- Using a hand mixer at LOW speed, beat the coconut oil and sweetener together, just until fluffy and combined.
- Beat in the cocoa powder, vanilla and sea salt to taste. Adjust sweetener to taste. Do not overmix.
- Transfer the mixture to the lined container. Smooth the top with a spatula or spoon.
- Refrigerate the keto fudge for about 45-60 minutes, until solid.
- Sprinkle the top of the fudge with sea salt flakes and press gently.
- Run a knife along the edge and take out using the edges of the parchment paper. Slice carefully - see post above for slicing tips.
- Keep the fudge refrigerated and bring to room temperature right before serving. You can also freeze it - see tips above. Do not leave at room temperature for prolonged periods, as it will melt easily.

Steps:
- Preheat the oven to 350°F(177C°). Line baking sheet with parchment paper or silicone baking mat. Set aside.
- Put the flour, cocoa powder and baking soda in a small bowl and mix well. Set aside.
- Melt the butter in a small pan over medium heat until it is halfway melted. Take it from the heat and stir until it is all melted. Set aside to cool.
- Place the sugar in a big bowl and add the butter, mix well. Then add in the egg and vanilla, stir until combined.
- Add the flour mixture in 2 batches and stir until all combined well.
- Roll the dough into 52-53 gram (2 and ½ tablespoon) balls and place them on the baking sheet. Alternatively, you can divide the dough equally into 10 pieces and roll each into a ball.
- Bake for 8-11 minutes or until the cookies are slightly set. The top of the cookies shouldn't be wet but soft. They will be too soft to handle. Remove the cookies from the oven so that they can keep their moistness. Let them cool on the baking sheet for 10 minutes or until the bottom of the cookies are firm enough. The cookies will be a little bit puffy. You can slightly press the cookies with the back of a spoon.

Steps:
- Preheat the oven to 350ºF/175ºC and position an oven rack to the center position.
- Measure out all the ingredients.
- Prepare a 9-inch (23 cm) square baking pan with parchment paper or non-stick spray and set aside.
- In a large bowl, whisk together the flour (120 grams, 1 cup), sugar (400 grams, 2 cups), cocoa powder (70 grams, ⅔ cup), and salt (½ teaspoon) until well combined.
- Add the warm melted butter (226 grams, 1 cup) and eggs (4 large) into the bowl with the dry ingredients. Whisk the ingredients together until well combined. The batter will be quite thick. You can also fold in chocolate chips at this point if you want to make them extra chocolatey.
- Pour the batter into the prepared pan and use a rubber spatula to smooth out. Bake for 30-45 minutes until a tester comes out with moist crumbs. Slightly under baking them will keep them extra moist and chewy.
- Let cool for at least 10 minutes before slicing, they will be gooey straight out of the oven. You can eat them like this if you like, but they need to cool to completely solidify.

EASY FUDGY BROWNIES FROM SCRATCH (OUR FAVORITE)
Say hello to our favorite brownies recipe from scratch. You only need one bowl, a saucepan, and a spoon. Melting the butter into the sugar and cocoa powder ensures that shiny, crinkly top that we all love. These brownies are bittersweet. If you are like us and find yourself reaching for darker chocolate over milk chocolate, these are certainly for you. Use natural or Dutch-process cocoa powder (cacao powder works, too). For brownies that are less bittersweet and that have chewy edges, try this chewy brownie recipe instead.

Steps:
- Position an oven rack in the middle of the oven and heat to 325 degrees F. Line the bottom and sides of an 8-inch x 8-inch square baking pan with parchment paper or aluminum foil, leaving an overhang on opposite sides to help remove the baked brownies from the pan.
- Prepare a double-boiler by filling a medium saucepan with water about 2 inches deep. Heat the water until barely simmering. See the notes section below for tips on making these without a double-boiler and instead using a microwave or making them directly in a saucepan.
- Combine the butter, sugar, cocoa powder, and salt in a medium heat-safe bowl. Rest the bowl over the simmering water. If the bottom of the bowl touches the water, remove a little water from the saucepan.
- Stir the mixture occasionally until the butter has melted and the mixture is quite warm. Don't worry if it looks gritty; it will become smooth once you add the eggs and flour.
- Remove the bowl from the saucepan, and set aside for 5 minutes or until it is only warm, not hot.
- Stir in the vanilla.
- Add the eggs, one at a time, stirring vigorously after each one.
- When the batter looks thick and well blended, add the flour. Use a spoon to beat the flour into the batter until it is very thick and pulls away from the sides of the bowl. We use a wooden spoon or spatula and beat for 40 to 50 strokes (see video for reference).
- Stir in nuts if using.
- Spread the batter evenly in the prepared pan.
- Bake the brownies until the edges look dry and the middle looks slightly underbaked; 20 to 30 minutes. You can test doneness by inserting a toothpick into the center. The brownies are finished baking if it comes out with a few moist crumbs attached.
- Cool completely before removing from the pan - this step is essential and helps the brownies set. Cut into 16 squares.
