1 pound ground beef (80/20)
1 large yellow onion (chopped)
2 packages mild taco seasoning
1 (14.5-ounce) can petite diced tomatoes (drained)
1 (4-ounce) can diced green chilies (mild)
1 cup sour cream
1 (10.75-ounce) can condensed cream of mushroom soup
1 large bag Dorito's nacho cheese
1 1/2 cups Jack cheese (shredded)
1 1/2 cups cheddar cheese (shredded)

Steps:

Preheat oven to 400 degrees. Spray a 9X13 inch baking dish with nonstick cooking spray.
In a large skillet, over medium heat, cook the beef and onion until no longer pink. Remove excess fat. Stir in taco seasoning, diced tomatoes, diced chilies, sour cream and cream of mushroom soup and heat through.
Place one-third of the crushed Doritos in the bottom of the baking dish then add half of the beef mixture. Top with one-third of the crushed Doritos, then the remaining beef mixture. Add the last third of the remaining Dorito's and Sprinkle top evenly with cheese.
Bake, uncovered in preheated oven until heated through and cheese is bubbly about 2o minutes.

2 tablespoons olive oil
1 cup diced yellow onion, about 1 medium onion
2 cloves garlic, minced
1 pound lean ground beef
1 package low- sodium taco seasoning
1 (10- ounce) can Ro-tel tomatoes and chiles
1/2 cup salsa
1 cup sour cream
1 1/2 cups grated cheddar cheese
1 (9.75- ounce) bag Doritos, very coarsely crushed
Optional garnish - diced tomatoes, cilantro, jalapeños, avocado

Steps:

Preheat the oven to 350°F.
In a large skillet, heat oil over medium heat. Add in the onions and cook for 5 minutes. Add in the garlic and the ground beef and cook until the meat is no longer pink, breaking up the clumps with a wooden spoon.
Add in the taco seasoning, Ro-tel, and salsa. Cook for 5 minutes, stirring occasionally.
Stir in the sour cream evenly and then remove the mixture from the heat.
Pour half of the meat mixture into the bottom of a 9×13 pan. Top with 1/2- cup of the cheese and half of the Doritos. Repeat the process with the remaining ingredients, topping with the remaining 1/2- cup of the cheese.
Cover the pan with foil and bake for 20 minutes.
Remove the foil and bake for 10 more minutes.
Garnish as desired and serve warm.

1 pound ground beef sirloin
½ cup salsa
½ cup Italian seasoned bread crumbs
½ cup shredded Cheddar cheese
1 egg, lightly beaten
3 cloves garlic, minced
dried parsley to taste
salt and pepper to taste

Steps:

Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix the ground sirloin, salsa, bread crumbs, cheese, egg, and garlic. Season with parsley, salt, and pepper. Transfer to a 5x9 inch loaf pan.

1 ½ pounds lean ground beef
1 cup crushed tortilla chips
¾ cup shredded pepper Jack cheese
1 small onion, chopped
1 (1 ounce) packet taco seasoning mix
2 eggs, beaten
½ cup milk
¼ cup mild red taco sauce, or more to taste

Steps:

Preheat the oven to 350 degrees F (175 degrees C).
Thoroughly combine beef, tortilla chips, pepper Jack cheese, onion, and taco seasoning in a bowl.
