This is my favorite traditional side dish for our holiday meals... it may sound a bit on the weird side... but go for it!

1 (16 ounce) can sliced pears, well drained
1 (20 ounce) can pineapple chunks, drained
1 (15 ounce) can apricot halves, drained
2 (15 ounce) cans sliced peaches
1 (4 ounce) jar maraschino cherries
¼ cup packed brown sugar
¼ cup white sugar
3 teaspoons curry powder
2 tablespoons butter

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • Drain the fruit and arrange it in an oven-proof casserole dish. Dot the fruit with butter or margarine. Mix the sugars and the curry powder together, sprinkle over the top of the fruit.
  • Bake at 400 degrees F (205 degrees C) until slightly brown, about 15 to 20 minutes.

1 can (11 ounces) mandarin oranges, drained
3/4 cup pineapple tidbits, drained
1 can (8 ounces) water chestnuts, drained
4 cups cubed cooked chicken
2 cups seedless red or green grapes, halved
1 cup chopped celery
Lettuce leaves
Sliced almonds
DRESSING:
1-1/2 cups mayonnaise
1 tablespoon soy sauce
1 tablespoon lemon juice
1-1/2 teaspoons curry powder

Steps:

  • In a large bowl, combine the oranges, pineapple, water chestnuts, chicken, grapes and celery. , In a small bowl, combine dressing ingredients. Pour over salad; toss well to coat. Chill for 1 hour. Serve on a bed of lettuce; sprinkle with almonds.

2 chicken breasts, cooked and shredded
5 tablespoons unsalted butter
1 small onion
2 tablespoons flour
1 tart apple
1 large banana
1 ripe peaches or 1 nectarine
1 cup grapes, sliced in half
1/4 cup dried cherries (optional)
2 tablespoons yellow curry powder (or to taste)
1/2 cup chicken broth
1 cup heavy cream or 1 cup half-and-half
4 cups cooked rice

Steps:

  • Melt butter in a large, heavy skillet.
  • Finely chop onion, and simmer in the butter until soft but not brown. Lower heat to medium.
  • Cut all the fruit into small pieces. Add all fruit except the cut up bananas at this point.
  • Stir gently until warmed through.
  • Add the flour and stir until it's been incorporated, about one minute.
  • Add curry and chicken broth.
  • Add the bananas.
  • Let simmer on low heat for five minutes.
  • Add cream and stir.
  • Add cooked shredded chicken breast.
  • Let it all come back to a low simmer.
  • Serve over rice.

  • In a large skillet, brown the chicken in butter on each side; remove and keep warm. In the drippings, cook the onion, curry, salt and pepper until onion is tender. Stir in the fruit, water, sugar and lemon juice., Return chicken to pan. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until a thermometer reaches 170°. Serve with rice; sprinkle with almonds.

3 tablespoons butter
1 large onion, minced
3 cloves garlic, minced
2 teaspoons minced fresh ginger
3 tablespoons madras-type curry powder
1/2 teaspoon crushed red chiles
1/2 cup or more cane vinegar
3 pounds skinless, boneless chicken breast, cut into strips
4 large potatoes, peeled and chopped

Steps:

  • In a large frying pan, heat the butter and saute the onion, garlic, and ginger until the onion is soft, but not brown. Add the curry powder and chiles, stirring so that they do not stick or burn. Add the vinegar. There should be enough to make a smooth paste.(You may need up to 1/4 cup more vinegar.) Cover the chicken pieces with the paste and place them in a covered bowl in the refrigerator. Allow the chicken pieces to marinate for at least 2 hours. When ready to cook, place the chicken pieces in a large frying pan and add enough water to reconstitute the paste and prevent scorching. Cover and cook over low heat for 30 minutes. (You may find that you will have to add more water to prevent scorching.) After 30 minutes, add the potatoes, cover and continue to cook for an additional 15 minutes, or until the potatoes and chicken are done.

1 (3- pound) chicken, cut into 10 pieces
Small piece scotch bonnet pepper

1 tomato diced
1/4 cup coconut milk
1 cup water
Sprinkle with ground cumin

Steps:

  • Mix curry, garlic and onion with water. Add to pot with hot oil. Fry for about 2 minutes, then add meat. Fry for a little while. Then add pepper, chives and 1 tomato diced. Fry for a little while again and then add coconut milk. Simmer for about 20 minutes. Keep turning. Have a kettle of boiling water, and add some to pot to make gravy. Sprinkle with ground cumin.
  • This meal is usually served with white rice or roti skins.

  • Arrange cauliflower, carrots, bell pepper and gingerroot in pan. Sprinkle with 2 teaspoons of the curry powder and 1 teaspoon of the salt; toss.
  • Season chicken thighs with remaining 2 teaspoons curry powder and 1 teaspoon salt. Arrange chicken over vegetables.
  • Roast 20 minutes. Remove pan from oven; add green onions, tossing to mix. Return to oven; roast 10 minutes longer or until juice of chicken is clear when thickest part is cut to bone (at least 165°F).

1 tablespoon olive oil
1 large onion, chopped

½ teaspoon ground cinnamon
½ teaspoon garlic powder

Steps:

  • Pour flour into a wide, shallow bowl. Dredge chicken pieces in flour to coat completely.
  • Heat olive oil in a large non-stick skillet over medium heat. Saute onion in hot oil until softened, 6 to 7 minutes; season with curry powder, salt, cumin, cinnamon, garlic powder, black pepper, and coriander. Continue cooking until spices are fragrant, about 1 minute.

  • Place chicken in one layer in slow cooker.
  • Sprinkle onion over top.
  • Mix remaining ingredients and spread over chicken.
  • Cover and cook on low 7-8 hours or until chicken is tender and cooked through.

My Nana's recipe for fruity chicken curry that she used to make in the 1970's when she was a pub landlady.

Steps:

  • In a large frying pan, fry the chicken breast until browned or, if you prefer you can just drop the raw chicken into the curry later.
  • Add the onion, apple and banana to a medium sized casserole dish and fry until the onion has softened. (About 10 minutes)
  • Add the curry paste and curry powder and stir into to the mixture.
  • Add the chicken stock followed by the chicken.
  • Simmer on a low heat for 30 minutes, stirring occasionally with the lid off. The liquid should reduce down.
  • Add the coconut milk, raisins, nuts and chick peas (If using) and continue to cook for another 10 minutes.
  • Serve with steamed/boiled white rice.
