ELEGANT CHICKEN
This is so easy! I use it when I'm having people over for dinner because it can easily be doubled to feed a large gathering or dinner party. Once you put it in the oven, you can forget about it for 2 hours and move on to something else. It's always a huge hit with our guests! Serve over rice and enjoy!

Steps:
- Preheat oven to 275 degrees F (135 degrees C).
- Line the bottom of a 9x13 inch baking dish with slices of chipped beef. Wrap bacon slices around chicken breasts, and place on top of chipped beef. In a medium bowl, mix together condensed soup and sour cream. Pour sour cream mixture over chicken breasts, and sprinkle with paprika.
- Bake in preheated oven for 2 hours.

CHICKEN STEW
For an easy one-pot meal, serve Giada De Laurentiis' hearty Chicken Stew recipe with crusty bread, from Everyday Italian on Food Network.

Steps:
- Heat the oil in a heavy 5 1/2-quart saucepan over medium heat. Add the celery, carrot, and onion. Saute the vegetables until the onion is translucent, about 5 minutes. Season with salt and pepper, to taste. Stir in the tomatoes with their juices, chicken broth, basil, tomato paste, bay leaf, and thyme. Add the chicken breasts; press to submerge.
- Bring the cooking liquid to a simmer. Reduce the heat to medium-low and simmer gently uncovered until the chicken is almost cooked through, turning the chicken breasts over and stirring the mixture occasionally, about 25 minutes. Using tongs, transfer the chicken breasts to a work surface and cool for 5 minutes. Discard the bay leaf. Add the kidney beans to the pot and simmer until the liquid has reduced into a stew consistency, about 10 minutes.
- Discard the skin and bones from the chicken breasts. Shred or cut the chicken into bite- size pieces. Return the chicken meat to the stew. Bring the stew just to a simmer. Season with salt and pepper, to taste.
- Ladle the stew into serving bowls and serve with the bread.
- Serving suggestion: crusty bread.
OLD-FASHIONED CHICKEN STEW

- Season the chicken pieces with salt and pepper. Heat 2 tablespoons oil in a Dutch oven over medium-high heat. Brown the chicken, working in batches and adding more oil as needed, 3 to 5 minutes per batch; set aside.
- Add the celery and onion and cook until beginning to soften, about 3 minutes. Sprinkle over the flour and stir, cooking a minute or so. Pour in the stock, season with salt and pepper and add the parsnips, carrots, turnip and rutabaga. Add the chicken back, bring to a boil and reduce to a simmer. Cover and cook until the vegetables are tender and the chicken is cooked through, about 45 minutes.
- Stir in the heavy cream and parsley. Taste and adjust the seasoning with salt and pepper. Serve garnished with parsley leaves.
EASY BUT ELEGANT CHICKEN SUPREME
This is a family favorite, and a great dish to make for company especially if you are short of time.

- In a shallow bowl or on a paper plate, combine the bread crumbs and 2 Tbsp of flour; dip chicken into egg, making sure all sides are coated, then dredge in crumb mixture.
- Repeat process, being sure to cover the chicken entirely.
- In a 10 inch nonstick skillet, combine the margarine and oil.
- Heat over a medium heat until the margarine is bubbly and hot.
- Add chicken and cook, turning once, until both sides are lightly browned and chicken is cooked through, 2-3 minutes on each side.
- Transfer to a plate and keep warm.
- To the same skillet add the mushrooms and saute until lightly browned, 1-2 minutes; sprinkle with remaining teaspoon of flour and stir quickly to combine.
- Add broth and wine.
- Cook, stirring constantly, until mixture thickens, about 1 minute.
- Return chicken to skillet and top evenly with cheese; cover and cook until cheese is melted, 2-3 minutes. Garnish with parsley.

ONE-POT CREAMY CHICKEN STEW RECIPE BY TASTY
Here's what you need: boneless, skinless chicken breasts, kosher salt, freshly ground black pepper, vegetable oil, white mushroom, medium yellow onion, garlic, unsalted butter, Yukon Gold potatoes, large carrot, celery, all purpose flour, dry white wine, chicken stock, McCormick® Poultry Seasoning, frozen peas, heavy cream

- Season the chicken with salt and pepper.
- Heat the vegetable oil in a large Dutch oven over high heat. Add the chicken and cook, stirring occasionally, until browned, about 7 minutes. Remove the chicken from the pot and set aside.
- Reduce the heat to medium-high and add the mushrooms. Cook until browned, about 3 minutes. Add the onion and cook for another 4 minutes, until starting to brown. Add the garlic and cook for 1 minute, until fragrant. Add the butter, potatoes, carrot, and celery. Cook for about 4 minutes, until lightly browned.
- Stir in the flour, then add the wine. Bring to a simmer, scraping up any browned bits from the bottom of the pot.
- Add the chicken stock, cooked chicken, McCormick® Poultry Seasoning, 1 teaspoon salt, and the peas, and bring to a simmer. Reduce the heat to medium and cook for 15 minutes, or until the vegetables are tender and the sauce has thickened slightly.
- Stir in the cream and season with more salt to taste.
- Serve warm.

ELEGANT CHICKEN
I love chicken, and this is a favorite of mine. It's a little time consuming wrapping everything up, but the results are so worth it. Serve with rice, noodles, pasta, it doesn't matter...the sauce tastes fine with any.

Steps:
- Preheat oven to 350 degrees.
- Pound/flatten each chicken breast lightly.
- Wrap each chicken breast in a slice of ham, then tightly wrap a slice of bacon around the ham; secure with toothpicks if necessary.
- Place in a baking dish.
- Blend together sour cream and undiluted mushroom soup, then pour over the chicken breasts.
- Bake seam side down for about 30 minutes.
- Remove chicken from dish, and set aside cream sauce.
- Cut the puff pastry into 6 separate rectangles.
- Place each chicken breast on the bottom half of a rectangle, then fold the pastry over and seal, to form a square packet.
- Bake at 350 degrees for about another 20-30 minutes, until pastry puffy and golden.
- Serve hot with warm cream sauce poured over.
