Easy (Yet Awesome) Chicken Empanadas image

I came up with this recipe by mixing a few different ones that I have used. I think it's awesome and has great flavor. I like to put Cholula hot sauce on mine and dip in sour cream. Hope you like it!

Number Of Ingredients 17

1 1/2-2 cups cooked chicken (I like to shred a rotisserie chicken)
1 cup Mexican blend cheese, shredded
1 (4 1/2 ounce) can green chilies, chopped (I use Old El Paso)
1 (14 ounce) can black beans, drained and rinsed well
1 small onion, chopped
2 -3 garlic cloves, chopped (can use more or less depending on your liking)
1/4 cup vegetable oil (should just coat the bottom of the pan)
1 1/2 teaspoons dried oregano
1/4 teaspoon cayenne pepper
1 teaspoon ground cumin
1 teaspoon chili flakes (can adjust to your liking)
salt (to taste)
pepper (to taste)
1/4 cup chicken stock
3 pie crusts, prepared (I use the Pillsbury Refrigerated Pie Crusts)
3 egg yolks, beaten
1 -2 teaspoon chili powder

Steps:

  • Preheat oven to 400F degrees.
  • Heat oil over med-high heat in a large skillet.
  • Saute onions and garlic about 4 minutes, until onions are translucent.
  • Add cumin, cayenne pepper, chili flakes and dried oregano. Make sure to mix well and cook for 2-3 minutes.
  • Add black beans, chicken and green chilies. Salt and pepper to taste. Cook for around 2 minutes until incorporated and heated through.
  • Add chicken stock a little at a time, just to moisten the mixture. You may not need to use the entire 1/4 Cup. You want to make sure that the mixture is moist but not soupy. Simmer for about 5-7 minutes.
  • Take mixture off burner and let cool to room temperature.
  • Add cheese and mix thoroughly.
  • Roll out dough onto floured surface.
  • Cut 4" circles out of the dough (I like to use a medium sized cereal bowl to cut the circles, but you can make yours smaller or larger).
  • Fill the middle of each circle with about 1.5 - 2 Tbl of the mixture. Don't overfill. Fold each circle in half (sealing in the mixture) and crimp the ends with a fork to close the dough.
  • Brush tops with egg yolks and sprinkle with chili powder.
  • Cook for 12-14 minutes at 400°F.

1 1/2 teaspoons salt
1 tablespoon ground cumin
1 seeded and chopped jalapeño
1/4 cup chopped red bell pepper
4 oz softened cream cheese
1 (8 oz) package colby and monterey jack cheese blend
3 cups cooked & chopped chicken
1/2 teaspoon pepper
1 (15 oz) package refrigerated pie crusts

Steps:

  • Preheat oven to 400 °F. Lightly grease a baking sheet. In a large bowl, combine chicken and next 7 ingredients. Unroll 1 piecrust onto a lightly floured surface. Roll onto a 15-inch circle. Cut out rounds, using a 3-inch cookie cutter. Re-roll dough as needed. Repeat procedure with remaining piecrusts. Arrange 1 piecrust round on a clean, flat surface. Lightly brush edges of crust with water. Place 1 heaping teaspoon of chicken mixture in center of the round. Fold dough over filling, pressing edges with a fork to seal. Repeat with remaining rounds and chicken mixture. (Up to this point, the recipe can be made ahead and frozen for up to 1 month). Arrange empanadas on prepared baking sheet. Bake for 15 minutes.

These are so easy and delicious! I thought Food Network was only for entertainment, but after watching (DVR'd) the episode of PD cooking these empanadas, I had to rewind and take notes! She called them spicy but they weren't (add more red pepper to kick it up a notch)!

3 cups cooked chicken (finely chopped)
4 ounces cream cheese
1 cup monterey jack and cheddar cheese blend
1/4 cup diced red bell pepper
1 jalapeno, diced & seeded
1 tablespoon cumin
salt
fresh ground pepper
1 rolled refrigerated pie crust (boxed dough)
1 egg

Steps:

  • Preheat oven to 400°F.
  • Mix all ingredients (except the dough and egg) in a large bowl using rubber spatula.
  • Roll out the pie crust dough and cut circles, about 5 inches in diameter.
  • Spoon filling into the middle of the dough circles.
  • Wet your finger and run it along the edge of the circle(this helps it stick shut) - fold circle in half and pierce the edges with a fork that has been dipped in flour (to prevent sticking to the dough).
  • Beat the egg and brush over the empanadas.
  • Bake at 400°F for 15 minutes.

PULLED CHICKEN EMPANADAS

1 onion, chopped
1 red pepper, chopped
2 tablespoons olive oil
1 store bought roasted chicken
1 (28-ounce) can crushed tomatoes
2 tablespoons Creole seasoning
3/4 cup chopped green olives
6 dashes hot sauce
Kosher salt
Freshly ground black pepper
2 1/2 cups arepa flour (pre-cooked corn flour), available at Latin and larger super markets
2 cups warm water
Vegetable oil, for frying

Steps:

  • Put the onion, pepper, and oil in a large skillet over medium-high heat and cook until softened, about 5 minutes. While this is cooking, pull the meat from the chicken, discarding the skin and bones. Add the chicken to the skillet along with the tomatoes, Creole seasoning, olives, hot sauce, and salt and pepper, to taste. Bring this to a boil, then reduce the heat and simmer for about 20 minutes. Let cool while you make the dough.
  • Stir together the arepa flour and warm water with your hands until the dough is smooth. Cover with plastic wrap and let rest for 5 minutes. Take a piece of the dough and roll it into a ball about the size of a lemon. Put it on a piece of plastic wrap and place another piece of wrap on top. Pat out into a 5-inch circle. Remove the top piece of plastic and put 3 tablespoons of the pulled chicken onto the center of the circle, leaving a 1/2-inch border. Using the plastic wrap, fold the dough over to enclose the filling and form a semi-circle. Press the edges together. Using the rim of a small saucer, trim off the edge of the empanada. Repeat to make the rest.
  • Put about 1/2-inch of vegetable oil in a skillet over medium-high heat. Dip the end of a wooden spoon into the oil: when bubbles form around it the oil is hot enough for frying. Fry the empanadas, a few at a time, until they are golden brown, about 3 to 5 minutes on each side. Drain on paper towels. Serve warm.
  • Note: Mozzarella cheese and a mixture of diced pear and crumbled gorgonzola cheese also make great fillings for these empanadas.

1 tablespoon olive oil
1/2 small red onion, finely chopped
1 jalapeno, finely diced, seeded and ribs removed
2 cloves garlic, minced
3 green onions, thinly sliced
Kosher salt and freshly ground pepper
1 1/2 cups shredded then diced cooked chicken breasts (from leftover chicken)
1 cup shredded Monterey and Cheddar cheese blend
4 ounces cream cheese, diced
Dash of hot sauce
1 egg
Flour, for rolling
One 15-ounce package refrigerated pie dough
1 tablespoon chipotle chile powder
Chili Lime Dipping Sauce, recipe follows
1 cup Greek yogurt
1 chipotle pepper (canned in adobo sauce), minced
Juice and zest of 1 lime

Steps:

  • Preheat the oven to 375 degrees F. Coat a baking sheet with nonstick spray.
  • Place a large saute pan over medium heat and add oil. Once the oil is hot, add the onion, jalapeno, garlic, green onions and saute until tender, about 3 minutes. Season with salt and pepper.
  • In a large bowl, combine the chicken, cheese, cream cheese, sauteed mixture and hot sauce together.
  • Whisk the egg in a small bowl. Set aside. Sprinkle flour on your work surface and unroll the pie dough.
  • Roll out each round to a 13-inch circle. Cut each crust into eight 4-inch circles with a biscuit cutter. You can knead the scraps and then roll out, if necessary. Spoon about 1 heaping tablespoon of the chicken mixture into the center of each round. Brush the edges with the egg wash and fold each circle in half. Gently press on the top of the empanada to release any air. Seal the edges with a fork and brush the top with the remaining egg wash. Sprinkle with chile powder. Bake until golden brown, about 20 minutes.
  • Serve the chicken empanadas with the Chili Lime Dipping Sauce.
  • Combine the yogurt, chipotle and lime zest and juice in a bowl.
