How to Make Dulce de Leche image

This is basically sweet, caramelized milk. It's so easy and so delicious. I like it better than caramel sauce on anything you'd use caramel sauce, such as on ice cream, toast, cookies, cakes, brownies, or to pour on people.

1 small finishing nail
1 (14 ounce) can sweetened condensed milk
3 cups water, or more as needed

Steps:

  • Wash the nail and pound it into the top of can of sweetened condensed milk to make 2 small holes on opposite sides of the top. Remove nail.
  • Place the can of condensed milk into a small saucepan and pour in water to reach high up the side of the can. Bring water to a boil; reduce heat to low. Simmer milk in the can for 3 to 4 hours. Milk will slowly turn light to medium brown and become thicker as it cooks. Add more water as it boils down.
  • Remove lid from can and pour dulce de leche into a bowl. Whisk to break up any lumps and mix thicker caramel from the bottom into the rest of the syrup.

The truth is that one can eat manjar anytime during the day and in many different ways: with bread, cheese, cookies and, my favorite, with meringue. Some of my foreign friends love it, some others hate it, so I guess you must give it a try and judge then.

1 quart whole milk
1 cup white sugar
½ teaspoon vanilla extract
¼ teaspoon baking soda

Steps:

  • Bring milk, sugar, and vanilla extract to a boil in a saucepan over high heat. Reduce heat to medium-low, and continue cooking, and continuously stirring until the milk has thickened and turned a caramel color, about 1 hour or more.
  • Stir in baking soda. Continue cooking until the caramelized milk has reached a pudding consistency. Pour manjar into a bowl and cool completely in the refrigerator.

Berlines are small round doughnuts of German origin. Popular in Chile, they're often filled with dulce de leche, a kind of sweetened milk, or pastry cream.

3 1/4 cups all all-purpose flour
1 tablespoon active dry yeast
2 tablespoons warm water
1 cup buttermilk (at room temperature)
3 egg yolks (at room temperature)
4 tablespoons butter (melted and cooled)
3 tablespoons light brown sugar
1 teaspoon vanilla
Optional: 1/2 teaspoon anise flavoring
1 teaspoon salt
5 cups vegetable oil for frying
1/2 cup sugar
1 tablespoon cinnamon
1 cup dulce de leche (or another filling)

Steps:

  • In a small bowl, stir the yeast into the 2 tablespoons warm (not hot) water. The mixture should turn foamy after a few minutes. Set aside.
  • Add 3 cups of the flour, brown sugar, and salt to the bowl of a standing mixture. Use the dough hook to mix well.
  • Add the melted butter, eggs, yeast mixture, vanilla, anise (if using) and buttermilk to the flour mixture. Knead with dough hook until mixture is smooth, shiny and pulls away from the sides of the bowl, about 5 to 8 minutes, adding the extra 1/4th cup of flour if dough seems too wet.
  • Transfer the dough to a lightly oiled bowl (the dough will be sticky) turning the dough to coat it lightly with the oil. Cover dough with plastic wrap and let rise in a warm place until doubled in bulk, about an hour. Punch down the dough and chill it for several hours in the refrigerator (or overnight) to make it easier to handle.
  • Roll dough out on a floured surface to a thickness of about 3/4 inches. Cut 2-inch rounds of dough with a biscuit cutter and place them on a cookie sheet lined with wax paper that has been dusted with flour. Re-roll scraps of dough and cut more rounds.
  • Cover dough rounds loosely with plastic wrap and lets them rise until puffy (while the cooking oil is heating).
  • Stir the 1/2 cup sugar and cinnamon together in a bowl.
  • In a heavy skillet or pot with tall sides, heat several inches of oil to 350 F. Drop the rounds of dough into the hot oil (working in batches), and fry them until they are puffed and golden brown on both sides, turning them as needed (about 3 to 4 minutes).
  • Remove the doughnuts from the oil with a slotted spoon and cool briefly, then roll each cooked doughnut in the cinnamon sugar mixture. (alternatively, you can dust doughnuts with powdered sugar).
  • Warm dulce de leche gently in the microwave to soften it. Place dulce de leche in a pastry bag fitted with a piping tip with about a 1/4 inch diameter opening. Make a small hole in the side of each doughnut with the piping tip, and squeeze a couple of teaspoons of dulce de leche into the middle of the doughnut. Roll doughnuts once more in the cinnamon sugar and serve.
  • Note: Doughnuts can be reheated in a 300 F oven to restore freshness.

If you go this route, make sure there is always enough water circulating around the can. Others prefer the ease of the oven method, which is slightly faster, too.

One 14-ounce can sweetened condensed milk, unopened

Steps:

  • For the stovetop method: Remove the label from the can of sweetened condensed milk. Place 3 to 4 forks upside down on the bottom of a large 6- to 8-quart pot. Place the unopened can on top of the forks and cover with water by a few inches. (The forks help to prevent a vacuum between the bottom of the can and the pot.) Place the pot over high heat until it reaches a simmer, then lower the heat to medium-low or low to maintain a steady simmer for about 3 hours. Add more water to the pot if necessary to ensure that the can is submerged at all times. Let the can cool to room temperature in the water before removing. Open the can and scoop out the contents. The dulce de leche should be dark and caramelized.
  • For the oven method: Preheat the oven to 425 degrees F. Place a shallow baking dish in a roasting pan. Pour the sweetened condensed milk into the baking dish and cover the dish with foil. Transfer the roasting pan to the oven and add enough hot water to reach halfway up the sides of the baking dish. Bake until the dulce de leche is dark and caramelized, 60 to 75 minutes, checking the water level occasionally and adding more if needed. Let cool, then whisk until smooth.
  • Transfer the dulce de leche to an airtight container, put plastic wrap directly on the surface and refrigerate for up to 2 weeks.

I got my first taste of this creamy caramel in Chile. Knowing I couldn't buy it where I live in the United States, I practiced with trial and error until I found this lovely recipe. Use as a spread on toast or rolls, add to brownie recipes, sandwich between sugar cookies, stir into coffee, or find your own way to enjoy this creamy Latin American caramel!

1 gallon whole milk
4 cups white sugar
1 cup granular sucralose sweetener (such as Splenda®)
2 teaspoons vanilla extract
2 teaspoons baking soda
2 tablespoons water
1 pinch salt

Steps:

  • Combine milk, sugar, sweetener, and vanilla in the biggest pot you have. Place over medium heat and stir until sugar dissolves. Increase heat and bring to a rolling boil.
  • As soon as it boils, combine water and baking soda in a small bowl and stir to dissolve; don't worry if it doesn't dissolve completely.
  • Remove pot from the stove and place in the sink. Add baking soda mixture and stir vigorously as milk will expand rapidly-be prepared! When the mixture returns to its original volume, return the pot to the stove and bring to a very brisk simmer. It may concern you that it will scorch, but it should be practically boiling. Cook, checking and stirring occasionally, until it turns a deep golden brown, about 1 hour.
  • After the mixture has turned dark caramel in color, check it more frequently. The longer you cook it after the color change, the thicker it will be. For a consistency similar to caramel, cook for another 15 minutes. For a thicker, spreadable consistency, cook for another 20 to 25 minutes. For a candy-like consistency, cook it even longer. Just remember that it will thicken up tremendously after cooling.
  • Once you're ready, pour the caramel into a plastic container with a lid, or pour into jars. It can be kept without refrigeration, but with refrigeration it is good for many weeks.
