2 tablespoons fresh minced garlic
2 tablespoons olive oil
2 tablespoons butter
salt and pepper
1/2 teaspoon italian seasoning (or to taste)
parmesan cheese (optional)

Steps:

  • In a large skillet, saute the zucchini, garlic and Italian seasoning in oil and butter, until zucchini is crisp-tender, about 5 minutes.
  • Season with salt and pepper, then sprinkle with Parmesan cheese.
  • Serve immediately.

I love zucchini and both my boyfriend and I agree that this is the best zuchinni side dish I have ever made! Tons of flavor, healthy and super easy. Note: I was drinking a glass of wine while making this, so figured I'd throw a splash in LOL I personally think it made quite a difference.

1 zucchini
2 garlic cloves, minced
1/2 teaspoon black pepper
1 teaspoon onion salt
1 tablespoon olive oil
1/4 cup water
1/4 cup dry white wine
cooking spray (olive oil flavored preferred)

Steps:

  • Wash Zucchini, cut in half horizontally, then cut into 8 lengthwise pieces for each half (16 in total).
  • Mix olive oil, onion salt and pepper with zucchini in bowl, covering zucchini completely.
  • Spray cooking spray into frying pan. Allow to heat on medium heat for a couple of minutes.
  • Add minced garlic. Allow to simmer for less then 30 seconds.
  • Add splash of white wine, allow to simmer for another 30 seconds.
  • Add 1/4 cup of water, then zucchini.
  • Cover and let steam for about 5 -7 minutes.

1 pound gnocchi
2 tablespoons salted butter
1 tablespoon olive oil
2 zucchini, sliced
2 teaspoons chopped garlic
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, 2 to 4 minutes. Drain, reserving 1/4 cup cooking liquid.
  • Melt butter in a saucepan over medium heat and add olive oil. Add zucchini and garlic. Saute until tender, 5 to 7 minutes. Add cooked and drained gnocchi, Parmesan cheese, and reserved cooking liquid. Stir until nice and creamy.
