CUCUMBER RAITA RECIPE

This Cucumber raita is refreshing, cooling and comforting to the palate. You can make this just under 10 minutes with only a few ingredients. Serve it as a side in any meal, with biryani or pulao.

1 cup cucumber (chopped )
1½ cup yogurt ((thick, more if needed))
¼ teaspoon salt (as needed)
½ teaspoon roasted ground cumin ((jeera powder, refer notes))
¼ teaspoon ground black pepper (( or cayenne pepper, adjust to taste))
2 tablespoons coriander leaves ((cilantro finely chopped))
½ teaspoon chaat masala ((optional, for garnishing))
4 to 5 mint leaves ((optional, finely chopped))
1 green chili pepper ((seeded and chopped))

Steps:

  • Rinse cucumber and peel it. Chop to tiny bite size pieces (about ¼ to ½ inch). If you prefer you may even grate it. Grated cucumbers let out moisture so make sure you use only greek yogurt if you want to grate them. Otherwise cucumber raita becomes runny.
  • Also fine chop coriander and mint leaves (optional).
  • Deseed the green chilli and chop. (optional)
  • Whisk chilled yogurt in a large mixing bowl.
  • Add chopped cucumber, green chilies, coriander leaves, mint leaves and salt. Mix all of them.
  • Taste test and add more salt if needed. Drizzle cumin powder, ground black pepper & chaat masala (optional).
  • Serve cucumber raita as a side in an Indian meal. It is usually eaten with Vegetable biryani or chicken biryani.
  • Cucumber raita is best served fresh but can be chilled for a few hours.

I like this because there's no mint, no tomato like in many other raita recipes and the addition of chili powder gives it extra zing. Cooking time includes 30 minutes chilling time. 1 cucumber (grated)
salt (to taste)
140 g plain yogurt (5 oz)
1 pinch chili powder
1 pinch ground cumin or 1 pinch roasted cumin seeds
fresh ground pepper (to taste)
1 slice cucumber, dusted with
paprika (to garnish)

Steps:

  • Drain the grated cucumber well so that you squeeze out as much moisture as possible.
  • Add the yougurt, chili powder, ground cumin (or toasted cumin seeds) and salt and pepper to taste.
  • Chill 30 minutes in refrigerator and stir well before serving.
  • Dust the single cucumber slice in paprika and garnish
  • Goes well with poppadoms.

This raita is a lovely change from the more common cucumber raita. Madhur Jaffrey, the recipe author, writes in Eastern Vegetarian Cooking that she can eat it by the spoonful, all by herself. It can also be served warm, however, I've only tried it cold. Madhur Jaffrey calls this dish yogurt with courgettes, but I think it is a dish that we usually refer to as raita.

2 medium zucchini (about 12-14 oz, 340-400g)
3/4 teaspoon salt
1 medium onion
350 ml plain yogurt
3 tablespoons vegetable oil
1 teaspoon black mustard seeds
1/16 teaspoon fresh ground black pepper
1/16 teaspoon cayenne pepper (use as much as you like)

Steps:

  • Trim zucchini and grate them coarsley. Put them in a bowl and sprinkle with 1/2 tsp salt. Toss to mix and set aside for half an hour.
  • Drain zucchini and press out as much liquid as you can. Separate the shreds so you do not have lumps.
  • Peel the onion, cut in half lenghtwise, and then cut into fine, half-moon-shaped slices.
  • Put yogurt in bowl. Beat it lightly with a fork or whisk until smooth and creamy.
  • Heat oil in a 8-in/20-cm frying pan over a medium flame. When hot, put in the mustard seeds. As soon as the mustard seeds begin to pop (just a matter of seconds), put in the onion. Stir and fry for about 2 minutes or until slices are translucent. Add the zucchini. Stir and fry for another 3 minutes. Turn off the heat and let zucchini cool slightly. When cooled, fold it into the yogurt. Add the remaining 1/4 tsp salt, pepper and cayenne.
  • If you wish the to eat the dish cold, cover and refrigerate it.
  • If you wish to eat it warm, put the yogurt-zucchini combination in a double boiler over a low flame. Then heat, stirring in one direction, until warm. Do not let it boil.

I just love the roasted cumin seeds in this. I use a thick Greek-style yoghurt, but you could drain your yoghurt overnight for a thicker finish.

1 small cucumber
1 teaspoon cumin seed
1/2 cup plain yogurt
1/4 teaspoon salt
1/4 teaspoon paprika

Steps:

  • Peel cucumber and cut lengthways in half. Slice each half finely.
  • Heat a small pan over a low heat and toast cumin seeds until they darken a little and smell fragrant. Allow them to cool, then crush with a rolling pin or pestle and mortar.
  • Beat the yoghurt until smooth, then stir in the cumin and salt.
  • Add the cucumber to the yoghurt, then transfer to a serving dish and garnish with cucumber slices and paprika.

This is a very cooling sauce to go with spicy curries and other hot and piquant dishes. Try spooning it over your rice or dipping pieces of chapatis into it. Very good!

1/2 cucumber, thinly sliced (plus a few thin slices for garnish)
1 1/2 cups plain nonfat yogurt
6 green onions, thinly sliced
1 -3 fresh green chili, seeded and finely chopped
2 tablespoons finely chopped fresh cilantro (to garnish)
salt

Steps:

  • Place the cucumber into a sieve and sprinkle with salt and mix well, allow it to set over a sink or other place to drain for half an hour or so.
  • Pat the cucumbers dry with paper toweling.
  • Mix the yogurt in a bowl with enough salt to taste and add cucumber, green onions, and the chopped chilies and mix well.
  • Top with a few thin slices of cucumber and sprinkle with chopped cilantro and serve.
  • If not serving immediately, refrigerate until needed.
