PEACH COBBLER

Peach Cobbler image

This classic southern peach cobbler recipe is savory, sweet, and irresistible.

Provided by Shauna

Categories     Dessert

Time 1h

Number Of Ingredients 17

10 cups peaches sliced (into thin wedges)
2 teaspoons lemon juice
¼ cup sugar
¼ cup brown sugar
¼ tsp cinnamon
⅛ tsp allspice
1 tsp vanilla extract
2 tsp cornstarch
2 cups flour
½ cup sugar
½ cup brown sugar
2 tsp baking powder
1 tsp salt
1 ½ sticks butter (chilled and grated on a cheese grater)
½ cup hot water
⅓ cup sugar
2 tsp cinnamon

Steps:

  • Preheat the oven to 425 degrees. Spray a 9x13 deep-sided baking dish with cooking spray and set aside.
  • In a large bowl combine the peaches, lemon juice, sugar, brown sugar, cinnamon, allspice, vanilla extract, and cornstarch. Stir well to coat all peaches.
  • Pour peach mixture into the bottom of your greased 9x13 baking dish. Place in the oven to bake peaches for about 10 minutes while you make the crust and cinnamon sugar topping.
  • In a separate medium bowl combine flour, sugar, brown sugar, baking powder, salt, and grated butter. Stir to combine. Pour hot water into a bowl and mix until a dough mixture forms.
  • In a separate small bowl combine the sugar and cinnamon, stir well.
  • Remove your peaches from the oven and drop spoonfuls of the crust topping mixture on top of the peaches. Use a spoon or spatula to spread out the crust topping mixture so it's evenly covering the peaches. Sprinkle the cinnamon-sugar topping evenly over the top of the crust topping.
  • Place back in the oven and let cook for 25-30 minutes, or until the crust topping is browned and the peach juices are bubbling up on the sides of the cobbler.
  • Serve warm with vanilla ice cream.

For a taste of the South, bake Trisha Yearwood's Easy Peach Cobbler recipe from Trisha's Southern Kitchen on Food Network. Serve it topped with whipped cream.

Provided by Trisha Yearwood

Categories     dessert

Time 1h30m

Yield 8 servings

Number Of Ingredients 8

Two 15-ounce cans sliced peaches in syrup
1/2 cup (1 stick) butter
1 cup self-rising flour
1 cup sugar
1 cup milk
Homemade Whipped Cream, recipe follows
2 cups whipping cream, chilled in the fridge
4 tablespoons sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • Drain 1 can of peaches; reserve the syrup from the other. Place the butter in a 9- by 12-inch ovenproof baking dish. Heat the butter on the stove or in the oven until it's melted. In a medium bowl, mix the flour and sugar. Stir in the milk and the reserved syrup. Pour the batter over the melted butter in the baking dish. Arrange the peaches over the batter. Bake for 1 hour. The cobbler is done when the batter rises around the peaches and the crust is thick and golden brown. Serve warm with fresh whipped cream
  • Chill a large metal mixing bowl and the wire beater attachment in the freezer for about 20 minutes. Pour the chilled cream and sugar into the cold mixing bowl and beat until it forms soft peaks, about 5 minutes. The mixture should hold its shape when dropped from a spoon. Don't overbeat or you'll have sweetened butter!

EASY PEACH COBBLER

Easy Peach Cobbler image

You can't be considered a serious southern cook if you don't know how to make peach cobbler. Canned or frozen fruit works better in some recipes than fresh, and this is a perfect example. I recommend any brand of canned freestone peaches because they are tender and tasty. This dessert is easy to make and it tastes delicious, especially with a huge dollop of Home-Churned Ice Cream (page 212) on top.

Yield serves 8

Number Of Ingredients 5

2 15-ounce cans sliced peaches in syrup
1/2 cup (1 stick) butter
1 cup self-rising flour (see Note)
1 cup sugar
1 cup milk

Steps:

  • Preheat the oven to 350°F. Drain 1 can of peaches; reserve the syrup from the other.
  • Place the butter in a 9 × 12-inch ovenproof baking dish. Heat the butter in the oven until it's melted. In a medium bowl, mix the flour and sugar. Stir in the milk and the reserved syrup. Carefully remove the baking dish from the oven and pour the batter over the melted butter. Arrange the peaches over the batter. Bake for 1 hour. The cobbler is done when the batter rises around the peaches and the crust is thick and golden brown. Serve warm with vanilla ice cream.
  • This forms its own top crust while it bakes.
  • Two types of peaches, freestone and clingstone, are just what the terms suggest. The flesh of a ripe freestone variety pulls easily away from the pit or stone, while the clingstone flesh, well, clings! Go online to www.lanepacking.com for all the scoop on Georgia peaches.
  • If you don't have self-rising flour, substitute 1 cup all-purpose flour mixed with 1 1/2 teaspoons baking powder and 1/8 teaspoon salt.
