Stabilized Whipped Cream Icing image

This cream holds up longer on pies because it doesn't separate. Gelatin stiffens whipped cream and makes the texture seem fuller and slightly spongy. May be used to top a pie or frost a cake.

¼ cup cold water
1 teaspoon unflavored gelatin
1 cup heavy whipping cream
1 tablespoon white sugar
½ teaspoon vanilla extract

Steps:

  • Chill mixing bowl and beaters for at least 15 minutes before using. Place water in a small microwave-safe bowl. Sprinkle gelatin over water and allow to soften 5 minutes.
  • Dissolve gelatin by microwaving for 3 minutes, stirring after every minute. Remove from microwave and let stand at room temperature for 10 minutes; gelatin must be liquid but not warm when added to cream.
  • Remove bowl and beaters from refrigerator and pour in cream, sugar, and vanilla extract. Beat together just until beater marks begin to show distinctly.
  • Add gelatin mixture to cream, pouring in a steady stream while beating constantly. Beat until stiff peaks form. Use immediately.

Easy banana whipped cream perfect for topping on fruit, waffles, pancakes or any thing! Only four ingredients.

1 medium ripe banana
1 1/4 cup whipping cream
1 tablespoon superfine icing sugar
2 teaspoons quality vanilla extract ((use a homemade version for a slightly spiked whipped cream))
strawberries (- washed and chopped into pieces)
3 crispy sponge fingers ((lady fingers) per jar)

Steps:

  • In a small bowl, mash the banana very well, until it is the consistency of a think liquid and there are no chunks left. I used my hand mixer on the slowest setting to help with this process,
  • In a separate bowl, whip the cream, sugar and vanilla until stiff peaks form. Fold in the mashed bananas to the whipped cream.
  • Spoon or pipe over anything!

This is much easier than the usual unflavored gelatin method. As for the leftover pudding mix, I use it in smoothies, milk shakes, fruit salads, more whipped cream, etc. It never goes to waste!You can make your whipped topping ahead of time and it won't separate or go runny! I find the pudding adds an extra richness to the flavor without being enough to know that it's instant pudding. You could use any flavor of instant pudding to change up the usual whipped cream flavors.

1 pint heavy whipping cream
1 tablespoon Jello Instant Vanilla Pudding Mix (dry)
1 teaspoon vanilla extract
1/3 cup confectioners' sugar (or to taste)

Steps:

  • Put all the ingredients in a large mixing bowl.
  • Mix on low speed until ingredients are combined.
  • Mix on high speed until soft peaks form, scraping sides of bowl often.
  • Store tightly covered in the refrigerator for up to 3 days.

EASY BANANA CUPCAKES:
2 medium ripe bananas (mashed)
1 box yellow cake mix (I like Pillsbury)
3 eggs
1/4 C. oil
2/3 C. buttermilk or milk
2 tsp. vanilla extract
WHIPPED CREAM:
1/2 pint heavy whipping
1 tsp. instant banana pudding mix
QUICK BANANA MOUSSE:
1/2 pint heavy whipping cream
1 1/2 Tbsp. instant banana pudding mix
3 drops yellow food dye (optional)
BANANA SLICES

Steps:

  • 1. Preheat oven to 350 degrees and line pans with cupcake liners.
  • 2. In a large bowl, use a fork to finely mash bananas. Add yellow cake mix, eggs, oil, buttermilk and vanilla extract. Stir until smooth.
  • 3. Fill cupcake liners 3/4 full and bake for 15-18 minutes or until an inserted knife comes out clean.
  • 4. Let cool.
  • 5. Whipped Cream: Use a stand mixer with the whisk attachment or a hand whisk to whip heavy whipping cream and pudding mix until stiff. (You're just adding enough pudding mix to help stabilize it so the whipped cream doesn't start to melt later.)
  • 6. Quick Banana Mousse: Repeat step 5 and add in food coloring if wanted. This will be more thick than the whipped cream above.
  • 7. Pipe a rim of whipping cream around the top of each cooled cupcake and then fill the center with a spoonful of quick banana mousse! Top with a banana slice!
