Entenmann's Cheese Filled Crumb Coffee Cake Recipe - (4/5) image

Number Of Ingredients 21

DOUGH:
4 cups flour
3/4 cup milk
6 tablespoons butter
1/4 cup warm water
1 1/2 teaspoon yeast
2 large eggs, beaten
1/2 tablespoon salt
1/4 cup sugar
FILLING:
1 (8-ounce) brick cream cheese
1/2 cup sugar
1 egg
1/2 teaspoon vanilla
1/2 teaspoon lemon juice
1/3 cup flour
STREUSEL:
3/4 cup flour
1/3 cup sugar
4 tablespoons butter
1/2 teaspoon cinnamon

Steps:

  • Combine the milk and butter in a microwave safe bowl and heat until butter is melted. In a large mixing bowl, combine the milk mixture with the sugar and salt and let cool. In a small bowl, combine the water and yeast and let foam. When the milk mixture is cooled a bit, add the eggs and yeast (the point of the cooling is to not kill the yeast, so don't let it get cold). With a dough hook, mix in the flour. (If using a wooden spoon and elbow grease, mix in the flour and then knead on a floured surface until dough is smooth and soft, about 5 to 10 minutes). Cover and let rise until double in bulk; about 1 to 1½ hours. After rising, punch down and divide in half. Roll out on a large jelly roll pan to fit the length of the pan and almost the width. In a bowl, mix the filling ingredients on medium speed. Spread the filling down the middle of each cake and either fold over the outer halves or cut strips and braid it over the filling...it's your call. In a bowl, mix the streusel ingredients with a pastry blender or fork until crumbly. Sprinkle the streusel equally on top of the two coffee cakes. Cover and let rise another 20 minutes and preheat your oven to 375°F. Bake for 25 to 30 minutes or until golden brown. When cooled, dust with powdered sugar.

1/2 cup unsalted butter, melted
1/4 cup granulated sugar
1/4 cup light brown sugar, packed
1 1/4 cup cake flour
1 teaspoon cinnamon
1/8 teaspoon kosher salt
1 1/4 cup cake flour
1/2 cup granulated sugar
1/4 teaspoon kosher salt
1/4 teaspoon baking soda
1/2 cup unsalted butter, softened
2 large eggs
2 teaspoon vanilla extract
1/3 cup buttermilk
powdered sugar, for topping

Steps:

  • For the crumble topping, combine the melted butter with the dry ingredients using your hands, until pieces crumble and stick together when pressed. Set aside.
  • For the cake batter, in a bowl, combine the flour, sugar, salt, and baking soda.
  • Add butter to the batter. Then add the eggs, buttermilk, and vanilla, and beat until combined.
  • Spread batter into a 9-inch greased and floured baking dish (or use my homemade cake release).
  • Add crumb topping to the top of the cake. Pinch pieces of the crumb topping in your hand and drop them on the cake batter. You'll want some larger pieces mixed with smaller crumbs.
  • Bake in a 325 degree oven for about 45 minutes. Cool in pan before serving.
  • Sprinkle with powdered sugar before serving (after cooling).

  • In a large heavy-duty stand mixer, combine the flour, brown sugar, cinnamon, vanilla and butter. Beat until butter is well incorporated and resembles a stiff cookie dough. Remove from bowl and set aside.
  • Preheat oven to 350 degrees. Spray or grease a 9-inch square pan. Prepare cake mix as directed on the box. Pour 1/2 the batter into the prepared pan. Sprinkle the batter with the cinnamon sugar if using; maybe about 1/4 cup well distributed across the cake. Top with remaining batter and swirl lightly.
  • Bake cake for 10-15 minutes or until cake is just beginning to rise and is set in the center. Remove pan from oven and top with crumbs by breaking off marble-sized portions of the crumb mixture and distributing evenly across the top of the cake. The top of the cake should not show through the crumbs and the crumb layer will be THICK, and the center of the cake will fall slightly. This is OK.
