2 hours, turning steak every 20 minutes. (Note: when lifting lid of pot, let the water from the lid drain into the pot.) When steak is tender, remove steak and place on a platter. Mix cornstarch with 1/4 cup of water and add to the pot. Stir to make a gravy. Serve gravy over hot rice with steak.

- Place enough oil in a pan to just coat the bottom, put that over medium heat while you prepare your steak.
- In a bowl, place 1 cup flour, add 1/4 teaspoon salt and 1/ 4 teaspoon pepper (more if you prefer). Stir that up. Dip each piece of steak into flour on both sides to get it coated well.
- Place each piece of steak in heated pan and cook until good and browned on both sides. Remove steak to a plate while you make your gravy.
- Place about 1/4 cup flour into skillet with meat drippings. Add a little more salt and pepper and stir this over medium heat until the flour is slightly browned (just a few minutes). Slowly pour in 1+1/2 Cups of milk, stirring constantly. Continue stirring, with a wire whisk to help with lumps, over the lowest heat setting until thickened and there are no lumps. This will happen rather quickly. Add a little more milk if you prefer thinner gravy. Return steak to the pan and turn to coat with gravy on both sides.
