These delectable chocolate truffles are made with Irish cream and are perfect for St. Patrick's Day. Roll in melted chocolate, finely chopped nuts, or cocoa powder for a finishing touch.

Ingredients

1 cup heavy cream
¼ cup white sugar
¼ cup butter
1 (16 ounce) package semisweet chocolate chips
1 tablespoon Irish cream liqueur

Steps:

Whisk heavy cream and sugar together in a small saucepan over medium heat. Heat until the edges of the cream show fine bubbles but mixture does not boil, allowing sugar to dissolve. Remove from heat.
Whisk butter, chocolate chips, and Irish cream into cream mixture until butter and chocolate chips are melted. Cool to room temperature.
Scoop up the chocolate mixture about 1 tablespoon at a time and roll into a 1-inch ball; set truffles on a plate.
Refrigerate until firm, about 1 hour.

1 package brownie mix (enough to make an 8x8 tray) you can also use a homemade brownie recipe
1 (3.4 ounce) box vanilla pudding
1 (8-ounce) container Cool Whip
Green food coloring
1 (15.25-ounce) package Mint Oreo's, crushed

Steps:

Cook brownies according to directions. Allow to cool completely. Make pudding according to directions. Once pudding is done, add in a few drops of green food coloring or until desired shade of green is reached. Take a zip-top plastic bag bag and place a few Oreo's inside. Seal the bag and smash the bag to crush the Oreo's. To assemble trifle; layer cut up brownies, a layer of pudding, a layer of cool whip, another layer of cut up brownie, a layer of pudding, and a few crushed Oreo's on top!! Chill in refrigerator until ready to serve! You can also use pistachio pudding if you don't want to use food coloring!

Crush the Thin Mints very finely. You can do this by placing them in a large Ziploc bag and rolling them with a rolling pin, or use your food processor, which is what I did.
Once they are crushed, pour them in a large bowl and add the cream cheese or add the cream cheese to the food processor and pulse until incorporated.
